材料: 光雞一隻,薑.蔥.乾蔥頭.老抽二湯匙,片糖半塊,半碗紹興酒或一至二湯匙玫瑰露,細半碗生抽
香料:桂皮.香葉.一粒八角。
做法:
1 洗淨雞放滾水中淥一淥後即放冷水中過冷河(雞身較爽)
2索乾雞身內外水份用2大湯匙老抽內外塗勻雞身,將二片薑及蔥放雞肚內
3薑.乾蔥頭.桂皮.香葉八角放鑊中爆香加半碗紹興酒及細半碗生抽加半塊片糖煮溶
4將汁料倒入電飯煲雞胸向下放煲中,
每10分鐘轉雞身一次,共30分鐘
English Version
Soya Sauce Chicken in a Rice Cooker

Ingredients:
Whole chicken - 1
Shallots
Ginger slices
Cinnamon stick
Bay leaf
Star anise - 1
Garlic, optional
Green onion - 2 bunches (1 bunch for the cavity of chicken. 1 bunch to put in the rice cooker inner pot.)
Seasonings:
Dark soya sauce - 2 tbsp
Shaoxing wine - ½ a bowl (or you can use Chinese rose wine but only use 1 – 2 tbsp due to the strong taste)
Light soya sauce - ½ a bowl
Chinese brown sugar - ½ a slab (or you can use Chinese rock sugar but less richer in flavour)
Methods:
1. In a pot of boiling water, grab the whole chicken by the neck and dip it into the boiling water a couple of times and lastly submerge the chicken head into the boiling water. With a pair of chopsticks, secure the chicken neck and transfer to pot of ice-cold water or flush cold water in the sink to stop the cooking process.
This step will result in firm skin texture, to prevent the chicken skin from breaking, and to better absorb the color from the dark soya sauce.
2. Gently pat dry the whole interior and exterior of the chicken with paper towel.
3. Chop both chicken feet to prevent them from sticking out from the rice cooker. Set aside.
4. In a bowl, add in the whole chicken and coat the exterior and interior of the chicken with dark soya sauce. Stuff a bunch of green onion and two big slices of ginger into the cavity of the chicken. Set aside.
5. In a heated wok, add in less than a tbsp of oil, shallots, ginger slices, cinnamon stick, bay leaf, and fry until fragrant and slightly charred then transfer to the rice cooker inner pot.
6. Add the chicken feet and the whole dark soya sauce coated chicken into the rice cooker inner pot with the chicken breast facing down. Add in Shaoxing wine, light soya sauce, 1 bunch of green onion, and Chinese brown sugar. This step is done or you can take an extra step to heat up the sauce in a pan. Pour all the sauce out from the rice cooker inner pot into a pan and bring to boil then return the sauce to the rice cooker inner pot.
7. Put it in the rice cooker and cook for 10 minutes, after 10 minutes flip the whole chicken over on its side and cook for further 5 minutes for each side for a total of 10 minutes. After 10 minutes, TURN OFF the heat and let the chicken sit in the rice cooker for further 10 minutes. Total cooking time 30 minutes.
8. Let the chicken cool for 20 to 30 minutes before cutting into pieces. Pour the liquid from the rice cooker to a cooking pot and bring to a boil and let it reduce to a thick sauce. Drizzle sauce over chicken. Serve.

做法
1. 薑片切條再切粒。
2. 開火煲滾熱水,把薑粒和酒放入煲內,煮滾。
3. 牛肩胛一片片分開,加入生粉撈均。
4. 葱切絲用水稍浸,之後瀝乾。辣椒切片或粒,之後和葱撈均。
5. 用碗把鼓油,麻油和少許步驟4的葱和辣椒,撈均。
6. 準備一隻碟,放入步驟4剩餘大半的葱和辣椒鋪底,備用。
7. 牛肩胛一片片放入煲中,灼大約10-15秒。
8. 把牛肩胛放在已鋪底的碟上,之後再次鋪上步驟4餘下的葱和辣椒在面。
9. 最後倒入已調味的鼓油(步驟5),即成。

Poached Beef Chuck Slices

Ginger - diced

Dipping sauce ingredients:
Light soya sauce

Methods:
1. On a plate, separate the beef chuck slices and mix thoroughly with corn starch. This is to make the meat more tender.
2. In a dipping bow, add in light soya sauce, sesame oil, fresh red chilli, green onion, and mix well. Set aside.
3. In a cooking pot, add in water, diced ginger, Shaoxing wine, and bring to a boil. Add in the beef chuck slices and poach them briefly and transfer them to a serving plate covered with green onion and red chilli pieces. Garnish with more green onion and serve with dipping sauce or drizzle dipping over the plate. Serve.

材料:
70 g 粘米粉
一湯匙粟粉
85 ml水
椰糖一塊
片糖1/4塊
150ml 水
紅豆(早一晚浸過夜,然後用水浸過紅豆煲滾至熟,不要開蓋,焗一個鐘, 盛起紅豆備用)
做法:
1) 先把小碗輕輕掃油,蒸熱
2) 粘米粉,粟粉放在碗來,先放入1/3的85ml水入碗內,用手把水搓入粉內,再加入1/3的水、將水搓入粉內至成團,再加入餘下的水,搓均,放一旁備用
3) 切碎棷糖及片糖,放入煲內,加入150ml 水,煲至糖完全溶解
4) 糖水大滾後,先再拌勻粉漿,然後分三次把已煑滾糖水撞入粉漿,邊撞,邊攪拌至糖水完全加入
4) 把紅豆分入已蒸熱的小碗內,然後倒入粉漿
5) 用保鮮紙包蓋著小碗
6)大火蒸15至20分鐘至熟
Red Bean Pudding (“Put Chai Ko”)

Ingredients:
Rice flour - 70g
Corn starch/flour - 1 tbsp
Water - 85ml
Red bean - 50g – 60g (soak overnight, cook till tender and leave the lid on to cook further without the heat. This will preserve their shapes and still tender inside.)
Sugar mixture ingredients:
Palm sugar &/or Chinese brown sugar - 60g a small piece (crush into tiny pieces)
Water - 150ml
Water - 1 tsp, optional (larger pieces of sugar will take longer to melt so add an additional 1 tsp of water to the melted mixture to make up for the evaporated water.)
Methods:
1. In a heat-proof mixing bowl, add in rice flour, and corn starch. Slowly add in a bit of water and knead well to let the rice flour absorb the water and MUST form a dough like texture then add a bit more water and continue to knead until the rice flour has absorbed the water and becomes dough like texture again. Continue with this process until the water is finished. Set aside.
This kneading process will give a firm, bouncy texture to the pudding whereas simple mixing all the ingredients together without this kneading process will be soft and sticky.
2. Prepare 6 small bowls. Brush each with a bit of oil and steam them. Steamed bowls will cook batter evenly.
3. In a cooking pot, add in palm sugar, Chinese brown sugar, water, and cook until sugar has melted. Optional to add 1 tsp of water if sugar takes longer to melt and more water has evaporated. Bring to a boil.
4. Add boiling melted sugar mixture into Step 1 rice flour mixture and mix well. Set aside.
5. To assemble, add the red bean first to the 6 small steamed bowls. With a ladle, add and divide mixture from Step 4 evenly among the 6 small bowls. Make sure to keep stirring the mixture each time you add to the small bowl to avoid the sugar and rice flour mixture from separating.
6. Cover the bowls with plastic wrap and steam 20 minutes.
7. Let puddings cool before removing the bowls. Insert skewers into the sides of the puddings. Serve.

「我在加州內陸地區一個叫做聖伯納迪諾的小城市長大,隨後在聖地牙哥念大學和研究所,並獲得文學博士學位。求學期間我們必須至少選修一門外語,所以我就選了中文。1987年我大學畢業之後,跟朋友來了台灣一趟,在台灣教英文和學中文六個月,接著就自己一個人當起背包客在亞洲四處旅遊。
我本來想要研究中國古典詩詞,後來因為獲得傅爾布萊特獎學金,便又再度回到台灣。當時我在討論詩詞的聚會上認識了幾位現代派詩人,所以我就將研究主題轉而聚焦在台灣60、70和80年代的現代詩。我的博士論文探討的就是,以現代主義來理解現有政治語言中難以理解的現代性。我認為歷史形塑而來的經驗,往往比語言本身還要複雜。
我研究的那些詩作沒有明確的政治性,反而是有很強的實驗性質,並帶著詭譎的神秘感。當時我認識的現代派詩人大多是跟著國民黨飄洋過海來台的外省人,他們經歷過戰爭和顛沛流離,也經歷過劇烈且痛苦的歷史創傷。每個人的經驗都不同,在那個年代,也很難說出口。後來,我寫了一本關於詩的書,並聚焦在一兩位我覺得特別有趣的詩人。我在書中問了一些類似的問題:這些詩作如何幫你思考艱難的議題?
當時的現代詩已經頗有制度,許多詩人都有投稿《現代詩》這份重要的詩刊,有些詩人則是將詩作與戲劇結合。整體而言,台灣的現代詩、表演藝術和文學都發展地如火如荼,也深深吸引了我,但我還未全盤了解。當我完成博士論文時,我便獲得交通大學的教職,讓我對台灣的學術圈感到非常驚艷。而當我出版第一本著作時,我也很訝異能在美國獲獎;我根本不知道自己獲得提名,當時我問授獎單位:「為什麼選擇我的書?」他們表示:「因為書中其中一個章節是以跨國的架構來進行整體論述,妳不是單用西方的理論和東方的詩詞,而是從東西方共同錘煉出嶄新的知識。」
我目前任教於中央大學英美語文學系,除了擔任系主任之外,我也有教授寫作課、文學課和文學文化理論課程。從我1987年第一次來台灣到現在,我覺得台灣人愈來愈能自在地與來自不同地方的人交談,就個人經驗來說,我認為台灣社會愈來愈開放。我第一次來台灣時,經歷了許多台灣社會有趣的發展,也結交了許多朋友,並認識了許多學術圈的同好。我想,這些珍貴的回憶就是呼喚我再度回台的動力;就像是,如果你覺得這個社會充滿生氣和活力,而你也能夠參與其中、做出貢獻,我想這就是像家一樣的感覺吧!」

💕Why I chose Taiwan #16 – Amie Parry
“I grew up in a small city in inland California called San Bernardino. I went to college and graduate school in San Diego. I got my PhD in literature. We were all expected to learn at least one language, so I did Chinese. I traveled to Taiwan with a friend right after I graduated from college in 1987. We came here to teach English and study Chinese for six months, then I traveled around Asia by myself with a backpack.
I originally wanted to study classical Chinese poetry. I got a Fulbright grant and I came back here. I started going to the poetry nights that were happening at that time. I met some of the modernist poets, and I switched my focus to the modernist poetry of the 60s, 70s, and 80s in Taiwan. I wrote my dissertation on modernism as a way of understanding the parts of modernity that are hard to know in the existing political language that we inherit. I think that experience in historical formation is always more complicated than the language.
These poems are not explicitly political; they're very experimental and strange. At the time, the modernist poets I met were mostly 外省, men who had been drafted and come over with the KMT, so they had experienced war and displacement, and a very intense and traumatic historical moment. People experienced it differently, and at that time, it was a hard thing to talk about. Later, I wrote a book about poetry, but I just focused on one or two poets I find really, really fascinating. And I was asking some of the same kinds of questions: how can these poems help you think about certain topics that are hard to think about?
At that time, Modernist poetry was a kind of an institution already. There was a journal called 現代詩, “Modern Poetry,” a really important journal that most of these poets were published in. Some of them combined poetry and theater. There's just so much going on in Taiwan in terms of poetry and performance and literature. It's just amazing. And I'm very interested in it at all, but I haven't kept up. After I finished my dissertation, I got a job offer at 交大. I thought, wow, there's something really amazing happening intellectually here. When my first book came out, it actually got an award in the U.S., and I was so surprised. I didn't even know it had been nominated. I asked them, ‘Why did you choose my book?’ And they said, because one of the chapters has a transnational of framework for the whole argument, so it wasn't like you used Western theories and Eastern texts, it's like the whole knowledge part is coming out of both places.
I currently teach in the English department at National Central University. I'm the chair and I teach writing classes, literature classes, and literary and cultural theory classes. Since my first visit to Taiwan in 1987, I think people are a little more comfortable talking to people from different places. In my personal interactions, I feel a difference, like a greater openness. Back then, there were so many interesting things happening here, all at one time, and that's the time that I happened to be here. And I made good friends in my personal life and in my intellectual life. And I think those are the things that made me come back: like if you feel that there's something interesting happening and there's some way that you can support it. I guess that's a way of feeling at home.” — Amie Parry

「儘管我有著東方面孔,但我不是台灣人,家族根源也不在台灣。一直到我念大學時 (美國麻薩諸塞州的威廉斯學院,非常棒的學校),我才透過普林斯頓北京中文培訓班的機會,真正到東亞來闖蕩。
大學畢業之後,我埋首於數字和表格之間,精釀啤酒陪我撐過了這段辛苦的歲月。我的職涯始於紐約,但後來輾轉來到亞洲 (名義上是去新加坡,但主要是在印尼、緬甸和馬來西亞)。
在數字間打轉從來不是我的夢想。身為一個負責任且典型的千禧世代,我一直很想獨立開創自己的事業,如果能將個人興趣和創業機會相結合,那就太完美了。而精釀啤酒就是那完美的交集點!精釀工藝的精神我深有同感,這是一種對未來可能性充滿嚮往、不盲目接受現狀的精神;同時也代表著與一群優秀的人才,一起開發令人驚喜的產品,並打造屬於自己的社群。
成立臺虎精釀的契機出現之後,我立刻想到台灣。之所以選擇這裡,不是因為台灣文化很吸引人 (雖然確實是),不是因為台灣有著厚實的文化傳統 (雖然確實有),更不是因為台灣的好山好水。
我選擇台灣的主要原因是這裡遇到的人。很多人會說,人生中有兩個家庭,一個是你的原生家庭,另一個是你自己選擇的家庭。對我來說,那個我自己選擇的家庭,似乎就在台灣。

葫蘆就不需要多加解釋了,但啤酒花是當代精釀啤酒的基石,代表著創新創意的精神。事實上,我們使用的絕大多數啤酒花都來自美國,畢竟美國是精釀啤酒的中心 (過去20年一直都是)。美國的啤酒花產業 (還有麥芽產業) 可以說是世界之最,也難怪經典IPA啤酒中最受歡迎的啤酒花都來自美國。
商標中的老虎是為了向早期台灣作為「亞洲四虎」(亞洲四小龍) 的年代致敬。當年台灣經濟快速起飛,產業朝氣蓬勃,民眾無不對未來充滿樂觀和期待。
老虎代表的正是那樣的生機勃勃、神采煥發。臺虎167名員工幾乎都是台灣人。我們認為,與其說臺虎是一個釀酒廠,不如說臺虎是讓台灣年輕人才發光發熱、實踐夢想的平台。

💕Why I chose Taiwan #15 – Taihu Brewing Founder Peter Huang leads Taihu to become a platform for Taiwan young talents to carry out their dreams and express themselves
“Despite appearances, I’m neither Taiwanese nor have roots here. It took college (Williams College in Massachusetts – phenomenal place), to really bring me out to East Asia via Princeton’s immersion program in Beijing.
Post-graduation, I paid my dues shuffling numbers around in a spreadsheet. Craft beer made it bearable-ish. Working life began in New York, but ultimately landed me in Asia (nominally Singapore, primarily Indonesia, Myanmar, Malaysia).
Shuffling numbers was not the dream. So, as a responsibly stereotypical millennial, I had an urge to venture out on my own. Ideally, to try something at the intersection of opportunity and interest. Craft beer! The craft movement itself struck a chord - a yearning for what could be, rather than blind acceptance of what is. It is about building communities around delightful products and, critically, wonderful people.
When the opportunity to start Taihu appeared, my mind immediately went to Taiwan. Not necessarily because the culture is fantastic (though it is), nor because it has a strong cultural heritage (though it does), and not even because the island itself is a magical composition of mountains meeting oceans.
Ultimately, I chose Taiwan because of the people I met here. There’s a tired trope that you get two families in life, the one you’re born into and the one you choose. For me, that chosen family, well, it seemed like it could be in Taiwan.
Taihu Brewing’s logo (designed by brilliant local artist, Jess Lee) is comprised of a tiger and hops within a hulu (traditional Chinese alcohol vessel).
The hulu needs no explanation, but hops are the cornerstone of modern craft beer. They represent the innovation inherent in the space. In fact, the vast majority of the hops that we use are from the United States. Since the US is the epicenter of craft brewing (and has been over the last twenty years), the American hop industry (malt too, actually) is arguably the best in the world. It is for good reason that the most popular hops in category-defining IPAs are American.
The tiger is a nod to an earlier era when Taiwan was one of the “Four Asian Tigers.” Taiwan’s meteoric economic rise was accompanied by deterministic optimism, vibrancy, and general excitement about the future.
The tiger represents that energy. That sense of opportunity, positivity, and hope. Taihu’s 167 employees are almost entirely Taiwanese. Internally, we think of Taihu as more of a platform for young Taiwanese talent than as a brewery, a medium for that energy to express itself.
Our goal to attract and develop talent with the ultimate goal of developing the burgeoning entrepreneurial ecosystem here in Taiwan. One of our earliest team members, Sway, came on board as a bartender -- a fantastic bartender. At a small company, you do what you can, where you can, and Sway ended up taking up some of the slack in our logistics. Now she runs all of Taihu’s international supply chain (no small feat).

※鶏油は温度が低いと固まってしまうのでスープを冷蔵保存する場合や氷で冷やす場合は食べる直前にかけて下さい。(冷蔵で約1か月保存可能です)

[Ingredients]
● Somen noodles: 200g
● Mirin: 2 tablespoons
● Soy sauce: 2 tablespoons
● Chicken broth: 2 teaspoons
● SOMI shantung: 1 teaspoon (you can also use Weipa)
● Sugar: 1 teaspoon (you can use lakanto to reduce the sugar content)
● Dou ban jiang: 1 teaspoon (gochujang is also okay)
● Bonito powder: 1 to 2 teaspoons
● Chicken oil or sesame oil: as desired
● Water: About 350ml (hot and cold water combined)
● Black pepper, white pepper, small green onion, Ra-yu to taste
※Taste after adding 350ml and adjust the taste to your liking.
※If you don't like the spiciness, you can replace Dou ban jiang with miso.
※Chicken oil hardens at low temperatures, so if you refrigerate it, pour it over the soup just before eating. (It can be refrigerated for about a month)

It has a deep flavor and richness that you can't believe it was made in just 3 minutes, yet it's super light, healthy, and the most addictive soup that you can eat every day and never get tired of.
This is a recipe that I am proud to recommend to everyone who has tried it, and I have been told many times that they have never had such a delicious somen dish♪
It tastes great with just the soup and somen, and of course it tastes great with Chinese noodles too.
It's too easy to make, so please give it a try.

Welcome to a NEW type of videos on this channel where I'll (try to) regularly update you all with Taiwan News and talk about the days that have passed. Unsurprisingly, this week has solely been focused on COVID-19. However, as there already is a significant amount of videos out there talking about the situation in Taiwan, we wanted to turn it around and inform the Taiwanese audience how the situation looks like in other parts of the world.
