[喝豆漿會子宮肌瘤?!錯❌]
#任何天然食材不過量都很安全
之前寫過 #尿酸高跟豆類跟菇類無關,是肉類嘌呤跟果糖的問題(但無奈的還是有很多醫師跟病人說痛風不能吃豆漿菇類😫)
另外被問到瘋的,就是有子宮/乳房肌瘤/腺瘤能不能吃豆類製品。
我之前寫過一篇《大豆異黃酮在乳癌風險的調節者角色&豆漿到底能不能喝?》從那篇2019年的《美國臨床營養學期刊(The American Journal of Clinical Nutrition)》有一篇法國長達11年追蹤的世代研究,對象為76,442名50歲以上女性,結果發現 #服用大豆異黃酮跟整體乳癌風險「無」相關性。(https://www.facebook.com/175089479960691/posts/404183537051283/?d=n)
這個研究結果,說明了大豆異黃酮與雌激素不同的「 #雙向調節」功能,當雌激素不足 (如更年期) 時,身為雌激素 #同分異構物的大豆異黃酮可幫忙減輕更年期的症狀,但若雌激素太多時,大豆異黃酮 #反而可以佔據受體(大風吹搶位置的概念)讓雌激素少刺激到受體,因此對於雌激素受體陽性ER(+)的乳癌來說,還有降低風險的好處,是可以理解的。
但對於家族史一等親乳癌或是ER(-)的人來說,有基因的影響,若再加上後天高脂飲食、環境荷爾蒙加劇,即使不受雌激素控制, 任何一種「激素濃縮的補充錠劑」都是不建議的。
好的,如果連濃縮的「大豆異黃酮」都出現跟整體乳癌無相關性的結果,「非補充劑」的豆漿豆腐製品,以法國女性一天從食物攝取不到1mg/day,對研究者來說是微量到可以忽略的。
若以我國衛生署建議一天不超過50mg來看,黃豆中的異黃酮含量才0.1%-0.4%,97%都是吸收率差的「含醣基大豆異黃酮」,而且對β-雌激素接受體 (中樞神經、血管、膀胱、骨骼、皮膚) 的親和力是乳房跟子宮的 α-雌激素受體的7倍,對骨鬆和心血管有益處外,對乳房跟子宮影響甚小,且食物中的吸收量其實不足以影響體內的荷爾蒙,比起豆漿豆腐, #環境荷爾蒙 (ex.塑化劑)的影響跟高脂高糖飲食、肥胖才是更嚴重的。
日本過去都是以豆類製品為每天三餐的食物,乳癌比西方國家低很多,但自從麵包蛋糕跟飲食西化後,乳癌就越來越年輕化。
有些研究出現「soybean」會提升子宮肌瘤風險的研究你仔細看,他是「milk or soybean consumption」,很有可能是牛奶的影響(高乳脂肪)不是豆漿啊😂日本的豆類攝取算大量的吧?一項日本女性的研究發現因子宮肌瘤而需要切除子宮的女性比沒有肌瘤的女性有「更少的豆類攝取」,因此推論天然的植物雌激素佔據受體降低肌瘤的產生。
另一項日本研究發現,子宮肌瘤跟大豆異黃酮、脂肪和纖維皆無關,而是 #酒類攝取會增加2.78倍的風險!為何呢?因為酒精會傷肝啊!
肝臟是代謝雌激素重要場所,能將刺激肌瘤變大的「雌二醇」轉變為影響較小的「雌三醇」,肝臟一旦受損,體內有過量的「雌二醇」,就會導致子宮增生肌瘤。
所以我再次呼籲各位親愛的臨床醫師們,不要再一看到乳房/子宮肌瘤就叫患者不要吃豆類食品,你該衛教的是:
#少糖少高脂肪內臟或肉類
#少油炸跟接觸環境荷爾蒙
#少飲酒跟熬夜
#體重控制不要讓身體脂肪過高
#減少壓力
降低環境荷爾蒙跟動物性荷爾蒙的刺激,降低肝臟傷害,而不是叫人家不要吃抗癌食物第一名的豆製品。
另外我找了好幾篇review綜觀性研究,只有一篇2013年提到豆奶有可能增加風險,但你點進去看,這是中國做的研究,裡面會增加風險的還有 #暴露在化妝品跟化學製品 (1.95倍風險)#塑膠製品 (1.48倍)最高風險的是 #食品添加物 #甜味劑 #防腐劑(3.166倍風險)
#這樣大家有沒有突然明白了什麼
妳都不怕每天化妝接觸重金屬、每天呼吸pm2.5、每天吃用加熱塑膠裝的外食、一大堆甜味劑防腐劑跟食品添加物的東西,妳怕豆漿幹嘛?何況,據我的學員帶來的消息,中國的食安問題嚴重,那個「豆奶」是用什麼粉做的完全不知道,怎麼可以污名化好的黃豆做成的豆漿呢?
王醫師一貫的建議,就是 #不建議補充任何的大豆異黃酮「濃縮補充劑」。但食物的豆漿豆腐本身是抗癌食物兼好的植物性蛋白質來源,不要吃1公斤黃豆或喝10公升豆漿之類的每天適量攝取都不用太擔心,因為攝取過多是熱量跟碳水的問題而不是荷爾蒙的問題啊!😆

係咪唔食脂肪同埋油就會瘦呢?
答案係錯嘅!
有好多研究顯示低脂肪嘅 diet 反而會令大家更加肥。好多食物寫住係低脂但係其實都會係高糖,所以大家注意。
高脂肪嘅 diet 反而會令到我哋有飽肚感,提高新陳代謝,所以燃燒卡路里其實仲快㗎!
大家一定要攝取適量嘅脂肪,尤其是係多元不飽和脂肪 Polyunsaturated Fat.
多元不飽和脂肪都有分omega 3 and omega 6.
記住,omega 3 (DHA & EPA) 係重要過 omega 6 好多。
如購買市面上嗰啲油丸,最好都要睇清楚個比例,越接近一比一比例先至係最好㗎。千祈唔好俾人呃。
其實係想吸取多啲 omega 3, 大家可以食魚,海鮮,蛋,肉類,合桃,亞麻籽,藻類食物。當然最好揀啲有機嘅或者唔會加左任何抗生素,荷爾蒙,化學物質嘅天然食物啦。
至於 omega 6 經常都會係一啲植物油或者零食可以搵得到。呢類型嘅食物就應該少食啲啦。
大家屋企嘅煮食油不妨改用椰子油,橄欖油,代替粟米油,豆油,菜籽油。健康好多㗎。

False.
Many studies have indicated that a low fat diet actually would increase people's weight. A lot of low fat food are actually high in refined sugar, which is even worst.
A diet rich in the fat make us feel full, increase metabolism, reduce sugar cravings and make us burn calories faster.
We should all consume a reasonable amount of fat, especially polyunsaturated fat.
2 types of Polyunsaturated fat - Omega 3, and omega 6. We want more omega 3 (DHA & EPA) more than omega 6. Omega 3 is anti-inflammatory, the good stuff. Omega 6 is inflammatory. We want to aim for a ratio of 1:1.
So if you are buying oil supplements, be sure to look at the ratio and purchase a quality product closest to 1:1 ratio.
We can obtain omega 3 from natural whole foods like fatty fish, seafood, eggs, grass-fed meat, flaxseeds, algae, and walnuts.
Omega 6 are usually found in junk food, refined oil.
When using oil at home, try to replace soybean oil, corn oil, canola oil with coconut oil, olive oil or even organic butter. It's much healthy for you.

Afternoon Tea EGG FREE Soy Milk Doughnuts
Difficulty: Easy
Time: 30min
Number of servings: 8 doughnuts
Ingredients:
((Soy Milk Doughnuts))
A
* 80ml soy milk
* 2 tbsp. sugar
* 2 tbsp. cooking oil
150g (5.3oz.) cake flour
1 tsp. baking powder
vegetable oil for deep frying
((Decoration))
milk chocolate bars
white chocolate bars
chocolate pens
sprinkles of your choice
etc...
Directions:
((Soy Milk Doughnuts))
1. Cut parchment paper into eight 4-inch squares. Mix A in a bowl.
2. Sift in cake flour and baking powder. Then mix well with a spatula.
3. Lightly dust your work surface with flour (because the dough is very soft). Shape the dough into a log. Cut the log into 8 pieces.
4. Flour your hands, roll each into a small ball, then make a hole in the center with your thumbs to look like a doughnut. Place it on the parchment paper.
5. Deep fry in oil at low (160C=320F) for about 7-10 minutes until golden brown (flip them 2 or 3 times). Remove the parchment papers when they start to come off. Place them on a wire rack to fully cool.
((Decoration))
1. Melt chocolate bars and coat one side of the doughnuts.
2. Decorate them with chocolate pens or sprinkles of your choice.
3. Allow chocolate to cool.
Best to eat on the day they are made!!!

"Zoni / Ozoni" soup is a Japanese soup meal with rice cakes (mochi), eaten on New Year's Day, at least in the following two or three days (Shogatsu: 正月).
As for ways of cooking the Zoni, ingredients vary slightly from one region to the other. But in most cases it is either a clear soup (sumashi-jiru) flavoured with dashi (stock usually made from flakes of dried bonito) and soy sauce, generally preferred in eastern parts of the country, or a miso soup generally preferred in the western parts.
My favorite is Shiromiso (White Miso) Zoni. White miso is a specialty in Shiga prefecture. It has a sweet taste and I love to eat it with bunch of bonito flakes!!! If you have never tried it, I recommend you to try it out :)

Shiromiso Zoni (White Miso Soup with Mochi Rice Cake)
Difficulty: Easy
Time: 20min
Number of servings: 6
Ingredients:
6 round Mochi (rice cakes)
150g (5.3oz.) Daikon radish
200g (7oz.) taro potatoes *pre-cooked or frozen
6 slices Kamaboko fish cake
6 decorative cut carrots
800ml Dashi stock *Kombu kelp recommended but bonito is okay
160g (5.6oz.) Saikyo Miso (white Miso)
Katsuobushi (bonito flakes)
Directions:
1. Slice Daikon radish in quarter-rounds. Make decorative cut carrot slices. Pre-cook Daikon and carrots in boiling water for 3 minutes and drain well. If your taro potatoes are fresh, please pre-cook them as well.
2. In a large pot, bring Dashi stock to a boil. (Add water and dashi packet. Bring to a boil, then reduce the heat to medium low and simmer for 5 minutes. Discard the packets.) Dilute white miso in 1/2 cup soup broth and add to the soup.
3. Add pre-cooked or frozen taro potatoes and cook until done. Then add Daikon and carrots.
4. In a different pot, boil mochi pieces until soft (they float to the top when they are done.)
5. Place Daikon at the bottom of a soup bowl or a mug so that the mochi won't stick on the dish. Arrange taro potato, carrot, and Kamaboko on top.
6. Sprinkle with Katsuobushi (bonito flakes).
Believe it or not, mochi rice cake in this zoni tastes nice if you dip it into kinako (soybean flour with sugar). I saw this on TV and tried it and was great!

最近為了減肥,每天都會喝一杯無糖豆漿,把黃豆蒸熟後分裝冰在冷凍庫,每天拿一份出來兌水打成豆漿連渣渣一起喝,健康滿點,順便多打一杯做成豆漿皂,搭配72%橄欖油的馬賽配方,非常適合乾性膚質沐浴使用。
I've been working hard on losing weight recently. In order to get the good nutrition, I'd drink a cup of non-sugar soymilk everyday. I cooked plenty of soybean and divided into small parts and stored in ice bank. Whenever I want to drink, I just take out one part and blend with water to get the fresh soymilk. This is really convenient!!! I made one more cup of soymilk for soaping. The recipe contains 72% of olive oil, it's very moisture and really suitable for dry skin.
