Happy Deepavali to our Hindu friends, do we have a treat for you!
Something we’re all familiar with, Nasi Biryani is known for the aromatic rice as the base for the meat on the dish. For this healthier recipe, we’ve used coconut oil as a replacement for ghee.
Basmati rice also has a low – medium glycaemic index, which is a good touch for those who are health conscious, yet still want the most in taste! We used saffron in the rice, mixed with cinnamon, star anise, pandan leaves, lemongrass and more to bring out the most of the taste in the rice. The marinated chicken thighs work excellently as a paring with the fragrant rice, finished with the garnishing like raisins, fried onions, cashew nuts, and coriander leaves.
A lot of ingredients? True? But tastes good? DEFINITELY!

An asian-inspired burger of much popularity, har cheong gai is known as ‘shrimp paste chicken’, the very essence of crispy, tender, and juicy put altogether! Pair with a burger patty, this is the PERFECT comfort food for any day.
We created a nice wasabi mayo in the recipe to match the har cheong gai. It’s not overly spicy, and yet at the same time packs a flavor punch. While you’ll find this dish served in a number of popular eateries, nows your chance to try making this at home too. Give it a go and you won’t regret it!

Recipe:
2 boneless chicken thighs
2 tbsp shrimp paste
2 tbsp rice wine
1 tbsp sesame oil
1 tbsp oyster sauce
1 tbsp sugar
Batter:
1 egg
3 tbsp water
4 tbsp plain flour
4 tbsp potato starch
Wasabi Mayo:
½ cup Japanese Mayo
2 tbsp light soy sauce
3 tbsp honey
20g Wasabi
Optional : juice from ½ a lemon
2 burger buns
50g green coral lettuce
Steps:
1) To 2 boneless chicken thighs, add 2 tbsp shrimp paste, 2 tbsp rice wine, 1 tbsp sesame oil, 1 tbsp oyster sauce and 1 tbsp sugar.
2) Marinate for 4 hours or overnight
3) For Wasabi mayo, mix ½ cup Japanese Mayo, 2 tbsp light soy sauce, 3 tbsp honey and 20g wasabi.
4) In a bowl add 1 egg, 3 tbsp water, 4 tbsp plain flour and 4 tbsp potato starch
5) Coat chicken thighs with batter.
6) Heat enough oil in wok, deep fry chicken thighs to golden brown
7) Drain and set aside
8) Layer burger bun with green coral lettuce, Wasabi mayo and prawn paste chicken thighs
9) Drizzle more Wasabi mayo on top of prawn paste chicken thighs

With a week more to the mooncake festival, here’s our healthier rendition to making a snowskin mooncake, and what else can be more local than to do a DURIAN one!
As we are making the snowskin version, you don’t even need to get involved with baking - it’s really simple, just that you’ll need to ensure that you need to freeze the lotus paste & durian mix for it to be hard enough to work with. A wooden mould is nice to use, but for it’s highly recommended for beginners to use the plastic mould.
It’s really yummy if you intend to use Mao Shan Wang durians, but it’s not a must to have - now you can easily have snowskin durian mooncakes ready for the festival!

Rendang is always a spicy favourite amongst us Asian people. Thick chunks of spiced meat with the fragrant spices is simply irresistible such that talking about it makes our mouths water! But the use of sugar and coconut milk takes a toll on our health, so we tried out a healthier, yet still as yummy version of chicken rendang for you guys to enjoy.
While normally chicken rendang will use about 120g of sugar, we eliminated this together with coconut milk, and replaced it with coconut oil, grated coconut as well as yogurt! Paring this together with the usual rendang spices like lemongrass, turmeric and kaffir leaves to name a few, we still get that flavorful, soft and tender taste that we all love!
So give it a go and serve it to your family, without worrying about the sinfulness that comes with it.
