Our J & J Rainbow Cupcakes feature colourful sponge coated with white choco (no powdered sugar in the supermarket to make icing, hence use melted choco) and showers of sprinkles & peanut bits. We made this on Joreen's 4th birthday & she had so much fun baking & eating lol 🥰
𝑰𝒏𝒈𝒓𝒆𝒅𝒊𝒆𝒏𝒕𝒔
365g Prima Muffin Mix
3 eggs
40ml water
110g melted unsalted butter
60ml vegetable oil
2 tsp vanilla extract
Food colouring
Sprinkles, peanut bits to decorate
Cupcake cups
𝑺𝒕𝒆𝒑𝒔
Preheat the oven to 350 degrees. Line cupcake tins with cupcake cups.
Combine all ingredients until incorporated (about 30 seconds). Then beat on med-high speed for 3 minutes until smooth batter is formed.
Divide batter according to how many colors you are using. I used 5 colours
Use food coloring to colour batter to desired intensity. Mix until the colors are fully combined.
Spoon a tablespoon of batter for each colour into cup.
Bake at 190 degree for 30 min or until a toothpick inserted comes out clean. Remove the cupcakes from the oven and transfer them to a rack to cool completely.
Meanwhile, melt the white choco to be use as topping of cupcake.
Drizzle over the cupcake and decorate with sprinkles/ peanut bits.
Enjoy~ ❤️

- Strawberry Milkshake Cupcakes with Rainbow Buttercream (makes 12)

2/3 cup whole fresh or frozen strawberries, thawed
1/4 cup whole milk, room temperature
1 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour, sifted
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, room temperature
1 cup sugar
1 large egg, room temperature
2 large egg whites, room temperature
วิธีทำ :
1. Process the strawberries, milk and vanilla essence with a bar-mix or in a blender.
2. Sift the flour, baking powder and salt together into a bowl.
3. Cream the butter and sugar in a bowl until pale. Add the egg and egg whites one at a time.
4. Add the flour mixture and strawberry milkshake to the butter mixture part at a time and lightly stir until combined.
5. Place cupcake liners into a muffin tin and fill each with the mixture to just below the top.
6. Bake in an oven at 325degrees Fahrenheit or 180 degrees Celsius for 20 minutes.
7. Decorate with butter cream.
- Pastel Butter Cream

1½ cups (340g/12oz) butter, softened to room temperature
3 ¼ cups (360g/12oz) confectioners' sugar, sifted
2 teaspoon vanilla extract
pinch of salt
Food coloring (optional)
วิธีทำ :
1. Combine all ingredients into a bowl and mix until pale and fluffy.
2. Add food colouring as desired.
3. Wait until cupcakes are completely cool! Load frosting into your piping bag, and pipe onto the top of the cupcakes.

クリスマスツリーケーキ
6個分
材料:
■ココアマフィン
ホットケーキミックス 100g
無塩バター(室温に戻す) 50g
溶き卵 1個分
砂糖 60g
牛乳 50ml
ココアパウダー 15g
溶かしバター 適量
■デコレーション
クリームチーズ(室温に戻す) 250g
無塩バター(室温に戻す) 130g
粉砂糖 130g
抹茶 大さじ1
水 大さじ1
アイスクリームコーンカップ 6個
粉砂糖 適量
スタースプリンクル 適量
アラザン 適量
チョコスプレー 適量
作り方:
1.オーブンは170℃に予熱しておく。
2.マフィンを作る。ボウルにバター、砂糖を入れ、白っぽくなるまですり混ぜる。溶き卵を2〜3回に分けて加え、その都度よく混ぜる。
3.牛乳を加え、ホットケーキミックス、ココアパウダーを加えてさっくりと混ぜる。
4.マフィン型に溶かしバターを塗って(3)を流し入れ、170℃のオーブンで25分焼く。
5.デコレーションクリームを作る。ボウルにクリームチーズ、バターを入れてハンドミキサーでクリーム状になるまで泡立てる。粉砂糖を2回に分けて加えてよく混ぜる。1/3量を取り分けて、残りのクリームに水で溶かした抹茶を加えて混ぜる。
6.マフィンの表面に白いバタークリームを塗り、コーンカップを逆さにのせる。
7.コーンカップの側面に、パレットナイフで緑のバタークリームを塗る。さらに、細い口金を付けた絞り袋で細かくクリームを絞って葉を表現する。
8. お好みの飾り付けをしたら、完成!

INGREDIENTS
Cupcakes
50 grams unsalted butter, room temperature
60 grams granulated sugar
1 large egg, beaten
50 milliliters milk
100 grams pancake mix
15 grams cocoa powder
Melted butter, for brushing
Buttercream Frosting
250 grams cream cheese, room temperature
130 grams unsalted butter, room temperature
130 grams powdered sugar
1 tablespoon water
1 tablespoon matcha powder
For Decorating
6 ice cream cones
Powdered sugar
Star-shaped sprinkles
Silver sugar pearls
Rainbow sprinkles
PREPARATION
Preheat the oven 340˚F (170˚C).
Make the cupcakes: In a medium bowl, mix together the butter and sugar until smooth.
Add the beaten egg, a bit at a time, and whisk well to combine.
Add the milk, pancake mix, and cocoa and stir to incorporate.
Brush a large, 6-cup muffin tin with melted butter. Divide the batter between the cups.
Bake for 25 minutes, until a toothpick inserted in the center of a cupcake comes out clean.
Make the buttercream frosting: In a large bowl, beat the cream cheese and butter with an electric hand mixer until smooth.
Add the powdered sugar, a bit at a time, and beat to incorporate.
Scoop about ⅓ of the frosting into a small bowl. Set aside.
In another small bowl, mix together the water and matcha until smooth. Add to the large bowl of frosting and whisk until smooth and homogenous in color.
Frost the cupcakes with a layer of white buttercream. Top each cupcake with an ice cream cone, tips up.
Spread a layer of green buttercream over the ice cream cones.
Transfer the rest of the green buttercream to a piping bag fitted with a star tip. Starting from the bottom of the cones and working upwards, pipe dollops of frosting to resemble the leaves of a tree.
Dust the “trees” with powdered sugar or decorate as desired with star sprinkles, silver sugar pearls, and rainbow sprinkles.

Bahan-bahan
2 cwn tepung gandum
1 sb serbuk penaik
2 biji telur
3/4 cwn gula
1 sb ovalet
1 sk esen vanila
200 ml santan kotak
Pewarna makanan pilihan
Cara Memasak
1. Dengan menggunakan pengadun, pukul telur bersama gula, ovalet dan juga esen vanila sehingga gebu dan ringan. Pukul dengan kelajuan yang tinggi.
2. Masukkan santan dan pukul hingga sekata.
3. Ayak tepung gandum dan serbuk penaik. Kacau hingga sebati.
4. Bahagikan adunan kepada tiga bahagian dan warnakan adunan tersebut mengikut pewarna pilihan.
5. Masukkan adunan-adunan berwarna tersebut ke dalam piping bag yang berbeza.
6. Sapu acuan dengan sedikit minyak dan paip adunan tersebut mengikut corak pelangi.
7. Kukus selama 10 minit dan kuih apam santan pelangi kukus siap untuk dihidangkan.

Rainbow Steamed Coconut Cupcake
Ingredients
2 cups of all-purpose flour
1 tbsp of baking powder
2 nos eggs
3/4 cup of sugar
1 tbsp of ovalette
1 tsp of vanilla essence
200 ml carton coconut milk
Selected food coloring
Cooking Methods
1. Using a mixer, beat eggs, sugar and vanilla essence until light and fluffy with high speed.
2. Pour in coconut milk and beat until fully combined.
3. Sift flour and baking powder. Mix them well.
4. Divide the batter into three portions and color them with selected colors.
5. Put colored batter into different piping bag.
6. Grease mold with bit of oil and pipe in colored batter according to rainbow pattern.
7. Steam for 10 minutes and Rainbow Steamed Coconut Cupcake is ready to be served.
