Popia Vietnam Sos Padu
Bahan-bahan (Sos Pencicah)
2 biji bawang kecil
10 tangkai cili padi
3 ulas bawang putih
1/2 lemon (diperah)
3 cwn sos Thai
1 sk sos ikan
Bahan-bahan (Popia Vietnam)
Salad
Tomato (dipotong)
Daun ketumbar (dipotong)
Daun bawang (dipotong)
Salad ungu
10 ekor udang (direbus)
Timun (dipotong)
1 paket kertas beras
1/2 sk garam
Nota: Boleh juga menggunakan sayur-sayuran lain.
Cara memasak (Sos Pencicah)
1. Dengan menggunakan pengisar, masukkan bawang kecil, cili padi dan bawang putih.
2. Kemudian, masukkan air perahan lemon, sos ikan dan sos Thai.
3. Kisarkan sehingga sebati.
4. Sos pedas manis siap untuk dihidangkan.
Cara menggulung (Popia Vietnam )
1. Masukkan garam dan udang ke dalam air rebusan dan masak sehingga udang kemerahan.
2. Basahkan kertas beras sehingga sedikit lembut dan letakkan di atas pinggan.
3. Susun udang dan sayur yang telah dipotong di atas kertas beras.
4. Lipatkan bahagian hujung kertas beras menutupi inti. Seterusnya, lipat bahagian kanan dan juga bahagian kiri. Akhirnya, gulungkan kertas beras dengan kemas.
5. Popia Vietnam siap untuk dihidangkan.
Nota: Pastikan kertas tersebut digulungkan dengan cepat. kalau tidak kertas akan mula melekat dan mudah terkoyak.

Vietnamese Spring Roll & Best Sauce
Ingredients (Dipping Sauce)
2 shallots
10 bird's eye chilies
3 cloves garlic
1/2 lemon (squeezed)
3 cups of Thai chili sauce
1 tsp of fish sauce
Ingredients (Vietnamese Roll)
Lettuce
Tomato (Julienne cut)
Coriander (cut)
Scallion (cut)
Purple lettuce
10 shrimps (boiled)
Cucumber (Julienne cut)
1 packet of rice paper
1/2 tsp of salt
Note: You may use other vegetables.
Cooking methods (Dipping Sauce)
1. Put shallots, bird's eye chilies and garlic in a blender.
2. Next, put in lemon juice, fish sauce and Thai chili sauce.
3. Blend them until well-combined.
4. Sweet sauce is ready to be served.
Rolling process (Vietnamese Spring Roll)
1. Put salt and shrimps into the boiling water and cook until shrimps reddened.
2. Wet rice paper until soften and lay it on a plate.
3. Place boiled shrimps and selected vegetables nicely onto rice paper.
4. Fold the bottom part over the filling. Then, fold the right and left sides. Lastly, roll over tightly.
5. Vietnamese spring roll is now ready to be served.
Note: Handle the wrapping step with care and as soon as possible to avoid the rice paper from torn.

Bahan-Bahan Karamel
3 sb gula
1 sb air panas
Bahan-Bahan Puding
2 biji telur
250 ml susu segar
3 sb susu pekat
1 sk esen vanilla
Bahan-Bahan Kek
5 biji kuning telur
40 gm gula
40 ml minyak jagung
50 ml susu segar
1 sk esen vanila
100 gm tepung naik sendiri
Bahan-Bahan Meringue
5 biji putih telur
80 gm gula
Cara memasak
1. Untuk membuat karamel, masak gula sehingga warna bertukar keperangan.
2. Masukkan air panas dan gaulkannya.
3. Setelah itu, tuangkan sedikit karamel tadi ke dalam loyang.
4. Untuk puding pula, panaskan dahulu susu segar bersama susu pekat. Tidak perlu masak sehingga mendidih.
5. Pukul telur di dalam satu mangkuk lain.
6. Kemudian, campurkan susu segar bersama telur tadi dan kacau sebati.
7. Masukkan esen vanila dan teruskan kacaukan.
8. Tapis adunan puding ke dalam loyang. Ketepikan dahulu.
9. Untuk kek pula, gaulkan kuning telur dan gula sehingga sebati.
10. Masukkan pula minyak jagung, susu segar, esen vanilla dan gaulkan semuanya sehingga 'bersatu'.
11. Masukkan tepung naik sendiri dan gaulkan lagi.
12. Di dalam mangkuk lain, pukul putih telur sehingga kembang menggunakan pengadun.
13. Masukkan gula sedikit demi sedikit sehingga menjadi meringue.
14. Campurkan meringue ke dalam adunan kek sedikit demi sedikit sehingga sebati.
15. Bahagikan adunan kepada beberapa bahagian untuk ditambahkan pewarna.
16. Masukkan adunan kek ke dalam loyang secara berselang-seli warnanya.
17. Bakar kek di dalam oven pada suhu 160°C selama 50 minit menggunakan teknik water bath.
18. Keluarkan kek daripada loyang dan kek karamel pelangi sedia untuk dihidangkan.

3 tbsp of sugar
1 tbsp of hot water
Pudding Ingredients
2 nos eggs
250 ml fresh milk
3 tbsp of condensed milk
1 tsp of vanilla essence
Cake Ingredients
5 egg yolks
40 gm sugar
40 ml corn oil
50 ml fresh milk
1 tsp of vanilla essence
100 gm self-rising flour
Meringue Ingredients
5 egg whites
80 gm sugar
Cooking methods
1. For caramel, cook sugar until the color turns golden brown.
2. Add hot water and stir well.
3. Then, pour the caramel into mold.
4. For pudding, heat fresh milk and condensed milk together. No need to bring to a boil.
5. Slightly beat eggs inside a bowl.
6. Combine milk mixture with beaten eggs while simultaneously stir well.
7. Add vanilla essence and stir well.
8. Sieve pudding mixture into mold. Put aside first.
9. For cake batter, mix egg yolks and sugar until well-mixed.
10. Add corn oil, fresh milk and vanilla essence, mix them well.
11. Add self-rising flour and mix well.
12. In other bowl, beat egg whites using mixer until fluffy.
13. Add sugar gradually until it becomes meringue.
14. Add meringue into cake batter bit by bit until well-mixed.
15. Divide cake batter into several parts for coloring purpose.
16. Add cake batter into mold alternately in colors.
17. Bake cake inside the oven at 160°C for 50 minutes using water bath technique.
18. Unmold cake and creme' caramel rainbow cake recipe is ready to be enjoyed.

Bahan-Bahan
6-7 batang sosej
2 1/2 cwn tepung gandum (adunan)
1 sb gula
2 sk serbuk penaik
2 cwn susu penuh berkrim
1 biji telur
1 sk garam
1 1/2 cwn serbuk roti putih
1/2 cwn serbuk roti jingga
360 gm mozzarella string cheese
1/2 cwn tepung gandum (lapisan luar)
Lidi
Minyak
Nota : Goreng dengan api sederhana panas supaya keju tidak cair di dalam kuali.
Cara Memasak
1. Rebus sosej dalam air mendidih selama 2-3 minit. Angkat dan toskan.
2. Potong sosej kepada 2 atau 4 bahagian (ikut suka anda). Ketepikan.
3. Masukkan tepung gandum, gula dan serbuk penaik ke dalam mangkuk.
4. Tambah susu penuh berkrim sedikit demi sedikit sehingga mendapat kepekatan sesuai.
5. Kemudian, masukkan telur dan garam. Kacau sekata.
6. Rehat adunan dalam peti sejuk selama 10 minit.
7. Sediakan campuran serbuk roti putih dan jingga. Ketepikan.
8. Ambil lidi, cucuk mozzarella string cheese dan selang-selikan dengan sosej. Ulang sampai habis.
9. Tuang adunan yang direhatkan tadi ke dalam cawan yang tinggi sehingga hampir penuh.
10. Tabur atau golek-golekkan corn dog ke atas tepung gandum.
11. Celup corn dog ke dalam cawan adunan, angkat dan salut dengan serbuk roti. Tekan-tekan sikit dengan tangan supaya kemas.
12. Goreng dalam minyak panas sehingga kekuningan. Angkat dan toskan atas kertas tisu.
13. Boleh dimakan bersama mayonis dan sos cili.

6-7 sausages
2 1/2 cups of wheat flour (batter)
1 tbsp of sugar
2 tsp of baking powder
2 cups of full cream milk
1 nos egg
1 tsp of salt
1 1/2 cups of white bread crumbs
1/2 cup of orange bread crumbs
360 gm mozzarella string cheese
1/2 cup of wheat flour (outer layer)
Wooden skewers
Oil
Note : Deep fry over medium heat so that the cheese won't melt inside the pan.
Cooking Methods
1. Boil sausages for 2-3 minutes. Lift them up and drain off the water.
2. Cut sausages into 2 or 4 parts (according to your preference). Set them aside.
3. Place wheat flour, sugar and baking powder inside a bowl.
4. Add in full cream milk bit by bit until you get the right consistency of batter.
5. Then, add in egg and salt. Mix them evenly.
6. Rest the batter inside the refrigerator for 10 minutes.
7. Prepare a mixture of white and orange bread crumbs. Set them aside.
8. Take a wooden skewer, skewer the mozzarella string cheese and sausages alternately. Repeat until all is done.
9. Pour the batter into a tall glass until almost full.
10. Dust or roll it in wheat flour .
11. Dip corn dog into the batter, lift up and coat with bread crumbs. Press a little bit using hand to make it neat.
12. Deep fry using hot oil until golden. Lift up and drain on tissue paper.
13. It could be eaten with mayonnaise and chili sauce.
