Taro 380g (before peel off) 芋頭(去皮前) 380克
Sugar 60g 糖 60克
Butter 15g 牛油 15克
Ingredients for Mochi 麻糬食譜
Glutinous rice flour 50g 糯米粉 50克
Corn starch 15g 粟粉 15克
Sugar 25g 糖 25克
Water 100g 水 100克
Oil 1tsp 油 1茶匙
Ingredients for Oil pastry 油皮食譜
Plain flour 265g 中筋麵粉 265克
Icing sugar 40g 糖霜 40克
Dry butter 105g 脫水牛油105克
Cold water 135g 冰水 135克
Ingredients for Oil crisp 油酥食譜

Moffle (Mochi waffle) is a perfect dish to arrange your leftover Mochi (Japanese rice cakes) after New Year's day!!!
I won this Moffle maker years ago but I didn't have a chance to use it since my darling and I are not crazy about Mochi... we don't buy too many Mochi to spare.
But this year, I tried it because many of my viewers LOVE mochi. And surprisingly, I really loved it!!! Moffle is amazingly delicious. It is like chewy rice crackers :D
In this video, I will show you what kind of fillings go great with Moffles!!!
You can also use teflon coated waffle maker :)
If you are using non-teflon waffle maker, please brush the surface with melted butter or oil.

1. Turn ON the Moffle maker to warm up. It takes about 6 minutes (green light will light up).
2. Open and place 1 square Mochi in the center, then close.
3. At first, the upper iron doesn't meet the lower, so after 3 minutes, gently press until the upper iron meets the lower iron.
4. After the total of 6 minutes, open and serve with the toppings of your choice.

1 bowl rice 252Kcal = 2 & 1/2 Moffle Sandwiches
1 toasted bread 267Kcal = 2 & 1/2 Moffle Sandwiches
1. Turn ON the Moffle maker to warm up. It takes about 6 minutes (green light will light up).
2. Open, place 2 slices of Shabu-Shabu Mochi, place the filling of your choice in the center (do not run over the sides), and place another 2 slices of Shabu-Shabu Mochi on top, then close.
3. At first, the upper iron doesn't meet the lower, so after 2 minutes, gently press until the upper iron meets the lower iron.
4. After the total of 4 minutes, Moffle sandwich is done.
*caution for the iron pan damage
do not brush soy sauce on the Mochi
do not cook Daifuku, Kinako-Mochi, or any Mochi with filling
please clean the pan when it gets dirty
Fillings I used:
- ham + cheese
- Shiso leaf + tuna Sashimi
- hamburger steak
- Kimchi + cheese
- Kinpira + cheese
- sweet chili shrimp
- chocolate
- red bean paste + chocolate
Other suggested fillings:
- Natto
- Sukiyaki
- salsa + cheese
- Korokke
- stir-fried green peppers
- Shiokara (salted fish guts)
- Mentaiko (seasoned cod roe)
- Anmitsu
- chocolate + ice cream
etc...
Moffles turn hard when cool but they still taste good within few hours :)

朱古力麻糬曲奇 Chocolate Mochi Cookies
20-25塊 20-25Pcs
無鹽牛油 100g Unsalted Butter
黃糖 110g Soft Brown Sugar
鹽 ½tsp Salt
雞蛋 1 Egg
中筋麵粉 185g Plain Flour
可可粉 15g Cocoa Powder
泡打粉 3g Baking Powder
朱古力粒 40g Chocolate Chips
糯米粉 85g Glutinous Rice Flour
砂糖 25g Sugar
牛奶 150ml Milk
油 5g Cooking Oil
1.砂糖及牛奶以小火煮熱
2.已煮熱的牛奶倒入糯米粉及油裡拌勻
3.先煮滾水,糯米漿包上保鮮紙蒸15-25分鐘至凝固
4.加入黃糖拌勻
5.混合中筋麵粉,泡打粉,鹽及可可粉
6.拌入雞蛋,攪拌至沒有顆粒
7.拌入過篩粉類至沒有顆粒
8.曲奇麵團包上保鮮紙冷藏備用
9.拌勻蒸熟的麻糬,包上保鮮紙放涼後冷藏約三小時
10.將麻糬分成20粒 (每粒10g)
11.曲奇麵團分成20粒 (每粒約23g),搓成球狀稍為放置一會
12.手沾上麵粉,將曲奇麵團壓平,包入麻糬搓圓
13.稍為壓平曲奇麵團,在表面鋪上朱古力粒
14.以180℃焗6分鐘,反轉180º再焗6分鐘即成

木薯淀粉20g,20g cassava starch
糖20g,20g sugar
牛奶170ml,170ml milk
黄油10g,10g butter
★豆沙:Red bean paste
红豆80g,80g red bean
细砂糖40g,40g sugar
盐一小撮,pinch of salt
★烙饼(8个):pan pie
中筋面粉350g,350g plain flour
速溶酵母1大勺,1 tbsp instant yeast
牛奶220ml,220ml milk
盐2g,2g salt
糖1大勺,1 tbsp sugar
黄油20g,20g butter
★其它内馅:
自制豆沙100g,100g red bean paste
金枪鱼罐头一罐,A can of tuna
盐,salt
黑胡椒,black pepper
