#香蔥起司餅乾 /#生酮 ⭐超好吃的脆餅乾!/
在古時候我還有寫部落格時,有陣子做點心瘋狂研究生酮(Keto)。不止生酮,有時還Vegan無蛋奶。朋友說我總是走在很前面😁也是,那時候台灣好像沒很流行做這樣的點心。總之對於低碳/生酮這話題滿有心得,不過講起來很多細節,可能又可以出一本書了😆
前陣子有些朋友在問能不能分享低碳/生酮點心,這個食譜我覺得滿好上手的,算是入門款,食材也不會很難準備,大家可以試試。重點是超好吃!飽足感也很夠!
有在減重或是有在控制碳水化合物的朋友也適合。
這餅乾如果是要做甜口味的變化,可以放赤藻糖醇,但注意赤藻糖醇味道是有點涼感的,不要放太多,另外就是買來如果是顆粒狀我會用食物處理器打成細沙粉狀使用,顆粒狀會不好融化而且涼感會很明顯。這次做鹹口味,起司和香蔥兩個就是好朋友啊❤️😍用奇亞籽的用意在於,奇亞籽非常能吸收水份,讓餅乾有脆有點的口感,因為生酮點心不使用麵粉,但如果只是杏仁粉做的餅乾通常口感又會比麵粉軟,不像“餅乾”,所以奇亞籽扮演的角色很大喔!另外奇亞籽也有足夠的膳食纖維,很適合做生酮料理和點心。
#生酮奇亞籽香蔥起司餅乾 食譜 :
1.有機奇亞籽15克+水30克,靜置約15分鐘讓奇亞籽吸收所有水份
2.無鹽奶油15克,融化備用
3.杏仁粉(美國大杏仁粉,不是南北杏,美國杏仁粉就是做馬卡龍用的杏仁粉)80克+起司粉15克,倒入奇亞籽,融化奶油,攪拌成麵糰,加少許乾燥蔥末、鹽調味(沒有乾燥蔥末就省略做起司餅乾就好)。鹽幾記得要加足夠比較好吃。
4.在兩張烘焙紙中間把麵糰桿平,約 2mm. 擀的厚度會和烤的時間有關係,建議薄一點烤起來比較香脆。用pizza滾刀切方塊。
5.放入已預熱好180度C的烤箱,烤約10-20分鐘不等,烤到餅乾稍微上色即可,如果上色但餅乾還不夠脆,可以關火後在烤箱裡面悶一下(厚度不同、烤箱不同,請自行調整時間溫度)
6.烤好放涼,方塊接口處再撥開即可。這是脆口感的餅乾,記得密封保存喔!

Chia seed 15g + water 30g, let it absorb.
Add in almond powder 80g +parmesan cheese 15g +melted butter 15g. Add salt to season,add dried green onion(optional), form into dough. Roll into 2mm of flat sheet. Use pizza roller cutter to mark, bake at 180c for 10-20 min. Break into pieces once cookies are cooled. Store in an airtight container.

The baker only use really natural food. Although I think the soy-butter, vegan cheese, egg-replacer are not too unhealthy. She insist using original vegetable in her vegan dessert.
有在發摟Reddy的網友應該都知道,她超堅持只用原型植物性食材,完全不用像是大豆奶油、純素起士、代蛋粉⋯等替代品。
我個人是不會太care替代性食品啦,不過真的很意外這樣清爽又如此接近乳製品的口感呢,好強呀!👍

從小就很愛吃菠蘿包,中間夾塊牛油,秒變菠蘿油,再配一杯凍奶茶,這就是超經典的港式下午茶!沒想到,居然在台北再遇經典,沒錯,是vegan版本!
超愛這個「濃豆乳菠蘿包」(NT35),在沒有使用雞蛋和牛奶的情況下,依然做到外層香脆,裡層軟綿;他們還推出了自家製vegan牛油,搖身變成「冰火菠蘿油」,可惜我沒有時間去吃,光想像,口水都滴出來了 🥺😭

I have loved pineapple buns since childhood, with butter in the middle, immediately become buttered pineapple bun, and a cup of cold milk tea, this is the classic Hong Kong style afternoon tea! I didn't expect to meet the classic again in Taipei, yes, it is the vegan version!
I love this "Soy Milk Pineapple Bun" (NT35) very much, without the use of eggs and milk, it is still crispy on the outside and soft on the inside; they also launched their own vegan butter, which add into the pineapple bun and turned to "Buttered Pineapple Bun", unfortunately I don’t have time to try it 🥺😭
Also, be sure to try the "Sea Salt Soy Milk Roll", which has no milk but has the milk flavor, really amazing! I feel like I can eat quite a lot at once! You can also find the classic Taiwanese souvenir - Pineapple Cake (vegan version) here 😉
