[教學] 如何做出不用烤的OREO CHEESE蛋糕 ! 口水啊~~~
Ingredients:
10 – 12 vanilla Oreo cookies
2 tbsp of melted butter
100 grams of cream cheese at room temperature
3 tbsp of confectioners sugar
1/4 tsp of vanilla extract
250 ml of whipping cream, chilled
Method:
Add 8 Oreo cookies to a mixing bowl. Using the tip of a meat tenderizer or the tool of your choice, break them up so the resemble dry, crumbly sand. Add in 2 tbsp of melted butter. Mix it together until it resembles a wet sand. Add it to the bottom of a spring form pan and pack it down gently using a spatula.
Add the whipping cream to a mixing bowl. Using a whisk or electric mixer, beat it until it doubles in volume and peaks form. This should take about 3 to 5 minutes. Set it aside in the fridge or in a cool place. Make sure the whipping cream is chilled before using it.
Put the cream cheese in another mixing bowl. Add in the confectioners sugar and the vanilla extract. Mix until it’s well combined and creamy. Add the whipped cream to the cream cheese mixture and beat it together.
Break up the other 2 Oreo cookies into tiny bits and fold them into the mixture.
Add the cream cheese mixture into the spring form pan so it comes to the top. Smooth it out with a spatula and top it with bits of Oreo cookies.
Place it in the fridge and chill until it’s set. This should take 5 to 6 hours but overnight is preferred. You can also set it aside in the freezer to have an ice cream consistency. Serve and enjoy your no bake Oreo cheesecake.

【英文聽力要學好,先分好這兩件事情】a state-of-the-art article
上一篇文章我們談到了,如果一句話聽不到的時候,要怎麼剖析自己需要加強的地方(因為不是所有的聽不到、聽不好都跟聽力不好有關係)。
這一篇文章要以Top-down approach 和 bottom-up approach 來跟大家分析,練習英文聽力時,要注意的事情。
大多人在練習英文聽力時,想到的都偏向 bottom-up approach 的面向,如:
1. 發音 (pronunciation)
2. 抑揚頓挫 (intonation)
3. 連音 (connected speech)、消音 (deletion)
4. 字的重音 (stressed syllables) 和字間連結等等。(and more)
這些面向雖重要,在教學過程中,也會發現學生也可能會「每一句話都了解,但句子間的關係沒弄懂 -- focusing on individual sentences, missing the relationship between ideas」那樣也會造成有聽沒有懂。
因此,除了跟「聲音」相關係的部分要注意外,也要採取 top-down approach 來聽。而Top-down approach 著重
(1) 對話/演說的重點、主題、背景 (gist, main ideas, topic, and setting of the text)
(2) 資訊與資訊的關係 (general information or details)
(3) 資訊的整理 (how the speaker sequences the information)
(4) 對於內容的猜測 (inferencing, guessing, predicting)
大家要記得,母語人士、亦或聽力很好的人一定是不管有意識到、無意識到、還是些微意識到地同時使用這兩個approaches 在聽,才能培養出好的listening skills. (Skilled listeners simultaneously engage in top-down and bottom-up processing, using both types of skills to construct meaning. )

Also known as spiced wine, vin chaud, glühwein, mulled wine is a traditional drink during winter, especially around Christmas. It usually made with red wine along with spices, orange and lemon and served hot or warm.
Making mulled wine couldn’t be easier. Just combine the spice you like, red wine, orange, sugar, and bring it to a boil, then reduce to low heat to simmer for 10 minutes. It’s down. If you’ve never had this for holidays. It’s time to make one to warm you during winter. Here’s a recipe for simple Mulled Wine, hope you enjoy it. :)

Simple and Perfect Mulled Wine Recipe
☞ Yields: 2 Servings
✎ Ingredients
red wine 500ml
orange 1
lemon 1
whole clove 3
cinnamon stick 1
star anise 1
ginger 3 small pieces
nutmeg 1
granulated sugar 60g
black pepper 1g
honey 10g
✎ Instructions
1. Pour the wine into a pot, allow to decant for a while.
2. Cut off the top and bottom ends of the orange. Hold and roll the orange around in hand with a smooth, even motion. Slice off the skin in strips until the peel naturally cuts off.
3. Slice the skin of lemon in the same way.
4. Collect all peels and put them in a bowl. Set aside.
5. To minimize bitterness, remove the white pith of orange and lemon by knife.
6. Combine sugar and all spices in a dry saucepan over a med-low heat. Stir evenly for 1 minute, then as soon as you can smell the flavor.
7. Twist all citrus rinds to release aroma before drop them into the pan.
8. Making syrup. Squeeze one orange and half lemon to get the juice. Stir well and bring to a boil.
9. Pour the red wine, and bring it to a boil again, then reduce the heat to low, let it simmer for 10 minutes.
10. Time’s up. Remove from heat and strain through a fine mesh sieve.
11. Take a lime and rub on the glass for extra flavor and coated with salt. Pour the hot spices red wine, topped with your favorite garnishes. Enjoy.

Hi, everyone. :) Today we'll show you how to make a delicious classic dessert: Classic New York Cheesecake.
There are so many different types of cheesecakes, and each one has its own unique recipe and ingredients. But New York cheesecake is my favorite dessert. It tastes fantastic and ultra-rich, creamy and dense. New York cheesecake uses digestive biscuits in the bottom, and a cream cheese base, and sour cream to create a lighter and denser taste.
This recipe doesn’t require a water bath, so it’s easy even for beginners. And no worry it’ll be cracks or sinking. The cake is classic and perfect. Hope you like. Enjoy. :)

Classic New York Cheesecake Recipes
Pan Size: a 7” cake pan (Ø 18cm)
✎ Ingredients
☞ For the crust
digestive biscuits 200g
unsalted butter 80g, melted
a pinch of Fleur de Sel or coarse sea salt
☞ For the filling
cream cheese 500g, room temperature
granulated sugar 160g
cake flour 15g
lemon zest 1tbsp
lemon juice 13g
egg 2
sour cream 300g
✎ Instructions
☞ For the crust
1. Put the digestive biscuits into food processor and blend to a fine crumb. Or you can place the biscuits in a plastic bag and crush with a rolling pin to fine crumbs.
2. Add the crumbs into a bowl and pour the melted butter and a pinch of salt. Stir until well combined as the wet sand texture.
3. Use a towel paper to butter the bottom and sides of the cake pan. Then line with the prepared parchment paper on bottom and sides.
4. Spoon the crumbs into the bottom, use the cup to firmly press them down. For sides, make a even layer of crust around the side, press the edges as well. It should almost reach the top. Of course, you can use your fingers for the sides. Place in fridge for 30 mins to chill.
✎ For the filling
1. In a large bowl , add cream cheese and sugar, test the cream cheese with your finger, it should feel softer. Use a hand mixer to beat in medium low speed, until smooth and sugar has dissolved.
2. Add lemon zest, lemon juice, and sift the flour into the bowl. Beat it in low speed to mix well.
3. Add eggs, keep beating in low speed until smooth.
4. Add sour cream, beat until just combined.
5. Pour the batter into the pan, gently tap the pan on the table to remove air bubbles.
6. Preheat the oven to 150°C, and bake in 50~60 minutes.
7. Time's up. Cool in oven with a door ajar for 1 hour. Then remove from oven to let cool, and chill in fridge for 6~8 hours before serving.

It’s SO EASY To make homemade peanut butter! I suggest strongly to make your own one. You can control the amount of salt and sweetness, and you can make it more creative. Like add some other different nuts to add more flavor. All is up to you.
Peanut butter thick toast is an iconic dish served at cafe and tea shops in Taiwan. It’s serious good. You can smell full of peanutty and roasted flavor. It’s a wonderful breakfast and afternoon snap. As long as your have peanut butter and butter at home. Hope you enjoy this video. :)

Taiwanese Style Creamy, Smooth Peanut Butter Thick Toast Recipe.
Ingredients
☞ For peanut butter
skin raw peanuts 200g
a pinch of salt (optional)
honey 20g
peanut oil or vegetable oil 30g
☞ For peanut butter thick toast
tichk toast 2 slices
peanut butter
melted unslated butter 10g
brown sugar, a little (optional)
Instructions
✎ peanut butter:
1. Wash raw peanuts thoroughly in cool water and then place them on a kitchen towel or paper towel to pat them dry.
2. Place peanuts in a single layer in a pan on low heat for 15-20 minutes, stir them often to avoid getter bitter and burn.
3. Once you smell peanutty and the color turns to be golden brown. Turn off the heat and pour out the peanuts and let cool.
4. After the peanuts have cooled, gently remove the skins by fingers or by rolling the nuts between your hands. There are a number of ways you can crunch the skins off.
5. Transfer the toasting peanuts in a food processor. Pulse the processor a few times until chopped to be crumbs.
6. Run the food processor for 1 minutes and then stop and scrape down the sides and bottom of the bowl. At this stage , the peanut butter will look gritty and dry like couscous.
7. Run the processor for another minute, then stop and scrape down the sides. At this stage, the texture will start clumping together.
8. Add a pinch of salt, honey, and vegetable oil. You may need to run the processor for many times depends on the power of your food processor.
9. Continue processing the butter until it becomes completely shiny, smooth.
10. Taste and add more salt or honey if needed. Transfer the peanut butter to storage container. It's down.
✎ peanut butter thick toast:
1. You can buy a sliced bread, or you only have unsliced one, then cut a 1" slice.
2. Cut the bread at each diagonal, this will make it easier to break off pieces.
3. Brush one side of bread with melt butter. Sprinkle a little brown sugar (optional).
4. Spread peanut butter on the toast.
5. Preheat the oven to 190°C, bake for 8-9 minutes until the top coating had dried and hardened somewhat. Enjoy.
