We’re turning over a new leaf in 2021 with a wholesome new pastry! Introducing our first vegan confectionery, Vegan Chocolate Tart* in the Veganuary Month. Specially handmade as a guilt-free treat for vegan diners, the tart is filled with rich salted caramel sauce and vegan dark chocolate ganache, while the cacao nibs lined on top enhance the texture of the hearty tart with a nuanced chocolate flavor profile. Vegan Chocolate Tart will be available at Hong Kong boutiques starting from tomorrow! It will soon be available at Macau boutiques and online pre-order as well. Stay tuned to our updates!

Many of you have been asking whether I bring a packed lunch to school or eat from the King Edward’s School dining hall. Well, I don’t bring a packed lunch, because luckily at KES, we have a variety of food to cater for special dietary requirements: vegetarian, vegan, gluten free…and don’t worry, there’s HALAL food as well! Plus, we’re fortunate to have a different menu for each day of the week - lasagna, roast chicken, pizza, baguettes, spaghetti bolognese, fish and chips, KES’ own Zinger Burger, and many others. They even have Tom Yum…although obviously, it isn’t authentic Thai Tom Yum but the English spin on it!
And pudding is a must after lunch. Pudding is what British people call dessert. At KES, we have shortbread, flapjacks, brownies, jelly, cookies, muffins, and a few other things as well. As for drinks, KES only allows the dining hall to serve water and squash - no tea, coffee or fizzy drinks are allowed for the students.
As for the method of payment, they don’t accept cash from the students. The only method of payment is by a pre-paid ID card which the parents have paid in advance. This is the safest way to avoid students from bringing in cash to school.
And before I end, allow me to share one unique bit of KES dining hall tradition: whenever someone drops a plate or a spoon, the whole dining hall is inclined to give a round of applause - interesting, huh?

Borassus flabellifer, commonly known as doub palm, palmyra palm, tala palm, toddy palm or wine palm, is native to the Indian subcontinent and Southeast Asia, including Nepal, India, Bangladesh, Sri Lanka, Cambodia, Laos, Burma, Thailand, Vietnam, Malaysia, Indonesia and the Philippines. It is reportedly naturalized in Pakistan, Socotra, and parts of China.
The top portion of the fruit must be cut off to reveal the sweet jelly seed sockets, translucent pale-white, similar to that of the lychee but with a milder flavor and no pit. The sweet jelly seed sockets occur in combinations of two, three or four seeds inside the fruit. The jelly part of the fruit is covered with a thin, yellowish-brown skin. These are known to contain watery fluid inside the fleshy white body. These seed sockets have been the inspiration behind certain sweets Sandesh called Jalbhara (জলভরা) found in Bengal.
The conventional way this fruit is eaten is when the outer casing is still unripe while the seeds are eaten as the fruit. But if the entire fruit is left to ripen, the fibrous outer layer of the palm fruits can also be eaten raw, boiled, or roasted. When this happens, the fruit takes a purple-blackish hue and tastes similar to a Coconut flesh. The skin is also eaten as part of the fruit similar to how mango skins are often consumed along with the fruit. Bengali People have perfected the art of making various sweet dishes with the yellowish viscous fluidic substance obtained from a ripe palm fruit. These include Mustard oil fried Taler Bora,tastes best when fried in Sunflower oil (তালের বড়া), or mixed with thickened milk to form Taal-kheer (তাল ক্ষীর).

三隻芒果 3 Mangoes
一百六十五克水磨糯米粉 165g Glutinous rice flour
十五克粟粉/玉米粉15g Corn starch
七十克白砂糖 70g Sugar
二百毫升椰漿 200ml Coconut milk
八十毫升全脂牛奶 80ml Whole milk
一湯匙菜油 1tbsp Vegetable oil
三十克糯米粉(蓋上糯米糍用) 30g Glutinous rice flour (To coat the mochi)
二十克椰絲碎 20g Coconut flakes
八隻紙杯 8 Paper cake cups
一個膠刀刮 1 Plastic sputula
沒有彈性的膠手套 Gloves
