Indonesian Curry Prawn (Curry Shrimp)
Serves 3 - 4 pax

Spice paste (rempah paste) ingredients

3 cloves shallot
3 cloves garlic
1 stalk lemongrass (only use the white stem portion)
2 fresh red chilli (deseeded)
10g young ginger
1 chilli padi (optional)
4 kaffir lime leaves
1/2 teaspoon coriander seed powder
1 teaspoon turmeric powder
80ml water
Other ingredients

20g belacan (dry fry first before using)
A small bunch of curry leaves
1 large red onion (cut into chunks)
300ml water
400g prawns
1/2 teaspoon sugar
1 tablespoon fish sauce (or light soy sauce)
125ml coconut milk

Leslie Ooi 是快乐海鲜餐厅老板，以前是我妈西公园的常客，后来也有到我家自在饭店支持。几年前我也去他的快乐捧场开开眼界。快乐是一家包罗万有的海鲜餐厅，基本上想得到要吃的菜色都有 单单一样螃蟹料理就好十几二十种花样。
今天Leslie老板特邀 Hock Chai’s【让味道说话】Flavours Talk和Steven Goh 的 48 Holiao 前来试菜，推广他们新出的菜单好吃，价格大众化，新的餐牌老板说赶印中，他会尽快给我，到时我再分享给大家看。
今天我们试吃了很多道菜色，麻辣干锅虾里面很多料，又麻又辣很是精彩，喜欢刺激的朋友绝对不能错过哦。
咖喱虾的酱汁我捞饭吃，虾新鲜活着煮，好吃极了。新鲜活跳跳的虾煮成，虾肉质弹牙，咖喱汁渗透了虾肉，一口咬下好满足。
咖啡鸡我很喜欢，吃了好多。鸡腿肉腌制入味，炸得外酥内嫩，再裹上店家特调的咖啡酱汁，那个香能让我多吃几块。口味带甜，有点Marmite鸡的感觉，但多了一层咖啡香气更为诱人。
芋头石斑这道我特别喜欢，石斑新鲜味道也调得特别好，芋头鱼肉一起煮就是香。这道我印象深刻。
豆酱鱼片是古早味，我拌饭吃得开胃，很喜欢。
上汤海鲜河，河粉炒得透香，酱油下不多，但每一口能吃出师傅的功力，这道可口。
茄子豆腐，这道喜欢，因为很素，可以平衡一下。。心理。这道也是白饭的杀手。
