📌燒乳鴿
材料: 鴿王,乳鴿,BB 鴿 共三隻
醃料: 五香粉,糖,鹽各一茶匙半,胡椒粉半茶匙
上色料: 老抽,生抽,酒各一湯匙
脆皮水: 麥芽,大紅淅醋各一茶匙 ,白醋一湯匙
做法:
1 鴿洗淨索乾水後用醃料內外塗勻
2 將上色料塗勻鴿身後連同剩餘汁液倒入保鮮袋或真空袋醃25分鐘
3 醃好後塗上脆皮水吊乾或鴿身噴油即可放氣炸鍋內鴿肚向下180度焗12分鐘轉鴿背向下再焗12分鐘
備註: 鴿王需時15分鐘轉身再焗15分鐘
鴿腳不要關節位剪(會縮)
English Version
Fried Pigeon

Ingredients:
Pigeons - 3 sizes (or use spring chicken)
(young pigeon, regular pigeon, and king pigeon. King pigeon is the best, about 1kg, which has more meat, more tender and sweet.)
(Clean pigeons, trim off feet but not too much to cause shrinkage of skin when cooked, and pat very dry or else the dry marinating ingredients will not stick to the meat and bones for more flavor.)
Marinate ingredients for 3 pigeons:
(divide the measurements according to the size of your pigeon)
Five-Spice powder - 1 ½ tbsp (about 1 tsp for marinating one pigeon 1kg)
White pepper - ½ tsp
Sugar - 1 ½ tbsp or more
Salt - 1 ½ tsp
Cooking wine - 1 tbsp
Dark soya sauce - 1 tbsp
Light soya sauce - 1 tbsp
Crispy skin mixture ingredients:
Maltose - 1 tsp (or honey but it will not be as crispy)
Chinese red vinegar - 1 tsp (or just use white vinegar)
White vinegar - 1 tbsp
Methods:
1. In a bowl, add in five-spice powder, white pepper, sugar, salt, and mix well.
2. In a large tray, dry rub the interior and exterior of the pigeons with the marinate mixture prepared in Step 1.
3. Add cooking wine, dark soya sauce, and light soya sauce to the pigeons. Rub well.
4. Transfer all marinated pigeons to a plastic bag, flatten and seal tight without air inside. Best to use vacuum sealer. Set aside for 25 minutes.
5. In a microwavable bowl, add in maltose, Chinese red vinegar, white vinegar, and microwave until melted and mix well. Set aside to add into the pigeons after about 25 minutes of marinating time.
6. After 25 minutes of marinating time, add the mixture in Step 5 into the plastic bag, reseal it, and rub well.
7. MUST spray the pigeons with a layer of cooking oil and put it into the basket of the air fryer with the breasts facing up first. Cook it at 180C (356F) for 12 – 15 minutes then turn the pigeons over with the back facing up and continue cooking for another 12 – 15 minutes and reduce heat to 160C (320F).
Adjust the time according to the size of your pigeons.

大白菜 1棵
白蘿蔔 少許(切絲)
紅蘿蔔 少許(切條)
蔥 1 棵
中國韭菜 數條
鹽 1 茶匙 (調味用);
大量 (用來醃大白菜及蘿蔔條)
蘋果 1/4 個 (切大粒)
雪梨 1/4 個 (切大粒)
蒜頭 1個(去衣)
洋蔥 1/4 (橫切幾刀)
白醋 2-3湯匙
魚露 2湯匙
黃糖 2至4茶匙(隨個人口味加減)
生薑蓉 1湯匙
韓國辣椒醬 2湯匙
韓國辣椒粉 4湯匙
芝麻 (炒香)大約1/4s杯
做法:
1) 大白菜切塊用鹽醃至至2至3個小時至軟身,菜梗可對摺並不拆斷便可。然後過清水3次去除鹽份,跟著去除水份(可用手楂出水份或用蔬菜除水篩).放入大盤內備用.
2) 紅蘿蔔切條、白蘿蔔切絲,用鹽醃兩小時至軟身,過清水,揸乾水,加入大白菜內.
3)蔥和韭菜切段,加入已放大白菜及蘿蔔的盤內.
4) 蘋果、雪梨、蒜頭、洋蔥、白醋(2湯匙)、魚露放入攪拌機內磨成汁後,加入韓國辣椒粉、韓國辣椒醬、鹽、糖(先放一茶匙)和姜蓉, 拌勻先試味。此時可依個人口味酌量加入1下匙糖和(或)1湯匙醋再調味。把混好汁料倒入蔬菜內,用手拌均.再試味。此時可再加入餘下的2茶匙糖。最後加入已炒香的芝麻再拌勻,.
5)將拌好的蔬菜放入玻璃盛器內,蓋好後放雪櫃儲存數天後食用更入味
Kimchi

Ingredients:
Napa cabbage - 1 head
White radish - cut into strips
Carrot - cut into strips
Green onion - cut into chunks
Chives - cut into chunks (do not add too many chives)
Salt - enough to marinate
Marinate ingredients:
Apple - ¼
Pear - ¼ (best to use Asian pear)
White onion - ¼
Garlic - 1 bulb (remove skin)
White vinegar - 2 tbsp or more (adjust to your taste)
Fish sauce - 2 tbsp
Korean red hot pepper powder - 4 tbsp or more (adjust to your taste)
Korean red hot pepper paste - 2 tbsp
Sugar - 2 ½ tsp or more (adjust to your taste)
Salt - 1 tsp (adjust to your taste)
Grated ginger - 1 tbsp
White sesame seeds - pan fry with no oil until fragrant
Methods
1. Marinate the white radish and carrot strips with salt for about 30 minutes. Set aside.
2. Cut napa cabbage into chunks. Marinate with salt for 2 hours or until the stem is bendable without breaking into pieces. Optional to put weights on top of cabbage chunks to speed up the process of extracting the liquid.
3. Rinse the napa cabbage chunks 2 to 3 times with clear water and spin dry with a salad spinner. Set aside.
4. Rinse the white radish and carrot strips with clear water after marinating for 30 minutes, and squeeze dry. Set aside.
5. In a blender, add in apple, pear, white onion, garlic, white vinegar, fish sauce, and puree well. Set aside.
6. In a big mixing tub, add in green onion, chive, napa cabbage, white radish, and carrot pieces. Add in the mixture from Step 5. Add in Korean chili powder and chili paste. Add in grated ginger. Mix well with hands, taste test, and add more seasoning as needed.
7. Transfer to a storage container. Mix in the white sesame seeds and is ready to eat as is or the longer you store it the tastier it will become.

📌高筋麵粉 50克
📌低筋麵粉 50克
📌糯米粉 20克
📌牛奶150克
📌水 50克
📌菜油 4湯匙
📌蛋4 隻
📌糖 1 茶匙
📌肉桂粉 *如不喜歡可以不用*
📌鹽 半茶匙
做法:
1. 鍋內注入水,奶和菜油, 開火(不要太大火)煮至滾
2.將3隻粉(高筋麵粉、低筋麵粉和糯米粉)撈在一起拌勻,加入糖和鹽
3.將#2的麵粉用篩慢慢加入煮滾了的#1鍋內,一直攪拌直到煮熟會變成透明. 注意⚠️煮時要不停攪拌
4.再將鍋內全部粉糰倒入廚師機/麵包機, 攪拌到成一個糰狀(如果沒有機可用4隻筷子自己手動攪)
5.將雞蛋族隻加入#4 並一直不停攪伴直至見到很好洞(空氣). 注意⚠️要將麵糊打得夠鬆否則炸出來會不夠鬆
6.加油入鑊中開火煮熱,同時準備一張吸油紙及一隻大🥣加入砂糖和肉桂粉拌勻
7.將兩隻不銹鋼匙(或用雪糕勺 ice cream scoop會更圓更靚)在油中浸一下再用它們舀起一匙#5 的麵糊放入熱油中炸, 然後拿起放在吸油紙
8.再將#7剛炸完的麵球放回鑊中炸至爆開
9.炸完再洒上砂糖和肉桂粉-沙翁完成!
Chinese Sugar Egg Puffs

Ingredients:
Water - 50ml
Milk - 150ml
Vegetable cooking oil - 4 tbsp
Sugar - 1 tsp
Salt - ½ tsp
Eggs - 4 whole eggs (add in one at a time)
Bread flour - 50g
Cake flour - 50g (also known as low gluten flour)
Glutinous rice flour - 20g
Toppings:
Icing sugar - a bowl
Cinnamon powder, optional - a small dish
Methods:
1. In a cooking pot, add in water, milk, vegetable cooking oil, and turn on LOW heat. Add in sugar and salt. Keep stirring to mix well and cook until it boils.
2. In a mixing bowl, add bread flour, cake flour, and glutinous rice flour. Mix well. Slowly sift flour mixture into the cooking pot and keep stirring and cook until it is transparent on LOW heat.
3. Transfer the dough to an electric stand mixer or handheld mixer and mix until it becomes a smooth dough and cool to the touch. This will avoid cooking the eggs when added later.
Optional to mix manually by hand with four chopsticks or a whisk.
4. Add one egg to the stand mixer and mix until well incorporated. Continue with the remaining three eggs. Adding in ONE at a time and mix until smooth, fluffy, and has lots of air bubbles.
5. Prepare a plate covered with a paper towel for soaking up excess oil. Set aside.
6. In a large bowl, add in icing sugar, cinnamon powder, and mix well. This is to sprinkle on the puffs when fried. Set aside.
7. Heat up a wok, add enough oil for deep frying on LOW heat. Scoop a spoonful of batter, smooth batter with another spoon, and drop it in the hot oil. Optional to use oiled ice cream scoop to create a ball shape.
8. Fry until the puffs turn golden brown on both sides and float to the top. Transfer puffs to paper towel to soak up excess oil. Return the fried puffs back to the wok and fry again the SECOND time until they split open with honeycomb texture inside.
9. Transfer to paper towel to soak up excess oil. Sprinkle icing sugar/cinnamon powder mixture on top. Serve.

材料:

📌雞脾肉切大塊

📌枝豆或青豆
📌魷魚切圈

珠米或絲苗米.不用洗因會
洗走表面的電粉質和粘性)
調味料:

用水浸下才會出味)

📌白酒(隨意可以不加)
1. 加橄欖油入熱鑊中,首先爆香洋葱. 同隻鑊的另一邊煎香一面的雞肉至金黃先才可以反轉另一面煎. 爆香一邊雞肉後加入些鹽,香葉和黑胡椒粉
2. 加入蒜頭爆香至雞肉兩面都至金黃色便可炒勻. 另加入蕃茄粒再炒勻, 再加入葡國臘腸粒,炒香再加紅甜椒粒, 炒幾下先加入蕃茄膏繼續炒下加入魷魚再炒幾下然後加入龍蝦湯及浸了水的蕃紅花炒勻
3. 放入沒有冼的生米以十字形灑在(2)上面慢慢將米按入湯中便會均勻分佈再加入2匙鹽及1茶匙甜椒粉煮一陣⚠️注意不用撈勻住
4. 加入黑橄欖粒入(3), 蓋上鑊蓋, 轉中火繼續煮十分鐘(不用全程用猛火). 中途煮了5分鐘左右後加入枝豆上蓋
5. 落完枝豆2分鐘後放青口入飯面後上蓋, 過1-2分鐘後把蝦和花哈平均放在飯面. 再灑入蔥頭,紅長椒條, 紅椒粒蓋上鑊蓋轉細火煮多3分鐘左右或至收曬水. 西班牙海鮮飯完成👏🏻😋

Seafood Paella

Ingredients:
Rice - of your choice about 2 ½ cups (450ml) (uncooked and unwashed to retain its outer starch for sticky texture when cooked)
Chicken thighs/legs - chopped
Portuguese sausage - sliced (optional to replace with Italian salami or any sausage of your choice for meat flavor)
White onion - chopped
Garlic - chopped
Cuttlefish - sliced (must be added first with uncooked rice to bring out the seafood aroma)
Mussels - (to be added last)
Shrimps - (to be added last)
Clams - (to be added last)
Tomato - diced
Red bell pepper - diced and sliced
Edamame - (or regular green peas)
Seasonings:
Olive oil - (MUST use olive oil)
Salt
Black pepper
Bay leaf
Tomato paste
Lobster stock - (or replace with chicken stock or just plain water is good enough)
Saffron Threads - a pinch (must use) (soak in a half small bowl of water to bring out the aroma)
Paprika - about 1 tsp (must use)
Black olives - sliced
Shallots - sliced
Red long chili - diced
White wine - optional
Methods:
1. In a heated wok, add in olive oil, onion, and chicken pieces. Add salt, black pepper, and bay leaf to the chicken, fry until golden brown and fragrant, then flip to the other side. Avoid moving the chicken too much when frying.
2. Add in garlic, tomato, Portuguese sausage slices, diced red bell pepper, tomato paste, cuttlefish, and stir fry until fragrant. Add in lobster stock to cover all ingredients and pour in saffron threads water, including the saffron threads, and mix well.
3. Add in uncooked rice by pouring in the wok in a cross design. Using a spatula, spread uncooked rice evenly around the wok. DO NOT mix. Sprinkle in salt and paprika to taste. Add in black olives, edamame, cover wok with lid, and cook on MEDIUM heat for 10 minutes.
4. After 10 minutes, add the mussels to the wok by sticking into the rice. Arrange the shrimps, and clams on top of the rice, sprinkle in shallots, red long chili, red bell peppers slices, cover lid, and cook for further 3 minutes on LOW heat or until all liquid has absorbed. Serve.

材料
📌 無鹽牛油 50克
📌 白色棉花糖 150克
📌 紅莓乾 50克
📌 開心果 70克
📌 奶粉 100克
📌 食用米紙 適量
做法
1. 牛油落鑊,用細火煮溶,之後放入棉花糖,慢慢煮溶,直至成糖漿。
2. 放入奶粉攪均,之後熄火。
3. 倒入開心果,紅梅乾,再攪均。
4. 準備平底長方形鐵盤,鋪上食用米紙,之後倒入步驟3已攪均的棉花糖漿,再用刮刀壓平,之後利用刮刀整成長方形,高度按自己喜歡,之後再推向盤邊,令長方形形狀更出。之後放入雪櫃冷藏大約15-20分鐘。
5. 取出已雪凍的鳥結糖,切條,再切成長方形粒狀,上碟,即成。(或者可以用食用米紙包成糖果)

Ingredients:
Unsalted Butter - 50g
Marshmallows - 150g
Milk powder - 100g
Pistachio - 70g
Dried cranberries - 50g
Edible glutinous/sticky rice paper
Methods:
1. In a heated pan, add in butter and melt it completely on LOW heat.
2. Add in marshmallows and melt them completely. TURN OFF heat.
3. Add in milk powder, pistachio, dried cranberries, and mix well.
4. Transfer to a tray lined with parchment paper. Flatten it smooth, and freeze it. Once cooled, cut into nougat sizes, and wrap each one with edible glutinous rice paper. Serve.

薑粒 大約1湯羮
豆腐 1磚
蟹粉 3湯羹
上湯 2罐
粟粉 2茶匙
陳醋 1湯羹
麻油 1茶匙
蔥花 小許
紅蘿蔔半個
做法:
1. 紅蘿蔔用匙刮成蓉
2. 鑊燒至微熱下油(大約兩湯匙),倒入紅蘿蔔茸,略炒,加入姜茸,繼續用慢火炒香
3. 加入蟹粉,再炒一會,然後倒入上湯(留少許稍後開粟粉水用),此時可調高火力。
4. 豆腐切大粒,加入煲內,再加少許胡椒粉,陳醋,麻油拌勻。
5. 粟粉用預留的上湯開成粉漿,加入煲內,倒入時要輕輕攪拌。湯滾後加入蔥花,關火即成。
*如買不到蟹粉,可以不用。可加少許菇粉增加香味。

Chicken stock
Tofu - (pat very dry with paper towel and cut into cubes)
Edamame
Green onion - shredded
White pepper - to taste
Chinese mature vinegar - to taste
Sesame oil - to taste
Corn starch and water - to thicken soup
Egg white
Methods:
1. In a clay pot, add in oil and carrot bits. Cook on low heat until you get the consistency and appearance of crab paste. Add in minced ginger, Shanghai hairy crab paste, chicken stock, and tofu cubes.
2. Add in white pepper, Chinese mature vinegar, and sesame oil to taste. Stir in cornstarch and water mixture to thicken soup.
3. Sprinkle in edamame, green onion, and add in egg white. Serve.

銅、木材等原物料持續大漲。在熱絡房市支撐下,木材價格周一漲停,目前達到每千板呎 1326.70 美元的歷史新高,是一年前的四倍以上,木材和營建 ETF 大漲。銅價觸及 7 年高點,即將挑戰 2 月觸及的每噸 9617 美元十年高點。

美國 10 年期公債殖利率略為回升,Bleakley 諮詢集團資訊長 Peter Boockvar 說,接下來的殖利率走勢和歐洲和歐洲央行 (ECB) 密切相關,德國 10 年公債殖利率 (已為負值) 周一跌到至少 13 個月來最低,市場也觀望歐洲央行 (ECB) 可能談論縮減緊急購債計畫。

一斤茄子
三粒蒜頭拍鬆切碎
適量水
一湯匙辣豆板醬
一茶匙雞粉
一湯匙鎮江醋
一茶匙薑蓉
兩粒紅葱頭切碎
適量葱
幾片尖紅椒
一茶匙生粉加兩湯匙水, 用來埋獻
Ingredients:
250g minced pork
600g aubergine
3 cloves of chopped garlic
water
1 tbsp spicy bean sauce
1 tsp chicken powder
1 tbsp Chinkiang vinegar
1 tsp chopped ginger
2 chopped shallots
some finely chopped spring onion
some sliced red chilli
1 tsp corn starch in 2 tbsp water for thickening the sauce
醃豬肉調味料:
生抽兩茶匙
一茶匙老抽
少許五香粉
一茶匙生粉(太白粉)用一茶匙水溝勻
一湯匙蝦米 (洗乾浸泡去腸)
半茶匙麻油
少許黑胡椒
Condiments to marinade the pork:
2 tsp soy sauce
1 tsp dark soy sauce
some five spice powder
1 tsp potato starch in 1 tsp water
1 tbsp dried shrimp (washed, rehydrated and deveined)
1/2 tsp sesame oil
some black pepper

氣炸鍋燒雞:
材料:
急凍雞900克1隻
處理:
1. 雞連膠袋用清水解凍。
2. 清除內臟。
3. 用鹽乸雞15分鐘,去除雪味、腥味,及加入鹹味。
4. 沖洗乾淨,擎乾水。
5. 將雞調味:
●1/3茶匙鹽
●1茶匙蒜蓉
●1湯匙黑椒
放入雞殼內,再用少量鹽塗在雞的表面。
6. 用蒸架承起雞,雪6小時。
烹調:
1. 放氣炸鍋紙在氣炸鍋內。
1. 用80度將雞風乾20分鐘。
2. 20分鐘後,反轉隻雞,80度風乾另一面10分鐘。
3. 預備上皮水:
●紅醋1湯匙
●生抽1湯匙
●麥芽糖1湯匙
●10毫升水
攪勻。
5. 雞已氣炸了30分鐘。
4. 掃上紅醋及生抽上色2分鐘,再手掃上紅醋及生抽,然後掃上麥芽糖水。
5. 首先燒雞胸部分,用150度氣炸15分鐘。
6. 預備1張錫紙。
7. 15分鐘後,檢查一下情況。
8. 用180度,氣炸5分鐘。
9. 向前移一移位,用180度氣炸2分鐘。
10. 向後移一移位,用180度氣炸2分鐘。
11. 反轉雞,倒出裏面的雞油。
12. 最後一轉,用180度氣炸10分鐘。
13. 最後3分鐘,檢查一下,見到燒焦的地方,用錫紙遮一遮住,氣炸多3分鐘。
14. 完成,上碟。
Airfrying chicken:
Ingredients:
900g frozen 1 No.
chicken
Preparation:
1. Defrost the chicken with packaging with tap water.
2. Remove the intestines.
3. Season with salt for 15 minutes to remove the unpleasant smells, and add some salty taste.
4. Rinse the chicken thoroughly. Hang dry.
5. Season the chicken:
●1/3 tsp salt
●1 tsp garlic sauce
●1 tbsp Black pepper
To be put inside the chicken, and put some salt on the surface of chicken.
6. Put the chicken on a steam rack, refrigerate for 6 hours.
Steps:
1. Put a sheet of airfrying paper in the airfryer.
1. Airfry the chicken at 80 C for 20 minutes in order to make it dry.
2. Flip over the chicken after 20 minutes, airfry the other side of chicken at 80 C for another 10 minutes.
3. Prepare:
●red vinegar 1 tbsp
●light soya sauce
1 tbsp
●Maltese 1 tbsp
●10no water
Mix well.
5. The chicken has been airfried for 30 minutes.
4. Brush red vinegar and light soya sauce and wait for 2 minutes, then brush red vinegar and light soya sauce again, brush maltose syrup on top and get ready to airfry.
5. Airfry chicken breast at 150 C for 15 minutes first.
6. Prepare an aluminium foil.
7. Check the status after 15 minutes.
8. Airfry at 180 C for 5 minutes.
9. Move the chicken to the right a little bit, airfry at 180 C for 2 minutes.
10. Move the chicken to the left a little bit, airfry at 180 C for 2 minutes.
11. Flip over the chicken, release the oil out from the body of chicken.
12. Airfry at 180 C for 10 minutes in the last round.
13. Check if the chicken, cover up with an aluminium foil where is overcooked in the last 3 minutes. Airfry 3 minutes more.
14. Complete, serve.

氣炸鍋牛油雞翼:
材料:
雞翼2磅
蒜蓉
牛油
處理:
1. 雞翼用清水解凍。
2. 倒去水分。
3. 加入1/2茶匙鹽乸10分鐘,去除雪味、雞腥味,及加入少許鹹味。
4. 沖洗乾淨,擎乾水。
5. 用廚紙索乾水。
6. 雞翼調味:
●蒜蓉1湯匙
●鮑魚汁1湯匙
醃10分鐘或以上。
烹調:
1. 用180度預熱氣炸鍋3分鐘。
2. 整齊放雞翼入氣炸鍋。
3. 第一轉,用200度氣炸10分鐘。
4. 預備:
牛油20克放碗中,微波爐每10秒波一波,重覆做4次。
5. 放1/8茶匙鹽及1湯匙蒜蓉落牛油攪勻。
6. 雞翼已經氣炸10分鐘。
7. 將牛油及蒜蓉鋪在雞翼
上。
8. 用180度氣炸5分鐘。
9. 用200度氣炸多5分鐘。
10. 全程炸了20分鐘,上碟,放檸檬葉伴碟。

Ingredients:
Chicken wings 2 lbs
Garlic sauce
Butter
Preparation:
1. Defrost the chicken wings by tap water.
2. Pour out the water.
3. Season the chicken wings with 1/2 tsp salt for 10 minutes to remove the unpleasant smells and add some salty tastes in the wings.
4. Rinse thoroughly and hang dry.
5. Dry the wings with kitchen towel.
6. Season the wings:
●garlic sauce 1 tbsp
●abalone sauce 1 tbsp
Season for 10 minutes or more.
Steps:
1. Preheat airfryer at 180 C for 3 minutes.
2. Put chicken wings in airfryer one by one.
3. Airfry at 200 C for 10 minutes in first round.
4. Prepare:
Put 20g butter in a bowl, microwave it for every 10 seconds, repeat 4 times.
5. Mix 1/8 tsp salt and 1 tbsp garlic sauce with the butter.
6. Chicken wings have been airfried for 10 minutes.
7. Put butter and garlic sauce on top of wings.
8. Airfry at 180 C for 5 minutes.
9. Airfry at 200 C for 5 minutes more.
10. Already airfried totally 20 minutes. Put coriander on top. Serve.
