This is a traditional Taiwanese Cold Noodle dish. It contains various forms of fresh veggies and wheat noodles which we mix all together with a rich sesame dressing (made from sesame paste, soy sauce, sugar, vinegar and minced garlic).
Going back to my school days, I often tried to get this yummy meal for my breakfast or lunch. Although it was dirt cheap (around $1 AUD per box), it was so hard to obtain as every student was trying to request it during the morning or lunch break from a tiny school canteen shop. And trust me, when I say "so hard", I mean it. Just try to imagine there are 3000+ students as hungry as you are and we all try to get this meal first from a 10 square meter sized shop, it felt like Boxing Day Sales all over again.
And now, I am just so glad I don't have to go through those brutal moments to get to it again, I just made myself a big healthy plate of this tasty but yet simple meal instead. And guess what, it is still so delicious, just as I remembered from back in those memorable school times ...

涼麵，在我的青春期扮演了一個極渺小、卻不可獲缺的角色; 我的早餐、午餐通常是靠它解決。別看它小小一盒$15的涼麵，它還真是得來不易，常要在那個20坪不到，但卻擠了幾千個學生的合作社裡，來個不是你買到、就是我必須餓肚子的戲碼。
如果你覺得當今的那些當紅的直播主，有讓大家失心瘋捧著大把鈔票去得到她的愛的能力，那你應該是沒有到過搶涼麵的現場。我會不會被追殺啊，居然把涼麵跟網紅相提並論。😂
印象中，它真的油到讓我覺得當時全身有20%脂肪都是拜它所賜，害我從畢業到現在20幾年了，都還沒有回去探望過它。
但人總是在最莫名其妙的時候，想起人生中某段回憶，而今天就突然超級無敵想吃涼麵。就醬子，自己黑白舞地弄出一盤清爽級的。
姐跟你說，這再配上一碗熱騰騰、昆布柴魚熬的紫菜蛋花湯，突然覺得好幸運，我不用再去擠那間小小的合作社了。
［寶島吃很大系列14］民國四、五十年代，臺灣物資缺乏，蔡師從小學畢業後即跟隨父親從事囍事辦桌做外燴，生活相當辛苦，從十七歲時經朋友介紹進入新天地廚藝界當學徒，隨著國民所得的增加、生活品質的提昇，有感中式餐飲博大精深以食為天，於民國84年與志同道合之好友集資在清水創立福宴海鮮樓佔地300坪，並於民國87年開設大甲分店佔地800坪。
一路走來，秉持著提供新鮮美味、物超所值的海鮮料理為理念，謹記以前老師傅之教誨，廚師舞勺弄鏟光有花招，不為實際。傳統的經營型態亦需跟隨時代潮流調整，秉持餐飲永續經營決心，於民國96年10月喬遷新址擴大營業改以「福宴國際創意美食餐廳」相見，佔地廣達1500坪，可容納至185桌的宴會場地堪稱海線之最，安全無柱並挑高九米的寬闊視野，上億精緻典雅裝璜設計，貼心的硬體設備，千萬雷射燈光音響水準，專業的服務團隊陣容，不斷推陳出新的多元創意料理，合理公道的平實價位來經營這個王國。

Starting from the impoverished 1950s, Chef TSAI followed his father in wedding caterings after primary school. Through years of hard working, he was recommended by a friend as an apprentice in cooking world at 17 years old.
With the economic booming, GDP increasing, and better life quality in Taiwan, eating out at restaurants has become one of the most important events in everyone's life. In 1995, to widely introduce the great Chinese cuisine and food culture, Chef TSAI and his good friends with the same ambition co-founded the 10800-square-foot Full Yuan Sea Food Restaurant at Ching-suei township. The 28800-square-foot branch restaurant, Full Yuan (Da-ja) Sea Food Restaurant, was opened at Da-ja township in 1998.
For decades, supplying the freshest and delicious seafood at the best price has always been the motto of Chef TSAI.
On one hand, he keeps his mentor's words in mind, always focusing on the authentic food instead of cooking tricks; on the other hand, knowing that it’s necessary to adjust business style according to modern business trend, with the determination to pursue perpetual operation and the intention to expand his business greatly, in 2007, Full Yuan Sea Food Restaurant, was renamed as Full Yuan International Creative Delicious Food (福宴), and moved to the present spacious 54000-square-foot location.
Being the greatest and the most magnificent restaurant in middle-western Taiwan seashore, "FULL YUAN" is proud of her spacious dinning environment, 9-meter high columnless structure, 185-table banquet hall, elegant decoration costing hundreds of millions NT dollars, considerate designs in details, and tens of millions lighting and sound equipments. In addition, "FULL YUAN" earns the trust of customers by her creative recipes, Internationalized assorted creative delicacies, reasonable prices, and professional service team as well.
