以前曾經拍攝麥芽糖，用手機拍攝畫質不好，於是重新拍攝一支。今次以小麥和長糯米製作。
如果發酵的定義是「透過微生物或酶的作用使有機物分解的過程」，遵循古法製作的麥芽糖，也可列入發酵食品的行列。以小麥和糯米做為原料，利用小麥的酵素釋放糯米中的澱粉糖份，再熬煮成濃稠膏狀。
麥芽糖是一種低甜度的澱粉糖，與水溶解後化作葡萄糖，甜度僅約蔗糖的40%，熱量低，容易消化。取代蔗糖，作為烘焙原料，可降低製成品的甜膩感，不死甜。烹調菜餚，如滷豬腳、燒肉片、炒菜，麥芽糖中的酵酶還可軟化肉質，增添菜餚的味覺層次，同時可減少其他調味料的使用。
麥芽糖還有食療功效， 中醫認為麥芽糖性溫味甘，有養顏、補脾益氣、潤肺止咳之效。
