Oktoberfest is coming up again everyone! Time to take another look at a favourite we all love… Beer Roasted Pork Knuckles! The steps are simple, but it might take a bit of time to make. Fret not however, as patience pays off for you and your mates! We added potatoes and apples to roast with the pork, and pour in a good amount of dark beer for that taste we love.
When paired with sauerkraut, this makes a lovely dish to feast with your beers. Cheers!

Only this time round, to make it simple, Roland omitted the use of fermented beancurd because some of you cannot get hold of it.

Ingredients:
Serves 3 or 4
450g of pork belly
Five spice marinade - see below
0.5 teaspoon of baking soda
3.5 teaspoons of coarse sea salt
Some cooking oil
Five Spice Marinade
-------
4 tablespoons of Chinese white rice wine
2 teaspoons of salt
1.5 teaspoons of five spice powder
A few dashes of white pepper
Bake at 180C for 25 mins
Followed by 200C for 8 mins

The name comes from the Cantonese, a Chinese dialect. If you run out of ideas on what to cook for lunch or dinner, just cook this Chinese omelette & half your meal is done - simple.

I’ve seen a lot of Egg Foo Young served with gravy but in Singapore, we usually just eat it dry. and it's equally tasty. Maybe I'm just biased because I looooooove fried eggs :)))

Ingredients:
Serves 4 pax
Omelette
------
6 pcs of eggs (use 4 eggs if your eggs are bigger)
1.5 teaspoon of light soy sauce
1 teaspoon of Chinese cooking wine (Shaoxing Huatiao wine)
A few dashes of white pepper
15g of carrot - julienne
50g of deshelled prawns (deveined too)
50g of char siew or char siu (bbq pork)
Some chopped spring onion
Gravy
------
1 cup of water
1 teaspoon of concentrated chicken stock (or chicken bullion cube/ chicken powder/ chicken stock. If you're using chicken stock, use 1 cup and omit water)
0.5 teaspoon of sugar
0.5 teaspoon of premium dark soy sauce
A pinch of salt (do add more to taste if you like)
A few dashes of white pepper
Some cornstarch solution (thicken sauce per your liking)
1 teaspoon of sesame oil (remember to off the fire before adding)
Pour the gravy over egg and enjoy your dish!

- 6 eggs
- 50g of char siu - diced (if you like to make char siew from scratch, here’s the recipe: https://youtu.be/na40VFx4Jhw)
- 5 pieces of prawns - cut into chunks
- half a carrot - shredded
- 2 dried mushrooms - cut thinly into strips
- 2 stalks of spring onion - cut into about inch side - only use the green section of the spring onion
- 3 teaspoons of Chinese cooking wine aka Shaoxing Huatiao wine
- 3 teaspoons of light soya sauce
- 1 red onion - half & cut into small long strips
- pepper to taste
