龍蝦水波蛋煮法:
配料Recipe ingredients
5盎司規格的龍蝦肉(150克)5 oz. (150 g) lobster meat
2個水波蛋2 poached eggs
1/2杯(125ml)市售或自製荷蘭汁½ cup (125 mL) commercial or homemade hollandaise sauce
2個蛋黃2 egg yolks
1茶匙(15ml)檸檬汁1 Tbsp. (15 mL) lemon juice
1茶匙(15ml)冷水1 Tbsp. (15 mL) cold water
1/2杯(125ml)半咸黃油,融化後冷卻½ cup (125 mL) half-salted butter, melted and cooled
2片吐司,3-4英寸(8-9厘米)2 slices of toasted bread 3 – 4 in. (8 – 9 cm)
4片Pied de Vent奶酪(Îles de la Madeleine)或Riopelle de l'Isle奶酪(Île aux Grues)
製作過程How to make
自製荷蘭汁 ,蛋黃2個打散後,加入檸檬汁和水,在雙層蒸鍋隔水(低溫加熱)打至起泡。 去掉蒸鍋的頂層,將融化後的黃油緩緩注入蛋液中,持續攪拌。
hollandaise sauce into 2 egg yolks after the break up, add lemon juice and water in a double boiler riser (low heat) and beat until foaming.
Steamer to remove the top layer of the melted butter slowly pour into the egg mixture, stirring continuously.
在奶油烤菜盤中放入一片吐司,Add a piece of toast with grilled vegetables in a creamy dish,
然後將龍蝦肉和水波蛋擺到吐司上then placed the lobster meat and eggs on toast,
然後澆適量荷蘭汁,then pour the right amount of hollandaise sauce,
將奶酪放在頂部。the cheese on top.
(焗爐)加熱30秒鐘,(Oven) for 30 seconds,
使奶酪融化、變至棕色。so that the cheese melts, turning to brown color.
配上清雅的含羞草,Coupled with elegant mimosa,
開始享受優雅、豐盛的早餐。began to enjoy the elegant, hearty breakfast.
