「大笨鐘前最漫長的一小時」1 Hour at Big Ben - ビッグ・ベンの1時間
一大早來到大笨鐘前,也許因為剛去完義大利,發現原來短短日子也會讓人想念倫敦的一切,加上這天清晨掛起一小片的迷霧,讓人想在這裡多待一下,於是就在西敏橋上待了整整一個小時及把這小時濃縮地紀錄下來。這個地方也許對很多人來說只是一個觀光聖地,但對我自己來說,它是我兩年多前在英國第一天成為攝影師的開始,當天就在橋的這端,帶著客人來到拍攝畫面,那時候還會充滿緊張,心裡盤算很多很多到底等下怎樣拍…怎樣指導人家好…很慌很害怕,曾經的我只會愛拍小動物,拍大風景,但在這裡,我開始需要跟不同的人交流,整個空間不再只有我自己,是需要告訴人家怎樣配合自己,不管這地方看得有多膩,現在來到已經不再只為了看著鐘樓,而是為了感受在這裡曾經流下汗水的歲月。

A wild morning here I came to Big Ben once again after the long journey from Italy. Suddenly I realised London is truly a place you would miss a lot even you just left it for a while. A little misty morning we had around the city, just a little peace and quiet you would want to enjoy staying along the River Thames. So I felt laid-back to stay along the Westminster Bridge and captured the precious 1-hour time and condensed it up to be a short clip for memory. Most of the people would take Big Ben as a famous tourism attraction, but for me this is a place where I restarted my life and where the first day I became a photographer 2 years ago, the day I took the clients out on this spot, and started to photoshoot. I got so tensed and stressed up in my mind kept thinking how I should direct the clients and how to get the photos nicely done. As I was just a very keen designer to capture little animals and big landscape before, here is where I started to learn how to communicate with people and direct them how to look beautifully in my photography. This is the place I got taught the most and inspired the most. Nowadays I don't just come to admire the Big Ben outwardly anymore, but I come to feel and reminisce the old memories I put my heart, tears and sweat in this city.

#2019聖誕節日曆精選 / Best Advent Calendars 2019 (for English, please click "see more")
大家還記得幾個禮拜前,我曾經分享過今年巴黎的聖誕節蛋糕嗎?聖誕節蛋糕是聖誕節餐桌上的高潮,但是在聖誕節前呢?你知道還有讓你每天都有驚喜、#快樂倒數聖誕節來臨的「聖誕節日曆」嗎?
聖誕節日曆又稱「#降臨節日曆」(Calendrier de l’Avent(法) / Advent Calendar(英)),最早出現在19世紀的德國路德教派。為了紀錄耶穌降臨前的日子,當時的人們會每天用粉筆在門上畫線、或每天點一支新蠟燭、掛上新的宗教畫等。後來演變為有教育意義的聖誕節日曆,例如在印有聖徒故事的背景圖上標出 24 個日期、每個日期縫上小口袋,每天打開一個,直到 12 月 24 日拼成完整的圖像;或是在上色的木盒中裝上 24 個小禮物、寫上小故事的一部份、猜一個謎語等。到了現代,不管是美妝、玩具、或是巧克力、糖果、甜點品牌等,都會製作精美無比的聖誕節日曆,以往家長會買給小朋友、現在也是很多大人會購買、搜集的商品,是歐洲聖誕季的熱門活動。
可以想像因為要擺上幾乎一整個月,所以如果是食品品牌出的聖誕節日曆,會選一些比較能夠久放的產品,這也是為什麼聖誕節日曆大部分是巧克力與茶品牌的天下,畢竟巧克力、牛軋糖、焦糖、各種糖果、小餅乾、茶葉等,都比甜點更適合小包裝、長時間常溫存放。如同聖誕節蛋糕是甜點主廚們的競技場,聖誕節日曆也是巧克力品牌廝殺的戰場之一。每個品牌都使出渾身解數,推出讓小朋友們心癢難耐、大人們也忍不住心潮澎湃的作品。

An Advent calendar is a special calendar that we use to count down the days of Advent (Latin: coming) in anticipation of Christmas. Ideally it should start from the first Sunday of Advent, which normally falls between 27th November and 3rd December, but for the reason of convenience, most Advent calendars nowadays start from 1st December and lasts 24 days till Christmas Eve. The Advent calendar was first used by German Lutherans in the 19th and 20th centuries. Traditional Advent calendars features Nativity scenes of Jesus, Saint Nicolas, or religious artworks. They come in different forms, such as fabric pockets on a background of a religious painting that reveals the entirety after 24 days, or painted wooden boxes with cubby holes filled with small objects to discover. Advent calendars in the present day have become a wonderful gift for children and adults alike each year. Brands of perfumes, makeup, toys, chocolate and confectionery, etc. would propose well-designed Advent calendars enclosing little surprises made of their signature products or featured items.
With regard to confectioneries, it is no surprise that those who propose Advent calendars are mostly chocolatiers, confiseries, or tea makers, as bonbons, chocolates, caramels, teas, etc. could conserve longer than fresh pastries. 【成立騎士橋出版社| Founding the Knightsbridge Publications】
大家好。開這個專頁的目的當然不是為了要競選或者作個人崇拜之類,而是為了達成我所成立的騎士橋出版社的目的:分享關於香港、台灣以及中國的資訊給自由世界的人們。
說到目的,就不得不講一下成立騎士橋出版社的原因以及背景。
之所以成立出版社,主要是因為在亞非學院修讀碩士的這段時間以來,我發覺生活在西方自由社會的人們對於中國、香港以及台灣的認識相當匱乏。他們當然不是缺乏資訊,而是他們所接收到的資訊,尤其是關於中國的,是非常片面而且偏頗,往往是從官方的視角出發。對香港以及台灣的認識亦然,西方人士往往對她們的歷史背景無深入認識,致令他們對於香港、台灣以及中國問題的看法與我們普遍主流的看法繞有落差。也有些人,因為內心深處強烈的反美反帝傾向,所以他們的就好似鐘擺一樣,盪去了另一邊,對於遙遠的中國有種另類的幻想。
如此種種,加上每每念及因為當年基辛格的誤判導致全球人類集體炒車的事,就會心有戚戚,希望可以避免將來同類事件。如是者,推動關於香港、台灣以及中國的知識傳播的願景就越發強烈。於是在完成學期末的功課時,我就在英國登記成為自僱人士,並將業務取名為騎士橋出版社,希望可以推動這一方面的工作。
取名騎士橋出版社的原因有二。第一是因為我之前住附近。哈哈,在英國唸書時,有時候會散散步,坐坐公園。走著走著,就會走到騎士橋。第一次見到這個地方,是我第一次踏足英國的時候。當時是2017年,內心非常不安。可是當我2018年重新踏足這裡,心中的不安全然退去,只剩下對於自由的渴望。因此,騎士橋或甚至英國,可以算是對我意義重大的地方。
第二是因為騎士橋和香港島是香港貴族鄧蓮如女男爵的封地,而鄧男爵曾經服務的太古洋行、港英行政局和立法局又與香港息息相關,因此就選擇了騎士橋作為出版社的名稱。

Hi folks, this is Billy Fung. The reason for establishing this Facebook/ Twitter Page is definitely by no means for any forthcoming electoral campaign and personality cult. This page serves as a platform to share academic articles and other information pertaining to Hong Kong, Taiwan and People’s Republic of China (China hereafter) bilingually to the free world. And this is also the rationale behind the establishment of Knightsbridge Publications - to disillusion people living in the free world from the Chinese official rhetoric, which may be empty, biased and incomprehensible in understanding China, Hong Kong and Taiwan.
I feel obliged to share knowledge about the states in the greater China region due to my experience at the School of Oriental and African Studies, University of London. During my study in UK, I came to realise that the masses are generally lacking understanding in Hong Kong, Taiwan and China. The reasons are manifold and amongst them, I reckon that insufficient source of information is the primary one.
Since some of them heavily rely on state media in China, ranging from New China News Agency to CCTV, they may not be able to know the truth. As suggested by Sir Alexander Grantham in 1949* (Hong Kong’s Governor 1947-1957), these media are simply the “publicity organs of the party”. Besides, some of them may also have difficulties in accessing the non-English sources. Therefore, I would like to fill up such vacuum and offer the public with relevant information academically and accurately.
Afterall, understanding Hong Kong, Taiwan and China is vitally important nowadays as we should categorically avoid repeating the same old disastrous misjudgment made by our predecessors in the last century.
