This is for the MEAT lovers. Char Siew can really be legendary when done well, but the best part of it is that cooking it is REALLY simple too!
(No we're not talking about using bottled sauces nahhh)
Us MeatMen wanted to do a dish that went well with our beer-guzzling ways, so we set out to make this happen... but what happened is that we had to redo this for THREE times cuz we ate it all up before shooting it. Oops. Yes it's that's awesome when you marinate it with the sauces and glaze it with honey.. YUM.
So let's stop the talking and start the drinking, and bring the beer!

On a Sunday morning not too long ago, we were just shooting some random shots of cereals and milk for fun.
What started as an excuse for the guys to come together to drink and eat, to hang out while cooking with a portable stove on a bench in the balcony, grew serious as the number of encouraging comments and views also grew on Facebook and Youtube.
“Wouldn’t it be nice if we had a proper kitchen studio to shoot our cooking videos?”
After the last few months of hard work, we are grateful for how far we have come and am proud to share with you, the new Meatmen kitchen!

Ingredients:
Serves 4 - 5
Marinating the fish fillet
------
300g Toman fish fillet
Half an egg white
2 teaspoons of fresh ginger juice
3 teaspoons of cornflour
0.5 teaspoon of salt
0.5 teaspoon of chicken stock powder
A few dashes of grounded white pepper
Blanching the marinated fish
------------
A pan of water (sufficient to scald the fish fillet)
2 slices of ginger
1 stalk of spring onion
Marinated fish fillet
Putting the dish together
----------
1 tablespoon of cooking
2 thumb size ginger - sliced
3 cloves of garlic - minced
1 cup of water
1.5 tablespoons of oyster sauce
0.5 teaspoon of chicken stock powder
0.5 teaspoon of sugar
0.5 teaspoon of salt
Add blanched fish fillet
Thicken sauce with some cornstarch solution
4 stalks of spring onion - cut into 1 inch length
1.5 teaspoons of sesame oil
1 tablespoon of Chinese cooking wine (Shaoxing Huatiao wine)

Seeing how there are always queues at Fish beehoon stalls. We definitely had to try cooking this dish!
We added a tablespoon of XO brandy in the fish seasoning (alcoholics rejoice!) for that unique fragrance. The battered fish slices are then fried to a crispy perfection. Our soup base is made from ikan bilis base and we finish it off with a good splash of evaporated milk for those who love your soup creamy!
