Madness Monday as I spent the whole day packing my new house. But I manage to squeeze some time to prepare dinner for the husband. Here's my recipe on Stir Fry Tomato Egg. 🍳 I need to learn how to multitask, it's so difficult to cook properly with one hand while taking video with another.
For Tomato:
3 medium tomato, very ripe, cut to wedges
1 tbsp oil
50cc soup stock
1 tsp Shao Shing rice wine
2 tsp sugar
3 tbsp ketchup
1- 2 tbsp water
40g scallions
1 tsp cornstarch mixed with water
For Egg:
5 eggs
1/4 tsp salt
2 tbsp oil
Method:
1. Heat wok over medium heat until it starts smoking, add oil, scallion and tomatoes. Stir fry for 2 minutes or until the tomato starts to brown in spots. Add ketchup, stock, wine, sugar and bring to boil. Add the cornstarch water till a thick consistency. Set aside and rinse the wok clean and heat till dry.
2. Whisk the eggs and salt together until just mixed. Heat wok over medium heat until just smoking and add 2 tbsp oil. Slide in the egg mixture and use a spatula to mix quickly. Once the eggs is half cooked, toss the cooked tomatoes back in and give the whole thing a quick fold. This should take no more than 10 secs and then turn off the heat. Sprinkle on some chopped spring onion and serve.
