When a young man started throwing a small piece of rock towards the police, they would raise their guns and aim at his head before opening fire.
There were sounds of gunfire on all four corners of the streets, yet the youngsters have nothing but umbrellas and shields made from cardboard paper as protection. They knew that throwing a piece of rock would get them a bullet that could kill them in return, but they still had to throw it. They are willing to accept such a giant cost/benefit difference, simply because they wanted to express their last bit of dignity.
A few weeks ago, when the tear gases were first being fired, some of the children were still huddling and crying together. That’s a thing of the past now. They aren’t even afraid of death anymore. They don’t have guns in their pockets, but many youngsters carry letters of wills with them; a will for their parents, a will for their friends, a will for their siblings. They would finish writing the wills before heading out. This was the one and only “preparation” they could do.
Someone would ask them, “Aren’t there anything else that’s worth cherishing more?”
And they would answer with firm determination, “No”.
After a night of fear and chaos, I overheard a youngster at the subway station talking to his mother on the phone, who’s probably demanding him to go home. With teary eyes, he said, “I will not regret this.” I tried hard to prevent my own tears from falling; what was it that made our children so strong, to the point that they won’t even cry in the face of impending death? I heard one of them went to a restaurant the other night and asked if he could borrow the phone charger. The owner asked if he wants to order something to eat and he replied apologetically, “I don’t have money…”The owner almost cried upon hearing it. Some students told me that they have spent their life savings on buying basic protective gear like helmets, eye goggles, and masks. And it’s not just for themselves; they even bought additional gear for others to protect them at the site of protest, so they had no money left for food.
These are kids that still cuddle to their stuffed animals at night as they fall asleep, yet when they wake up the next morning they will have to ready themselves to face guns that aim at their foreheads. All they want is to protect their beloved home, nothing else.

💟"When I started studying Chinese as an undergrad, we had a whole book on Taiwan Today. The first time I actually came to Taiwan was studying Chinese with the State Department. Everybody loves coming here for language, but I wanted to see and do more. That’s what brought me back this time around, as the Deputy Director of the Economic Section. We focus on building up the U.S.-Taiwan economic relationship, which spans across so many different areas that I think are changing the future shape of the world. We are focused on health, cyber issues, digital economy, how do we ensure that technologies are secure, how do we build secure supply chains throughout the Indo-Pacific, and more. Taiwan has such talented people, and so that really inspires me. Taiwan’s people are its greatest asset. For the economy, you really need talented, creative people, and they are here in Taiwan. I have a very eclectic background in investment banking, international development, finance, and so how do I tap into the way I’ve seen financial industries develop to help Taiwan and the U.S. now get venture capital funding for future startups that are really going to change the way that our kids interact with the digital world? Aside from my professional interest in Taiwan, I love nature, I think it’s really important that humans have a connection with nature, and Taiwan provides that. I’ve always wanted to be a bird-watcher but I’m not good at waking up early in the morning to go out looking for birds. 正如早一日接受《BBC》訪問暗示一樣,外交大臣Dominic Raab今日响下議院正式公布無限期暫停移交香港協議,順便禁售所有武器,然後拋咗一句:
"I just say this: the United Kingdom is watching and the whole world is watching."
之但係,奉行首相內閣制嘅英國,始終同美帝總統制有啲唔同,更加唔會有邊個可以一錘定音說了算,政府乜都要响議會宣布,接受議員質詢(民主係好麻煩嘅)。可能因為尋日《BBC》嘅訪問同近期英國政治風向,今日議員嘅焦點已經唔再响移交或者武器問題嗰度(公布咗仲有咩好問?),反而射到去新疆、制裁、整體外交路向咁遠。响咁多個議員當中,最得戚嗰個,可能就係前保守黨領袖Ian Duncan Smith,睇下佢同外交大臣兩個笑得幾奸?
好多人都知Ian Duncan Smith除咗係保守黨元老,亦係現今英國政界最「別有用心」嘅議員領袖(攞住幾十票)。事實上,响英國政府對移交香港安排仲未有聲氣之前,佢已經入咗私人修正案要求修例,取消移交香港協議。今日外交大臣公布之後,佢緊係覺得自己成功爭取即時收回修正案,响提問嗰時仲要加多句自嘲,好得戚咁話自己個修正案應該無搞到Dominic Raab瞓唔著。

Moso Mom has been a big fan of actor Jackie Chan for 40 or so years, so of course we knew about Hong Kong's Dragon's Beard Candy. It's a fine, hand stretched confectionery similar to cotton candy that looks like a dragon's beard.
But this is an imperial court delicacy made by skilled craftsmen, so we didn't think we could make it ourselves.

"We could do that!" we said, and took up the challenge! But while that enthusiasm is good, it ended up looking like it was crushed, and we thought "can we really do this...?", but somehow we managed it.
The kitchen was covered in the most powder of the century....
*Recipe*
1. Color 250ml of water with your favorite shade of food coloring. We put in 2 drops of blue liquid food coloring.
2. Add 500g of granulated sugar, 50g of corn syrup, 1/2 a teaspoon of vinegar and the water to a pan, and bring to a medium heat. Do not mix.
3. Measure the temperature while heating. Halfway through, remove any sugar stuck to the saucepan with a brush soaked in water (so as not to create crystallization). Do not mix.
4. Take the pan off the heat when the candy reaches 133°C. Heating time takes around 20-25 minutes.
5. Pour the candy into a mold. Silicone molds are easier to remove afterwards, and do not create holes when you start to stretch the candy, so a doughnut mold is ideal.
6. While the candy cools off, prepare some cornstarch to use when stretching it. You will use quite a lot of cornstarch, so heat it through so as not to upset your stomach.
Add a large amount of cornstarch (We prepared 300 g. Don't worry, they sold it at the 100 yen shop) to the pan, and dry fry for about 10 minutes without letting it burn. At this point the cornstarch's internal temperature was 98°C. Allow to cool.
7. Take the cooled off candy from 5 out of the mold.
8. Stretch out the candy in 7 while continually sprinkling with the cornstarch from 6. The trick to making beautiful Dragon's Beard candy is to stretch it without variations in size. Handle the candy gently at first (it breaks with a snap) and more boldly as it starts to get thinner (it naturally dangles and stretches, maybe because of body temperature). Is this really advisable?
9. Make it into your desired shape. We made it pretty by winding it around a cone with a lace paper doily.
10. Finished. The artisans' techniques really don't come quickly and easily. We learned a lot. When it's fresh it's a soft and stretchy candy, but after a day it becomes more crunchy. It collapses easily, so handle it carefully.

「誰がやるの?私でしょ!」と挑戦してみました!
と意気込んだはよいものの「ほんとにやれんの...?」と挫けそうになりましたがなんとかできました。
今世紀最大にキッチンが粉だらけになったとさ。
*レシピ*
1.水 250mlに食用色素で好みの色に着色する。青の液体食用色素を2滴入れました。
2.鍋にグラニュー糖 500g、コーンシロップ 50g、酢 小さじ 1/2、1を入れ、中火にかける。かき混ぜない。
3.温度を計りながら加熱する。途中、鍋についた砂糖は水を含ませたハケで落とす(結晶を作らないようにするため)。かき混ぜない。
4.飴が133度になったら鍋を火から下ろす。加熱時間は20分から25分程度です。
5.飴を型に流し込む。シリコン製が後で取り出しやすく、さらに飴を伸ばし始める時の穴を作らずにすむのでドーナツ型が理想です。
6.飴が冷める間に飴を伸ばすときに使うコーンスターチの準備をします。かなりの量のコーンスターチを使うので、お腹こわさないように火を通しておきます。
鍋に大量のコーンスターチ(妄想グルメは300g準備しました。安心してください。100円ショップに売ってました)を入れ、焦がさないように乾煎りします。10分程度です。この時のコーンスターチの内部の温度は98度でした。冷ましておく。
7.冷めた5を型から取り出す。
8.6に7をじゃんじゃんまぶしながら伸ばしていく。太さにバラツキがないように伸ばしていくのが、きれいなリュウノヒゲを作るコツです。飴の扱い、初めは丁寧に(ブッツリと切れてしまいます)、細くなり始めたら大胆に(体温のせいなのか?自然に垂れ下がり伸びてしまいます)。アドバイスになってるかしら。
9.好みの形にする。コーンにレースペーパーを巻いて可愛くしてみました。
10.でけた。職人さんの技はそうそう簡単にうまくいかない痛感。勉強になりました。できたてはふわっと伸びる飴的な食べ物ですが、翌日からは、しゃりっとしたお菓子にヘンゲ。崩れやすいので取扱い注意です。
