This humble rendition of the cheesecake began as one lone New York woman’s quest for a more nutritious, and healthier cheesecake – the same ones that bear the famous city’s name. Using what she studied in macrobiotics, Marcea published a cookbook which contained the “Tofu Cheesecake” recipe. That one recipe eventually sparked a mini-revolution across the city’s restaurants in the 1980s. It was almost forgotten until almost a decade later when a Japanese-American woman named Keiko won hearts and stomachs with her masterpiece, said to have been rated as the top with “no other coming a close second”.
For the base, we go traditional with a firm spread of finely crushed digestive biscuits and melted butter. Now, for a really luscious cheesecake with an exquisite ethereal texture, we combine the thickened cream, fresh Greek yoghurt, rich cream cheese chunks, icing sugar, good full squeeze of lemon, collagen-packed gelatin, and tofu, then make sure we give it a good blend.
In our recipe, we use Vitasoy Organic Sprouted Tofu to achieve the perfect wobbly consistency and creamy smoothness that just rolls off cleanly onto your spoon. It also has 25% more calcium content compared to other tofu brands, and because it’s sprouted it will offset the heaviness by helping with the digestion.

Shrimp (Ebi) Tempura Udon is a very popular Japanese dish. I arranged it for Halloween. Yay! When Udon gets dry, it's gluten gets strong and sticky, so I wrapped it around Tempura in that instant ;D
Fun and easy! Great for party and also for bento to surprise your honey. hehe

Mummy Shrimp (Ebi) Tempura Udon
Difficulty: Easy
Time: 20min
Number of servings: 6
Ingredients:
6 Ebi (shrimp)
60g Nissin Tempura flour
100cc water
vegetable oil for frying
6 Nori sheet (cut the large sheet into 4 squares)
cream cheese
frozen Udon noodles or pre-boiled Udon noodles
sliced cheese and Nori sheet for eyes
Yamasa Konbu Tsuyu (3 times concentrated Konbu kelp seaweed soup stock) or Tentsuyu (Tempura dipping sauce)
Directions:
1. Shell shrimps (leave their tails), devein, and make incisions in their stomach side to straighten them. Then cut off the tip of the tail and remove the water inside to avoid splatters when frying.
2. Mix Nissin Tempura flour and the water very well.
3. Heat vegetable oil in a deep pan to 180~190C (340~350F). Lightly dip the shrimps in the batter and fry them immediately until golden and crisp. Drain Tempura on a rack or a sheet of clean paper towel. (Do not fry too many at once.) Cool down until you can touch.
4. Boil Udon noodles as directed on package and drain well.
5. Spread cream cheese on Nori sheet.
6. Wrap shrimp Tempura with the Nori sheet. When Udon gets dry, it's gluten gets strong and sticky. In that instant, wrap Udon around the shrimp Tempura.
7. Cut out sliced cheese and Nori sheet to make their eyes.
8. Dilute 20cc Konbu Tsuyu with 40cc water (make as much as you want) and bring to a boil.
9. Pour the Konbu Tsuyu over the Mummy Shrimp Tempura Udon and enjoy!
You can eat as cold noodles like Zaru Udon (chilled Udon noodles), or microwave before you eat.

【Ingredients】6 Bread rolls
★160g Bread flour
★40g Cake flour
★12g Sugar
★3g Salt
★6g Non-Fat Dry Milk Powder
●135g Milk
●3g Dry yeast
15g Unsalted butter(room temperature)
*The best milk temperature for the dough: About 30℃ for spring and autumn. About 10℃ for summer, and about 40-45℃ for winter.
-Egg Sandwich-
Boiled egg
Apple(diced)
Japanese mayonnaise
salt pepper
Shiso leaves
-Vienna sausage Sandwich-
Vienna sausage(soy sauce seasoned)
whole-grain mustard
lettuce
Japanese mayonnaise
-Vegetables Sandwich-
Broccoli sprouts
Cherry tomato
cucumber(salad dressing)
Red radish
-Prosciutto Sandwich-
Prosciutto
Cream cheese
Purple cabbage
*Salted butter
【Directions】
①Combine milk and dry yeast.
②Combine the dry ingredients (★)and mix together with a whisk.
③Add ①and mix.
④Put it on the table and knead. (10mins)
⑤Add butter and knead more. (5mins)
⑥Make it round, then leave it at a warm place until it gets twice as bigger. (primary fermentation)
⑦Degas the dough from ⑥, divide it into 6 pieces and make them round.
⑧Cover them with a wet cloth and leave them for 15 mins. (bench time)
⑨Roll the dough out with a rolling pin about 10 wide x 15 cm long. Roll the long sides of the dough in towards the center and fold in.
⑩Fold the dough in half, seal closed and flip it over. Place on a baking sheet lined with parchment paper and leave it at a warm place until they get twice as bigger. (secondary fermentation)
⑪Bake it in the preheated oven (190°C) for about 14 mins.
When the tops are browned they're good to go!
⑫ Place it on a wire rack to cool.
*Baking time will vary according to your oven so please adjust accordingly.
*Be careful not to let the dough dry out when you are letting it rise or rest.
*If you don't seal the seams securely closed, they'll come apart during the 2nd rising.

【作り方】
①牛乳とドライイーストを混ぜる。
②ボウルに材料(★)を入れて泡立て器で混ぜる。
③①を粉の中央に加えて混ぜる。
④テーブルの上に置きこねる。 (約10分)
⑤バターを加えてさらにこねる。 (約5分)
生地にツヤが出たらok。
⑥丸めて、2倍になるまで暖かいところに置く。(一次発酵)
⑦生地のガスを抜き、6つに分けて丸める。
⑧濡れた布巾などを被せて、15分間置く。 (ベンチタイム)
⑨生地をガス抜き麺棒で幅10×長さ15 cmの大きさにする。
中央に向かって折り、折り返す。
⑩生地を二つ折りにして、しっかりと綴じる。(ここでしっかり綴じないと二次発酵後に外れてきてしまいます)綴じ目下にして、天板に並べ、2倍になるまで暖かいところに置いておく。 (二次発酵)
⑪190℃に温めたオーブンで14分焼く。
こんがり焼き色がつけばok!
⑫ワイヤーラックの上に置いて冷ます。
*焼く時間はオーブンによって異なりますので、それに応じて調整してください。
*発酵中やベンチタイム、成形時は生地が乾燥しないよう気を付けて下さい。(乾燥するとパンが膨らみません、手早くやること、濡れ布巾などを被せるのも乾燥を防いでくれます)
