【如何從飲食中可能地減低體內「二噁英」損害(加番損害二字,可能清楚啲)】
近日,我被「二噁英」呢三個字纏繞。
終於,我花咗少少時間,去了解下「二噁英」係咩東東,而如果,吸入過多時,到底從飲食上幫唔幫到手。
搵咗好耐,其實,研究不算好多。
由於「二噁英」有機會存在係食物,尤其肥肉,所以較多資料都係講點樣避免攝取「二噁英」,而唔係如果身體接觸咗之後,可以食咩有機會排走及減低其對身體損害。
畢竟,「二噁英」係毒素一種,唔會活生生咁有人體實驗。最多都係透過觀察後分析,又或者老鼠實驗 (其實鼠鼠對科學貢獻好大!)所以,以下提及嘅營養素及食物,大家可以作參考。但都建議大家都可以食多啲,畢竟,提及嘅食物食多咗問題不大。
1. 維他命A、C、E
有研究講過,「二噁英」會增加體內氧化反應,產生多咗活性含氧物 (ROS),而同時減低身體嘅抗氧化功能,所以,血液中嘅維他命A、C、E水平亦有可能下降。所以,若果接觸過「二噁英」,可以增加攝取維他命A、C、E。話哂呢三種維他命本身就係屬於抗氧化物,食多少少都可以 (但唔駛超多),仲可以增強免疫力。
* 維他命A食物:紅蘿蔔、南瓜、番薯、羽衣甘藍、菠菜等。
《飲食陷阱2》P.62 有講更多維他命A資訊。
*維他命C食物:柑橘類水果(柑、橙、西柚、檸檬)、 士多啤梨、奇異果、生番茄、綠葉蔬菜、苦瓜、青椒
《飲食陷阱1》P.188 有講更多維他命C資訊。
*維他命E食物:綠葉蔬菜、全麥穀物,包括:全麥麵包、全麥麵條、果仁,尤其杏仁、蛋黃
2. 硒質(Selenium)
吸入「二噁英」,同樣會降低血液中硒嘅水平。但硒質本身屬很強嘅抗氧化物質,而硒蛋白大部分亦係抗氧化酵素,可以令細胞不易受游離基傷害,有助身體保持對抗癌症及心血管病應有的抵抗力。
肉類、海鮮、果仁都含較多硒質。但係眾多食物當中,我尤其推介巴西果仁(Brazil nuts),因為其硒質係眾食物之首,食一粒,已經夠1日硒質所需。由於巴西果仁都幾肥下,唔駛食好多,每日2-3粒都好夠!
3. 薑黃素(Curcumin)
我曾經講過薑黃素具很強抗氧化功效,亦有助舒緩炎症。而有一份用咗老鼠做實驗嘅研究亦有提及過薑黃素很有可能有效地預防亞慢性「二噁英」暴露(subchronic TCDD exposure)。其實一般薑黃粉(turmeric powder)已經含有薑黃素,將1/4-1/3茶匙薑黃粉加落smoothies或者用嚟加入炒飯、湯、奄列等都可以。薑黃粉唔單止可以抑壓一種致癌物質,仲可以增加肝臟一種排毒酵素。 好還好,切勿過份地攝取,因為薑黃粉含有高濃度草酸鹽,易有腎石人士就要注意份量,不宜大量攝取。
4. 白藜蘆醇(Resveratrol)
有研究顯示,口服白藜蘆醇或有助對抗「二噁英」。含較豐富白藜蘆醇嘅食物唔係好多,有大家可能較熟悉嘅紅酒,其發酵嘅紅提子皮就含有白藜蘆醇,不過,紅提子都有,唔一定要飲酒。其次,花生都有。
5. 槲皮素(Quercetin)
長期吸「二噁英」會損害生育功能,有研究指出槲皮素(Quercetin)有助老鼠預防由「二噁英」引起嘅睪丸損害 (TCDD-induced testicular damage)。槲皮素屬黃酮類一種,可以保護細胞之餘亦可增加體內抗氧化物「穀胱甘」(glutathione)水平,保護細胞免被自由基侵襲。槲皮素廣泛存在係植物性食物當中,例如:紅蘋果、紅提子、洋蔥、西蘭花、羽衣甘藍、莓類、綠茶等。

The real local food is always hidden in the small shop in the alley. The store is very very small. About two tables, able to host 6 - 8 people, and the store is full of organic and vegetarian products and supplies. For me, here is a treasure!
The "Green Kitchen" was originally selling raw drinks, and slowly added a lot of light food series to their menu. Like my favorite - "Honey" King Oyster Mushroom w/ Multigrain Rice, honey juice made with rock sugar, sprinkle a bit white sesame seeds, smells soooo good!
I am actually very afraid of having raw drinks (because I had a bad experience), but every time I have a chance, I will give myself the courage to try it again. And the raw drink here, please don't miss it~
There are also a lot of healthy products in the store, you will find the right one for you, like I found the super food I like very much - Brazil nuts!

Pão de Queijo is Brazilian cheese bread.
We can't find the flour (polvilho azedo or doe) for Pão de Queijo in Japan, so it is very popular to use Shiratamako (lumpy glutinous rice flour) or Mochiko (glutinous rice flour) to make it :)
Chewy texture of Mochi and cheese is just like Pão de Queijo. I hope you can try it out! YUMMY!!!

NO EGG Japanese-Style Pão de Queijo
Difficulty: Very Easy
Time: 30min
Number of servings: 12
Ingredients:
100g (3.5oz.) Shiratamako (lumpy glutinous rice flour) *Mochiko (glutinous rice flour) is OK
50g (1.8oz.) grated parmesan cheese
1/2 tbsp. cooking oil
100ml~ milk
Directions:
1. Preheat the oven to 180C (350F).
2. Place Shiratamako (lumpy glutinous rice flour) in a bowl. Add milk and mix very well until smooth. *DO NOT add other ingredients before you mix the Shiratamako and milk together. Otherwise, they won't mix well and smooth).
3. Add cooking oil and parmesan cheese, then mix well until combined. *you can add a bit more milk if the dough doesn't come together. *adding nuts, sesame seeds, spices, or herbs is good, too
4. Divide the dough into 12 equal pieces using a bench scraper or a knife, then roll them into balls.
5. Bake at 180C (350F) for about 15 minutes.
Just out from the oven is good. They stay chewy and soft till the next day. Of course, you can microwave or cook in the toaster oven for a few seconds and they will become soft again.

⇨ Day 1
☆ Chocolate Protein Smoothie
2 TBS Tropeaka Lean Protein Powder
2 TSP Tropeaka Immunity
1 TSP Tropeaka Maca Powder
1 TSP Tropeaka Cacao Powder
6 ice cubes / almond milk
250 ml of almond milk
20g of Brazil Nuts
Banana (Optional)
☆ Burrito Bowl:
Beef (Porterhouse, Scotch Fillet, or Rump)
2-3 Tomatoes
1 Large Avocado
Button Squash
Sour Cream (optional)
Cheddar Cheese (optional)
Salad Leaves
1/2 Red Onion
1 Lemon
Corainder
First make pico de gallo. Chop up 2 tomatoes, 1/2 a red onion, some corainder. Mix them in a bowl and squeeze in 1/2 a lemon or 1 lemon.
Mash up your avocado and add the remaining lemon or lime. Your preference.
Chop up the steak into small cubes and fry it over stove with coconut oil. Season with salt and pepper.
Then just mix them all together in a bowl. Use your favourite salad leaves, or vegetables. I've roasted some squash here as well.
⇨ Day 2
☆ Matcha Protein Cleanse Smoothie:
1 TSP of Tropeaka Matcha
1 TBS of Tropeaka Vanilla Lean Protein Powder
2 TSP of Tropeaka Ultra Cleanse
Stevia (optional - I use a few drops)
Banana or your favourite fruits (Optional)
1/2 an Avocado
250ml Almond Milk/Coconut Milk
☆ Smoked Salmon Salad
Honestly I just mix everything together. I don't have measurements of this one.
☆ Kale, sweet potato and Roast Chicken
I rarely ever roast my own chicken anymore. I just buy them from the local charcoal chicken store.
I coat my sweet potato with some coconut oil and roast it in the oven for about 15-20 mins in total. Flip the sweet potatoes once.
For kale, i normally stir fry is quickly with some coconut oil and salt so that it's easier to digest.
⇨ Day 3
☆ Matcha Chocolate Truffle
200g of Cacao Butter
28g of Coconut Oil
80ml of coconut Cream
1 tsp of vanilla extract
Stevia/erythritol (To taste - you can add both)
For the coating:
Some matcha powder and erythritol (Swerve) - mix them together.
This is actually quite hard to make.
First melt the cacao butter and coconut oil slowly using a double boiler. Make SURE you don't burn the butter. You'll have to do it VERY slowly. I melt probably about 3/4 of the cacao butter then i chuck all the rest of the ingredients in the food processor and blend them together so that it is like a ganache texture. Not watery, more like creamy! Add your favourite sweetener. You can use coconut sugar, caster sugar, honey, maple syrup, etc. Then pop the mixture into a piping bag or a zip lock bag and squeeze them into an ice cream/ chocolate mold. Then freeze it for about 15 minutes or so, or longer.
Then take it out and let it rest for a while before you coat them!
☆ Prawn + Squash + Salad
I just roast the squash in the oven for about 15 mins. Coated with coconut oil and salt
For the prawns. Just fry it with some coconut oil, some tomato paste, salt, pepper, garlic, ginger and turmeric. Very easy.
⇨ Day 5
☆ Matcha Chia Seed Pudding (SUPER TASTY)
1 tsp of Tropeaka Matcha Powder
30g of Chia Seeds
50ml of Full Coconut Cream
70ml of Almond Milk
1 tsp of Vanilla Extract
A few drops of Stevia or Maple Syrup
Let it set in the fridge!
Taste sooooo GOOODDD!!! I love the pudding!
⇨ Day 6-7 recipes are really basic. I get the fatty king fish cuts from our local japanese grocery. Very GUD!
