牛扒屋Steak House, M7澳洲和牛及羊架
A. M7澳洲和牛牛扒
材料:
M7澳洲和牛牛扒1塊
處理:
1. 和牛,已解凍,拆開包裝,廚紙索乾。
2. 和牛調味:
a. 海鹽半茶匙
b. 黑椒半茶匙
兩面都塗上調味料。
烹調:
1. 大火燒熱鑊。
2. 放牛扒。
3. 煎45秒。
4. 過了45秒,反轉牛扒,繼續用大火煎45秒。
5. 放上碟,攤凍3分鐘。
6. 中慢火,再放牛扒落鑊,煎30秒。
7. 過了30秒,反轉再煎30秒。
8. 煎封牛扒邊。
9. 放上碟,攤凍3~5分鐘。
B. 澳洲羊架
材料:
澳洲羊架4件
處理:
1. 羊架已解凍,廚紙索乾。
2. 羊架調味:
a. 檸檬葉碎半茶匙
b. 油1茶匙
c. 黑椒1茶匙
d. 海鹽1茶匙
撈勻。
烹調:
1. 中慢火燒熱鑊。
2. 放羊架落鑊,整齊排好
3. 煎了45秒,反轉羊架。
4. 又煎了45秒,再反轉羊架。
5. 再煎45秒。
6. 完成,上碟。
最後,在牛扒及羊架上,分別灑上檸檬葉碎及放車厘茄,可享用。

A. M7 Australian wagyu beef steak:
Ingredients:
M7 Australian wagyu beef steak 1 pc
Preparation:
1. Wagyu beef steak, has been already defrosted, remove plastics, dry with kitchen towel.
2. Season the beef:
a. Sea salt 0.5 tsp
b. Black pepper 0.5 tsp
Seasoning is to be put on both sides of the beef.
Steps:
1. Heat up wok at high flame.⁸
2. Put beef steak.
3. Fry for 45 seconds.
4. Flip over the beef after 45 seconds. Fry at high flame for another 45 seconds.
5. Put on plate. Cool down the beef for 3 minutes.
6. Turn on medium~low flame, put the beef in wok again, fry for 30 seconds.
7. Flip over the beef after 30 seconds, fry for another 30 seconds.
8. Fry the edge of beef well.
9. Put on plate. Cool down for 3~5 minutes.
B. Australian lamb rack:
Ingredients:
Australian lamb rack 4 pcs
Preparation:
1. Lamb rack has been defrosted. Dry with kitchen towel.
2. Season the lamb:
a. Fragrant coleus 0.5 tsp
b. Oil 1 tsp
c. Black pepper 1 tsp
d. Sea salt 1 tsp
Mix well.
Steps:
1. Heat up wok at medium~low flame.
2. Put lamb rack in wok. Put in rows.
3. Have already been fried for 45 seconds, flip over the lamb.
4. Flip over the lamb again after it has been fried for another 45 seconds.
5. Fry for 45 seconds more.
6. Complete. Serve.
Finally, put fragrant coleus and cherry tomatoes on both the beef and lamb. Serve.
