👩🏻🍳韓式綠豆芽菜湯飯 (素食可)
Korean bean sprout soup with rice (Vegan)
週末大魚大肉完,我超喜歡用這道清淡的豆芽菜湯飯來清清腸胃。你們別小看豆芽菜,這一碗吃下來其實超飽的,很適合想減肥或怕胖的朋友。
傳統做法是用魚乾去熬高湯,但我覺得用香菇去熬,一樣好吃。正統作法是用黃豆芽菜,而我自己不喜歡吃黃豆芽所以改成了綠豆芽。
還記得有一次陶先生去幫我外帶這道料理,他跟韓籍廚師說可不可以幫我做成綠豆芽,還被那些韓國廚師取笑了一番。所以如果你喜歡黃豆芽的口感,就儘量用吧!
🌶食材:(一人份)
昆布 一片(約5x10 cm大小)(註1)
乾香菇 3朵 (註2)
水 750 ml
綠豆芽 1量杯 (註3)
洋蔥切絲 1/4顆
蒜末 約2顆
泡菜 1/4 量杯
白芝麻 1 茶匙
韓式辣椒粉 1 茶匙 (韓文發音:GOCHUGARU 可在韓式超市買到)
韓式蝦醬 1 茶匙 (素食者可省略,註4)
蛋 1 顆 (素食者可省略)
飯 1 碗
鹽巴、黑胡椒
📌 註1: 昆布我是在布里斯本Buranda plaza 裡的日本Fiji mart 買的,我個人都買北海道的昆布,比韓國的好吃很多。
煮好的昆布不要丟,切絲後加點蒜末、醬油、糖、麻油炒一炒,很好吃😋
📌註2: 傳統的作法是用7條大型魚乾,所以非素食者可去掉香菇,改用魚乾。它通常可以在任何的亞洲或韓國超市的冰箱裡找到,因為是拿來熬湯的,所以請選大魚乾,會比中小魚乾來的有味道。以下這個連結裡,有一張照片有秀出魚乾大小。

📌註3: 傳統作法是用黃豆芽,但因我個人喜好,所以用了綠豆芽。
📌註4:韓式蝦醬(Saeujeot)也是在任何的韓式超市的冰箱裡可以找到。它的味道是鹹的,通常是拿來加在湯裡增加鹹度。如果你找不到,或是茹素者,可以省略這個食材,用鹽巴調味就可以了。
🌶Ingredients (for 1 serving)
Kelp (5x10 cm)
Dry shiitake mushrooms x 3
Water 750ml
Green bean sprouts 1 cup (you can also use soybean sprouts)
1/4 Onion sliced
minced garlic 1 tbsp
kimchi 1/4 cup
White sesame seeds 1 tsp
Korean chilli powder (GOCHUGARU) 1 tsp (you can find it in Korean grocery stores.)
Korean salted shrimp sauce (Saeujeot )1 tsp (you can skip this by adding more salt if you are vegan. )
1 egg (you can skip this if you are vegan.)
1 bowl of cooked rice
salt & black pepper

驚喜1. 有多久沒吃到西式早餐裡的Pancakes (薄烤餅)?這家居然有純素版,而且是朱古力味道,在無蛋奶的情況下,口感卻能維持這麼鬆軟,更厲害的是搭配的雪糕,原材料竟然是...米?!非常非常... 好吃!
驚喜2. 這家店在早餐的時段居然有意大利飯,對於一個超愛意大利飯的我怎麼可以拒絕呢?結果讓我非常驚喜,在京都竟能吃到這麼美味的料理!意大利飯的濕度剛剛好,加上他們店的自家製純素芝士 (對,他們有賣自己品牌的純素芝士),吃起來,讓我感覺到幸福,我跟旅伴根本沒時間閒聊,一口接一口的狂吃!
驚喜3. 店裡到處擺放著營養書藉和雜誌,有蔬食、生食 (裸食)、疾病,客人可以隨意拿來閱讀,也可以購買。然後我發現,原來這家咖啡館的創辦人是一名醫生,樓上更有她的診所!這實在太意外了吧!
所以如果你或你朋友家人,還在質疑蔬食給身體帶來的影響是好是壞的話,來這家連醫生也在用實際行動告訴你蔬食有多好的純素咖啡館吧,一定會讓你大開眼界呢~

Found a Vegan Cafe that surprises me a lot in Kyoto~
Surprise 1. How long have you not eaten Pancakes in a Western breakfast? This cafe has a vegan version, and it is a chocolate flavor. In the absence of egg and milk, the taste can be kept so soft and moist, and the most amazing part is the matching with ice cream, it is actually ... made by RICE? ! Very very... delicious!
Surprise 2. This cafe provides risotto during the breakfast time. How can I not order it as a risotto-lover? As a result, I was very surprised that I can enjoy such delicious meals in Kyoto! The humidity of the risotto is just right, plus their own vegan cheese (yes, they have their own brand of vegan cheese), it made me feel blessed, I even have no time to chat with my travel companion, I was too busy and focus with my RISOTTO!
Surprise 3. There are many nutrition books and magazines everywhere in the cafe, topic including vegan foods, raw foods and diseases. Customers can read them and buy them. Then I found out that the founder of this cafe is a doctor and her beauty clinic was just upstairs! This is really unexpected!
So if you or your friends and family are still questioning if the impact of vegan diet on the body is good or bad, come here! Because even the doctor is telling you how good the vegan diet is by opening this cafe. It will surprise you~

豆干 dried tofu
蔥花 green onion
蒜片 garlic
洋蔥 onion
紅椒 red pepper
香菜 cilantro
▶麥可特調醬汁 SPECIAL SAUCE
甜酒釀 rice wine soup
辣椒醬 chili sauce
豆腐乳 fermented bean curd
香醋 black vinegar
老抽 dark soy sauce
紹興酒 shaoxing wine
醬油 soy sauce
番茄醬 ketchup
▶調味料 SEASONING
橄欖油 olive oil
鹽巴 salt
蒜粉 garlic powder
料理酒 japanese sake
麻油 sesame oil
▶作法
① 切豆干、蔥花、蒜片、洋蔥丁、紅椒丁
② 把特調醬汁醬料都放在一起後攪拌
③ 橄欖油炒香蒜片、洋蔥丁、豆干
④ 加入特調醬汁、料理酒、蒜粉、鹽巴、紅椒拌炒
⑤ 加入蔥花拌炒,起鍋前加點麻油
⑥盛盤後鋪上香菜、橄欖油和花生,完成♡

Ingredients:
for the ramen noodles:
200g bread flour
100g water
10g baking soda
tapioca starch(or any kind of starch powder)
for the soup:
800g water
50g miso
2 shiitake mushroom
1 clove garlic
1 tsp broad bean paste
1 tbsp coconut oil
1 tbsp sweetener
1 tsp salt(I didn't show this in the video but this is the most important ingredient)
200g bean sprouts
50g green onion
some thinly sliced dried chili pepper
Instructions:
1. bring baking soda water to a boil, then mix with bread flour
2. knead well with pasta machine and make it into noodles.
3. put all the ingredients for the soup and simmer gently.
4. boil ramen noodles for 1 minute
5. put everything together in a large bowl

中華麺
強力粉 200g
水 100g
重曹 10g
タピオカ澱粉 適量
スープ
水 800g
味噌 50g
乾燥しいたけ 2つ
にんにく 1つ
豆板醤 小さじ1
ココナッツオイル 大さじ1
甘味料 大さじ1
塩 小さじ1
もやし 200g
ねぎ 50g
糸唐辛子 適量
「作り方」
1、水と重曹を混ぜ、沸騰させます。強力粉を加えます。
2、よく捏ねてからパスタマシンを使い、麺状に切ります。麺は切ったらタピオカ澱粉などを全体にまぶしてくっつかないようにしておきます。
3、スープの材料を全て混ぜ、ゆっくり煮ます。
4、中華麺を1分ほど茹でます。
5、もやしや白髪ねぎ、糸唐辛子など好みの具材を盛り付けて完成です。

Tofu 7 ways! Tofu isn't supposed to be boring at all! In this video I share with you 7 vegan tofu recipes that are super simple to make but ultimately flavorful!
Ingredients
►►#1. Fried tofu with peanut butter soy sauce:
Sauce:
1 tbsp sugar
2 tbsp light soy sauce
1 tsp peanut butter
►►#2. Fried tofu coated with scallion (dau phu chien tam hanh)
Scallion sauce:
1 tbsp sugar
2 tbsp light soy sauce
2 tbsp water
¼ tsp mushroom seasoning powder
2 tbsp chopped scallion
►►#3. Spicy tofu
10g dried shiitake mushroom
1 block silky tofu
1 tbsp minced garlic, shallot and chili
1 tbsp hot sauce
1 tbsp soy sauce
1 tbsp vegan oyster sauce
1 tbsp chili sauce
¼ cup water
1 tbsp julienned ginger
1 tbsp sugar
½ tsp stock powder
½ tsp salt
►►#4.Tomato and tofu soup
1 block soft tofu, cubed
1 tomato
100g enoki mushroom
1 tsp stock powder
chopped spring onion and cilantro
►►#5. Tofu wrapped in betel leaves
2 blocks of tofu (600g)
25g dried shiitake mushroom
15g dried woodear mushroom
30-35 betel leaves
1 tbsp minced lemongrass
½ tsp five-spice powder

1 tsp sugar
►►#6.Braised tofu with pineapple and mushrooms
Sauce:
1 tsp sugar
1 tsp vegan oyster sauce
1 tsp soy sauce
1 tsp chili sauce
2 tbsp water
►►#7. Teriyaki tofu
Sauce
1 tbsp sugar
2 tbsp light soy sauce
1 tbsp red wine (or cooking wine or water)
1/8 tsp mushroom stock powder (optional)
1 tsp grated ginger

This recipe is for those who cannot get curry roux (curry sauce mix) but want to make Japanese Karē Raisu (Curry Rice) at home.
Also it is way healthier than using the roux since I didn't use any greasy fat ingredient!!!
Vegetarian people can skip the meat ;)

Japanese Curry Rice From Scratch
Difficulty: Easy
Time: 45min
Number of servings: 4
Ingredients:
300g (10.6oz.) lean pork
A
* salt and pepper
* 1/2 tbsp. curry powder
2 potatoes (300g=10.6oz.)
1/2 carrot (150g=5.3oz.)
1 onion (200g=7oz.)
600ml water
consomme cube (or bouillon cube) to make 600ml soup
B
* 1 clove chopped garlic
* 1 tbsp. chopped ginger
* 50ml red wine (you have no choice but skip it if you can't consume it)
* 1 tbsp. curry powder
* 1 bay leaf
C
* 1 tbsp. ketchup
* 1 tbsp. Worcestershire sauce
* 1/2 tbsp. soy sauce
1 potato (150g=5.3oz.)
salt and pepper
cooked rice
Directions:
1. Cut pork into bite-size pieces, then season with A.
2. Cut 2 (300g=10.6oz.) potato and carrot into bite-size pieces. Cut onion into wedges.
3. Place water and consomme cube (crushed) in a pot. Put on the heat, when the consomme cube has dissolved, add B and mix well. Then add the vegetables (2.) and bring to a boil.
4. Add the pork, remove the foam if necessary, add C, then cover and cook on medium for about 20 minutes.
5. Meanwhile, grate 1 (150g=5.3oz.) potato.
6. Season with salt and pepper. Then add the grated potato (5.) and cook until the soup thickens.
7. Serve the curry on a hot bed of rice.
