Christian 鹽焗雞
材料:
雞1隻
檸檬半個
紅椒粉半茶匙
洋蔥鹽半茶匙
炸蒜頭1茶匙
鹽1公斤
麵粉1公斤
蛋白6隻,攪勻待用
做法:
1. 將鹽、麵粉同埋蛋白攪勻之後用手搓5-8分鐘待用。如果太乾,中途可以加凍水再搓。
2. 將紅椒粉、洋蔥鹽同埋炸蒜頭搽上雞嘅表面,然後將檸檬擺入雞身入面。
3. 將麵團搓至約1cm厚,有咁闊得咁闊。
4. 將雞放喺麵團上面正中,雞胸向上。
5. 用麵團完完全全咁包住隻雞,用水將麵團黐埋口。剪走多餘嘅麵團,可以用嚟封住穿咗嘅部分。
6. 用焗爐160度焗60分鐘。焗完之後,用煮嘢食探熱針check 一check。如果係70度,咁就搞掂。無70度就焗多陣。
7. 擺20分鐘先好打開個面攞隻雞出嚟食呀!
Christian's Chicken Baked in a Salt Crust
1 whole chicken [ 1.2 kg ]
Black pepper to taste
1/2 lemon
1/2 teaspoon Paprika
1/2 teaspoon onion salt
1 teaspoon fried garlic
1 kg salt
1kg Flour
6 egg whites, beaten
Instructions:
1. Mix salt, flour and egg whites and knead. Add cold water if needed to form a smooth dough
2. Rub the chicken with paprika, onion salt and fried garlic and stuff cavity with a lemon
3. Roll out the dough to 1 cm thick and as wide as possible.
4. Place the chicken in the middle, breast side up.
5. Fold up the rough and using water, seal up the dough and cut off any excess and use to seal up any other cracks that may form. Use a little water to rub and smooth out any cracks.
6. Roast at 160C for 60 minutes. If you have one, use a meat thermometer to check the internal temperature is 70C.
7. Allow to seat for 20 minutes before breaking salt crust and remove chicken

This is a super simple way to make the perfect roast chicken – Chinese style, in an air fryer. If you don’t have an air fryer, you can use an oven to bake it too. You just need to marinate the chicken for at least 3 – 4 hours, then air fry it for 20 mins and voila! See the ingredient list below for your easy reference.

Chinese Airfryer Chicken
Ingredients:
Serves 2 – 3
2 tablespoons of Chinese white rice wine
2 tablespoons of oyster sauce
4 tablespoons of light soy sauce
1 teaspoon of five spice powder
1 tablespoon of brown sugar
4 cloves of garlic - lightly smashes
2 stalks of spring onion - tie into a knot
A few dashes of white pepper or black pepper
700g whole chicken
Bake at 180C for 20 mins.
Place the chicken breast side up first and airfry for 10 mins. Turn chicken over to the other side on the 10-min mark then continue to airfry for another 10 mins. Total 20 mins cooking time.
If you're using an oven, please preheat your oven at the same baking temperature for at least 30 mins. Don't forget to remove the chicken from the fridge 30 mins before baking.
Check if the chicken is done before serving.
To make the excess marinade into a dipping sauce to go with your chicken, simply add 1/3 cup of water, 1/2 teaspoon of salt and some cornstarch solution over fire.

Ingredients:
Serves 4 - 5 pax
A handful of kaffir lime leaves - remove spines & crush
2 stalks of lemongrass (only use the white stem) - lightly smashed
2 shallots - lightly smashed
4 cloves of garlic - lightly smashed
1 tablespoon of coriander seed powder
1/2 tablespoon of grounded black pepper
15g of young ginger - lightly smashed
1 teaspoon of sugar
4 tablespoons of fish sauce
2 tablespoons of light soy sauce
1 tablespoon of oyster sauce
1.2kg whole chicken
Marinate chicken for at least 4 hours.
Remove chicken from the fridge at least 1 hour before baking.
Preheat the oven for at least 30 mins at 180C (356F) before roasting.
Add a tray of water in the oven also.
Roast chicken at 180C (356F) for 40 mins.
Then turn the chicken over and bake for another 20 mins at the same temperature.
Rest the chicken for at least 10 - 15 mins before cutting or serving.
If you’re using an airfryer, preheating is not necessary. Please check that your chicken is cooked before serving.

Have you heard how the name "Satay" or sate came about? I'm not sure if this was true but what I heard was satay actually means 3 pieces in Hokkien, a Chinese dialect. Satay is basically a barbecued meat skewer served with sweet peanut sauce. Satay is a national delicacy of Indonesia and in Singapore, we have easy access to pork satay, chicken satay and mutton satay. Even though you can also get satay in Malaysia, Brunei, Thailand or the Philippines and some other Southeast Asian countries, somehow the version available in each country vary a little.

Ingredients:
Makes 24 sticks
3 pieces of chicken thigh - cut into small pieces
Group A (cut into smaller pieces for easy blending)
4 pieces lemongrass (only use the white portion)
15 pieces shallots
3 pieces garlic
4 pieces galangal
Group B
6 tablespoons sugar
2 teaspoons turmeric powder
2 tablespoons coriander seed(dry roasted & pounded)
2 teaspoons cumin
1.5 teaspoons salt
1 tablespoon kichap manis
Marinating directions
1) Blend Group A into paste
2) Marinate cut chicken thigh with Group A & B for at least 2 hours
Roasting directions
Preheat oven at 180*C for at least 20 mins
Then roast your Satay or chicken skewers in the over at 180*C for 10 mins. Then increase temperature to 240*C and bake for another 10 mins.

然后将您的沙爹或鸡肉串在180 * C的温度下烤10分钟。 然后将温度升至240°C,再烘烤10分钟。
