Recipe:
Banana Mochi Pancake by Honney
Ingredient:
Banana 1pc (100g)
Starch 20g
Sugar (if need)
Step:
1. In a mixing bowl mash ripe banana well
2. Add the starch and sugar (if need) and mix well
3. Heat oil in a pan.
4. Pour some batter in it.
5. Cook until pancakes are golden brown on both sides.
6. Take them to a plate. Serve.

[點心專題-培根馬鈴薯小煎餅Bacon and Potato Pancakes]
大概沒有人不愛吃馬鈴薯的,今天跟大家介紹培根馬鈴薯小煎餅,透過培根豐富的肉香油脂味讓馬鈴薯泥吃起來更順口,也因為加了蔥末,讓顏色呈現更為豐富漂亮,應該可以成功吸引小朋友!
做法上有兩點要提醒大家,馬鈴薯塊弄熟可以用電鍋蒸或者用熱水煮,另外,做這個餅的時候建議把培根和洋蔥切得越小越好,除了能讓口感更棒以外,捏成餅的時候比較容易緊實,煎的時候也比較容易維持餅的形狀。

Directions:
1. Finely chop the onion and bacon. At the same time, peel and cube the potatoes, then steam them until soft.
2. Sauté onion, then add bacon and continue to stir fry until aroma. Next, add chopped scallion (white part) and stir fry slightly. Set aside.
3. Mash the steamed potato, mix well with onion and bacon. Lastly, add some chopped scallion (green part) and white pepper. Shape the mashed potato mixture into round shapes, lightly dust with flour, then pan fry both sides until golden brown. DONE.

Afternoon Tea Sandwiches (Chicken Egg & BLT)
Difficulty: Easy
Time: 30min
Number of servings: 4 people
Ingredients:
((Chicken Egg Sandwich))
120g (4.2oz.) chicken breast
100g (3.5oz.) potato
1 hard-boiled egg
A
* 3 tbsp. mayonnaise
* 1 tsp. whole-grain mustard
* salt and pepper
8 slices rye bread
((BLT Sandwich))
6 bacon strips
1 tomato
4-8 leaves iceberg lettuce
A
* 1 tbsp. ketchup
* 1/2 tbsp. Worcestershire sauce
mayonnaise
8 slices white bread
Directions:
((Chicken Egg Sandwich))
1. Cut the chicken breast into chunks. Peel and slice the potato into round slices. Place them on a microwavable dish, season with salt and pepper, cover with plastic wrap, and cook in the microwave for 4-5 minutes (500w). When you uncover, be careful as steam and water are very hot.
2. Mash the potato slices with a fork while they are hot. Allow to cool the chicken breast and shred with your hands. Chop the hard-boiled egg.
3. Mix A in a bowl, add (2.), and mix well.
4. Spread 1/4 of the mixture on a slice of bread. Then top with another slice of bread.
5. Cut off the crusts and cut each sandwich into fingers.
((BLT Sandwich)
1. Cut bacon strips into halves. In a pan, fry bacon until crispy (until it reaches the crispiness you want), then drain on paper towels. Slice the tomato and remove the seeds.
2. Spread some mayonnaise on 4 slices of bread. Spread some A on the other 4 slices of bread.
3. Place lettuce leaves on a mayo-spreaded bread. Then place a sliced tomato and bacon strips. Top with a ketchup mixture-spreaded bread.
4. Cut off the crusts and cut each sandwich into fingers.
You can spread some softened butter on your bread if you like. But I don't like it... haha

Avocado Cheese Korokke (Croquettes)
Difficulty: Medium
Time: 30min
Number of servings: 6 croquettes
Ingredients:
300g (10.6oz.) potatoes
1/2 Avocado
salt and pepper
pizza cheese
batter
* flour
* beaten egg
* Panko (bread crumbs)
vegetable oil for deep frying
tomato ketchup or mayonnaise if you like
Directions:
1. Peel and slice potatoes. Place them on a microwavable dish, cover with plastic wrap, then microwave at 500w for 6 minutes until soft. Transfer to a bowl and mash with a fork. (You can cut into medium chunks and boil until soft. Then drain and mash them while hot.)
2. While still hot, add diced avocado. By heating avocado, you can avoid it from chaining color.
3. Season with salt and pepper.
4. Flatten the mixture and divide it into 6 equal portions. Place some pizza cheese in the center and flatten each portion into an oval-shaped patty.
5. Coat each patty with flour, dip in beaten egg, and coat with Panko.
6. Deep fry in oil at 170C(338F) until golden brown.
Serve with tomato ketchup or mayonnaise if desired.
Best eaten while still hot, or avocado can become soggy.

Coxinhas (Brazilian Chicken Croquettes)
Difficulty: Medium
Time: 1hr
Number of servings: 10 pieces
Ingredients:
((Dough))
400g (14oz.) potatoes
150ml milk
2 tbsp. butter
1 consomme cube or powder
150g (5.3oz.) bread flour
((Filling))
350g (12.5oz) chicken breast
1 chopped onion
2 tbsp. finely chopped fresh parsley
1 tsp. salt
pepper
((Batter))
bread flour
beaten egg
fine bread crumbs
vegetable oil for deep frying
Directions:
1. Peel and cut potatoes into medium chunks and place them in a pot with chicken breast. Add water until cover, then boil them until soft for about 20 minutes. Drain and mash the potatoes (in a pot) while hot. Add milk, butter, and consomme, then mix well. Shred the chicken with your fingers.
2. Heat cooking oil in a pot, add chopped onion, then cook until tender. Add the shredded chicken and finely chopped fresh parsley, then season with salt and pepper.
3. Put the pot with the potato mixture on low heat, add bread flour, then knead until combined. Leave to cool until you can handle it, then divide it into 10 portions.
4. Grease your hands with cooking oil, flatten the dough, place the filling in the center, then wrap the dough into a pear shape.
5. Coat with bread flour, beaten egg, then bread crumbs.
6. Deep fry in oil at 170C (338F) for about 6 minutes until golden.

在米國吃到馬鈴薯泥的機會真的非常大
不管是學校自助餐聽或是肯德基都買的到
到感恩節的時候超市還有賣薯泥粉
加熱水和牛奶攪一攪
薯泥就完成了
馬鈴薯泥通常會配著肉汁(Gravy)一起吃
有火雞肉汁(Turkey gravy) 或是牛肉汁 (Beef gravy)可供選擇
因為Beef gravy裡面的成分已經有牛高湯、麵粉、調味(鹽和胡椒)、還有油脂
所以基本上很適合在洋蔥湯裡插一腳
那一天買了肯德基外帶全家餐
大方的美國人一碗馬鈴薯泥附了一碗牛肉汁
吃不完的牛肉汁想想丟了可惜
才會心生一計把本來用來調味馬鈴薯泥的牛肉汁
拿來做洋蔥湯
接下來的事情就如傳統洋蔥湯做法:
1. 平底鍋加橄欖油,將洋蔥炒到金黃微焦
2. 加入牛肉汁和水(或高湯)煮滾,再視需要加以額外調味
3. 在炒洋蔥之前我還乾煎了一些蘑菇,可以加到湯裡風味更嘉
想更省時間嗎?
其實我還有用另一味偷吃步洋蔥湯
* 平底鍋不用加油,加入油蔥酥
* 加入牛肉汁和水(或高湯)煮滾,再視需要加以額外調味
* 完成
搭配上香蒜麵包更好吃說~
