Steamed fish is best eaten fresh, and using Kuhlbarra’s barramundi belly we created a dish that is not only healthy yet incredibly tasty all within 20 minutes. Pairing the fish with kai lan and shiitake mushrooms, we added a fish stock and abalone sauce that gives the dish its depth and flavour. The dish not only looks classy and it’s so easy everyone can make it at home.

Enjoy that stinging sensation on your tongue? That buzzing head rush? The fiery blast erupting throughout your body with every bite? REJOICE! For this dish is literally da’ bomb for you spice junkies out there!
What better way to relish in this chemical warfare together with lamb meat sourced directly from New Zealand. For soft meat, deep flavours and an excellent source of vitamins - opt for grass fed lamb. As the saying goes, you are what you eat. Grass fed lambs are typically lower in fat content compared to their grain fed counterparts and are enriched with vital nutrients such as iron, zinc and other vitamins. For this, we used Pure South lamb shoulder. Not only is it one of the more cost effective part of the lamb, it also packs a big flavour together with ultra tender meat. A bang for both your bucks and tastebuds!
Now, it’s really simple to whip up your very own version of spicy Sichuan sauce from scratch. Commonly known as ‘mala”, that addictive fiery sting comes from frying Sichuan peppercorn together with ginger, onion, garlic and dried chillies. Toss in those seared slices of lamb meat into that boiling crimson concoction for a minute and you are on, for a tongue-tingling time.
Don’t miss out on this fiery pleasure even if you can’t handle the heat, bring it down a notch by pairing with rice to enjoy a milder spicy punch with that melting meat.

For this episode, we went to The Line to destroy their AYCE Luxury Seafood Buffet! The Line is a Buffet Restaurant at the luxurious Shangri-La Hotel that serves food from a wide variety of cuisines, allowing you to sample Indian, Thai, Western and Singaporean cuisine all at one location. They also have themed nights like Japanese and Seafood Harvest, and in this video, we came on Seafood Harvest night. We have a GIVEAWAY for 1 Dining Voucher for Two, details on my IG post (@zermattneo)
Due to Covid-19, there is no longer a buffet spread to choose from but a menu where you order by dish, a la Minute. They conveniently provide a QR code which you can scan with your phone and order. Their Seafood Platter caught our eye but it turned out to be rather small (intentionally on their part) and would have taken us forever while greatly inconveniencing the staff to serve us an adequate quantity. They graciously acceded to our request for a bigger portion and wheeled out a humongous bowl filled with all the components of the Seafood Platter and with additional Sashimi.
The Giant Seafood Platter consisted of Boston Lobsters, Prawns, Mussels, Oysters, Snow Crab Legs, Snow Crab Claws, Clams and Scallops. It came garnished with lemons and 3 types of sauces, a vinegar sauce, a tabasco-based sauce and a cocktail sauce. While the seafood were largely fresh and juicy, they came with a fluctuating quality. Some were cooked to perfection while others were overdone and rubbery. The prawns were the best part, plump, rarely overcooked and went heavenly with the cocktail sauce.
Furthermore, we sampled the breadth of the options at this buffet, ordering the Western, Singaporean and Lebanese options plus dessert. The standouts would be the Wagyu Beef Bolognese and the Sambal Sotong. The pasta was al dente and the meat sauce was rich with a faux creaminess developed by hours on the pot. The sambal sotong was extremely tender and heavily coated in a delicious, spicy dressing while also pairing well with the sweet and vinegary sauce that came with it.
However, some of the food were rather disappointing like the Oyster Omelette, which was rather bland and came without the signature Oyster Omelette chilli sauce. The Angus Sirloin was also nothing to shout about, a touch on the under seasoned side and lacking flavour. The desserts were the most consistent, all of them being above average at the minimum. I enjoyed the Salty Caramel Choux Puff and the American Cheesecake. The Durian Cake would be a real treat for durian lovers as it had an intense durian flavour to it.
All in all, I certainly ate my money’s worth for a $120 Seafood Buffet. Although there were highs and lows, I still enjoyed the experience and pushed myself to destroy this buffet. The portions here are on the smaller side so as to allow you to order a greater variety and sample as many dishes that The Line has to offer. If you are feeling ravenous yet uncertain about what exactly to eat, look no further than the buffet at The Line!

For this episode, we headed back to No Signboard Seafood, this time at the Esplanade, to demolish a $1000 Seafood Mee Goreng Challenge! As a belated birthday treat, Sean has again offered to pay for my meal at No Signboard Seafood, this time only allowing Mee Goreng. Naturally, we loaded up the Mee Goreng with the most delectable toppings that No Signboard Seafood has to offer to push the cost to over $1000, making it possibly the most expensive plate of Mee Goreng ever!
No Signboard Seafood specialises in Chinese cuisine, with a focus on seafood, especially the world-famous Chilli Crab. This particular outlet at Esplanade is unique in that it has some Western cuisine available like Boston Lobster Scrambled Eggs with Caviar and pasta dishes. We had to go with Mee Goreng, which is a Malay-style fried noodle dish with a flexible bunch of proteins and vegetables added, tossed in a sweet and spicy sauce.
For my challenge, I ordered 10 servings of Mee Goreng, 3 Whole Boston Lobsters, a bunch of Scallops, 2 Wagyu Steaks and a large ball of Caviar. The staff masterfully plated this feast onto my giant plate, forming a beautiful array. The mee goreng was sweeter and less spicy than most mee gorengs you would find in Singapore, loaded with tofu and shrimp. It was delicious enough to eat on its own and had a deep wok hei aroma to it. The lobsters were plump and juicy, with the tail meat coming off the shell with almost no resistance. They were expectedly sweet and tender, being freshly cooked from the live lobster tanks on-site.
The scallops were stir-fried in XO sauce, pairing the naturally sweet scallops with the strong umami flavour of the sauce, while the steaks were cooked to medium-rare perfection and rich with a deep “beefy” flavour. Finally, the caviar was a surprising addition to mee goreng, usually eaten on its own or on toast with its rich salty flavour. However, it went exceedingly well with the mee goreng as each sweet and savoury bite of the mee goreng was met with pops of salty explosions, complementing one another rather spectacularly.
This meal was so good that I could hardly call it a challenge and I thankfully enjoyed my birthday dinner. No Signboard Seafood also offers a host of other Chinese-Singaporean cuisine, including crabs cooked in a multitude of ways and many fish options. Do check out No Signboard Seafood for their excellent take on Mee Goreng and their classic dishes!
