‼️I would like to request one help from you...
please tell the truth about our country if internet lines are all cut off .
Myanmar 🇲🇲, our country is not safe anymore. We always have to be afraid what is gonna happen to us at night and in the morning as we don’t have a good leader. We used to have our hero leader Aung San Suu Kyi, who has been detained by Myanmar Military Coup since 1st Feb, 2021.
We cannot sleep safely & soundly like we used to because Military soldiers release prisoners/inmates to attack civilians. They are asked to set fire up, break in to the houses at night and put poison in our drinking water. Citizens of Myanmar lost safetiness. We cannot sleep at night. Even polices and soldiers are harming people and we are feeling really helpless.
I cannot think why they could do that to us.
It makes my heart breaking into pieces.
Please share this with the hashtag of ( what is happening in Myanmar) to be seen by your countries’ leaders. We really need immediate help and humanitarian needs from your leaders. Their helps and support will not only effect on me but also it will be effective to all my people who are living in Myanmar 🇲🇲.

過年知道大家都好想我較蒸糕,今次教大家椰汁年糕,我依個版本同傳統有小小唔同, 想知點整就記得睇了,記得交功課呀😁

椰汁年糕
材料:
📌糯米粉225克
📌沾米粉37克
📌澄麵30克
📌片糖200克大约2片多小小(要弄碎些比较容易煮得溶)
📌水210克
📌椰奶120毫升
📌oil 30克
📌錫纸盆掃上油
📌鍚紙一張
📌紅棗一粒
做法:
1. 先用小火在210g 水中煮溶所有
片糖後, 待涼
2. 將三種麵粉全部一起過篩, 並可
混合在一起備用
3. 將(1)的糖水過篩, 如未涼攪幾下
来降温後才加入椰奶
4. 將(2)的麵粉中間整個洞, 將糖水
分多次慢慢加入及每次攪匀了再
加入另一次
5. 加油入粉漿内可用手動打蛋器或
攪拌機攪至粉漿平滑直至没有粉

6. 讓攪匀的粉漿静止20分鐘(可以
幫助麵粉吸入水份)
7. 將粉漿再次撹匀,然後再過篩倒
入蒸盆, 蓋上錫紙
8. 用蒸爐100度蒸1至1.5小時視乎
粉漿厚度. 如用明火蒸, 大火滾
起後, 用中大火蒸. 注意⚠️不要
太猛火否則容易會有洞在年糕面
蒸完加一粒紅棗在中間, 完成!

Simplified Coconut Chinese New Year Cake (“Nian Gao”)
Flour Ingredients:
Glutinous rice flour - 225g
Wheat starch (“Teng Mein”) - 30g (or replace with cornflour)
Rice flour - 37g
These flours combination will not give you a sticky and hard texture. It will be soft, bouncy, and chewy the next day instead of hard and sticky.
If you wish the make the traditional version, just omit the wheat starch (“Teng Mein”) and rice flour from the recipe and the rest remain the same.
Sweetener ingredient:
Chinese dark brown sugar - 200g or about 2 slabs (break into small pieces so they melt faster)
Liquid ingredients:
Water - 210g
Coconut milk - 120g (for more intense coconut flavor you can use coconut cream)
Oil - 30g or about 2 ½ tbsp
Garnish ingredient:
Chinese red date
Other utensils:
Sifter
Spatula
Whisk
Stand mixer – optional
Balloon whisk - optional
Oiled steam proof pan for steaming
Toothpick
Foil paper or plate to cover the pan
Methods:
1. In a large mixing bowl, you MUST SIFT the glutinous flour, rice flour, wheat starch (“Teng Mein”) into the bowl and mix well. Make a hole in the center. Set aside. This is your flour mixture.
2. In a cooking pot, add in Chinese dark brown sugar pieces, water, and turn on LOW heat to melt the sugar. DO NOT use high heat because it will evaporate the water.
3. Once it starts to boil, TURN OFF the heat and keep stirring to speed up the melting process.
4. Pour the melted sugar through a sifter into a large bowl to make sure there are no hard lumps of sugar left and MUST let it stand to cool to room temperature before mixing with other ingredients. Keep stirring to speed up the cooling process.
5. Once it is almost cool, add in the coconut milk. Mix well. This is your liquid mixture.
6. Add ONLY about ¼ of a cup of the liquid mixture into the well of the flour mixture prepared in Step 1.
7. Mix well with a spatula until all the liquid is absorbed into the flour. Continue with the rest of the liquid mixture by adding about ¼ cup at a time into the flour mixture and mix well before adding the next ¼ cup of liquid mixture. Be patience. **DO NOT add all the liquid into the flour at once.**
8. Once all liquid mixture has been mixed in with the flour, give a final good mix with a whisk and making sure there is no dry flour left.
9. Add the oil and continue mixing with a whisk until the oil is well incorporated into the batter or you can use an electric stand mixer, attached with a balloon whisk, and mix until you get a smooth batter about 1 minute or so on low speed.
10. Leave the batter in the mixing bowl and let it sit and rest for about 20 minutes. This step is VERY IMPORTANT to let the flour absorbs all the liquid and moisture for even flavor and a better tasting cake. This step also replaces the traditional way of laborious kneading of the batter.
11. Preheat the steam oven to 100C (212F).
12. After 20 minutes, mix the batter again with a spatula because flour will fall to the bottom of the bowl again after a waiting period.
13. You MUST SIFT the batter again into a bowl. This will make sure you get a smooth cake after.
14. Pour the batter into an oiled steam proof pan. Flatten any bubbles on the top surface with a toothpick. Cover the pan with a foil paper or plate to prevent condensation drippings.
15. Steam for 1 hour to 1 ½ hour depending on the thickness of your batter in the pan. Prefer to over steam instead of under steam.
DO NOT steam on high heat to prevent bubbles formed on the top surface of your cake when done.
16. The cake is done when you stick a bamboo stick into the center of the cake and comes out clean.
17. Garnish with a red date by placing it in the center of the cake.

"Aomori, Japan. 1936. Prisoner Yoshie Shiratori had had enough. He was forced to confess to a murder he did not commit, falsely imprisoned in Aomori Prison, beaten and tortured every night by prison guards, and, now worse, prosecutors were seeking the death penalty. In his mind, it was time to go; but Aomori Prison wasn’t the easiest to escape. Regardless, Yoshie Shiratori had nothing to lose, and so at 5:30 am he made his move. He knew there would be a 15 minute gap in the patrol time as he had studied the guards’ routine for months; and when the coast was clear, he pulled out a metal wire (which he had smuggled in from the bathhouse) and started to pick the lock. (This was originally the metal support ring that was wrapped around the bathing buckets inmates used to wash themselves). His hands were stiff from the wintry cold, but after a few minutes of picking, he had success, and his cell door swung open. But he wasn’t out of the woods yet, because there were more locked doors ahead. He knew he only had a few minutes left before the guards would return, and so he wasted no time attempting to pick his way through the remaining security doors. Now fortunately for him, he was able to make it out of the facility, but the bad news was that he was only halfway to freedom. You see, he was still well within the search perimeter, which meant at any moment the alarm could go off and he’d still be caught. At 5:45am the guards returned, peering into his cell; and this is what they saw - Shiratori sound asleep in his futon bed..."

The stick is actually a cookie! It's so big, that we recommend slicing it up and sharing it with friends and family.
Recipe: (1 liter milk carton for one bar)
1. Add 10 gm of blue Hawaiian syrup to 75 gm of sugar cider.
2. Pour in 1 to a one liter milk carton
3. Place it on its side and freeze for one hour. It takes about two hours to harden
4. Make 1 again and pour into 3. Place it on it side again, this time the opposite side and refreeze
5. make 1 again and pour 70 gm of it into 3. Place it on its side and freeze
6. Repeat 5 again to make four sides for the soda ice.
7. Make a soda ice mix using half of the portions for 1. Put 35 gm of it into 6, this time while the carton is standing.
8. Put 15 gm of sugar into two eggs and whip well on a vessel heated in warm water at about 50 degrees to making a foam. Take out the eggs from the vessel once they are warm.
9. add 15 gm of sugar to 135 gm of fresh cream. Add a few drops of vanilla essence and make a foam. Make it so that it's a little harder than 8.
10. break 9 down to portions of one-third each and add to 8. Mix quickly so that the foam doesn't disappear.
11. Pour 10 into 7 and freeze.
12. After an hour, insert the cookie into the bar. Cookies that are about 2 cm wide would be the most suitable size.
13. After 3 hours, tear the milk carton and take out the ice cream bar.
14. It's really filling because it's so big. It's not too sweet so you could add more sugar according to your preference (up to 45 gm).

*レシピ*(1リットル用の牛乳パック 1個分)
1.ブルーハワイシロップ 10gに加糖サイダー 75gを入れる。
2.よく洗った、1リットル用の牛乳パックに1を流し入れる。
3.倒して冷凍する。2時間弱で固まる。
4.1を再度作り、3に流し込み、反対側面に倒して冷凍する。
5.1を再度作り、3に70g分 流し込む。倒して冷凍する。
6.5を再度繰り返し、4面のソーダアイスの壁を作る。
7.1の半量でソーダアイス液を作り、6に35g分 流し込み、今度は立てて冷凍する。
8.卵 2個に砂糖 15gを入れ、50度はどの湯煎にかけながらしっかりと泡立てる。途中、卵が人肌に温まったら湯煎から外してよい。
9.冷やしておいた、生クリーム 135gに砂糖 15g、バニラエッセンス 数滴を入れ泡だてる。8のより少し硬いくらいまで泡立てる。
10.9を8に1/3ずつ加え、泡を消さないように手早く混ぜる。
11.10を7に流し込み冷凍する。
12.1時間程経ったら、バーに見立てたクッキーを差し込む。2センチ幅のものがサイズ感がちょうどよい。
13.さらに3時間冷凍したら牛乳パックを破いてアイスバーを取り出す。
14.でかいから食べごたえあるよ。甘さ控えめのできあがりなので、バニラアイスの砂糖をお好みで増やして(〜45gまで)作ってください。

Directions:
((Sauteed Shimeji Mushrooms and Peppers with Shio-Kombu))
1. Remove tough base of Shimeji mushrooms and break into pieces. Slice the peppers.
2. Heat sesame oil in a frying pan and saute the Shimeji mushrooms and the peppers.
3. Cook until softened and season with Shio-Kombu.

((Fish Sausage Strawberries))
1. Slice fish sausage and cut into a strawberry shape with a design knife.
2. Cut and make zigzag Edamame halves for the strawberry hulls.
3. Attach the Edamame hulls to the fish sausage strawberries with bits of spaghetti pasta. (pasta will absorb moisture from fish sausage and gets soft after few hours, so you can eat it by lunchtime!)
4. Arrange some black sesame seeds for strawberry seeds with tweezers.
((Usuyaki Tamago Egg Crepe Flowers))
1. Beat an egg in a bowl and season with Yamaki Kappo Shirodashi (a bit of salt and sugar is fine).
2. Heat cooking oil in a tamagoyaki nabe (rectangular omelet pan) on low heat, pour the egg mixture in the pan and spread over the surface.
3. Cook the egg until the edges begin to dry, then flip it over and cook the other side for about 10 seconds. Leave it to cool completely.
4. Cut the egg lengthwise, fold in half lengthwise, and make vertical slices on the folded side.
5. Roll up the egg and attach it with a bit of spaghetti pasta.
((My Melody Onigiri Rice Ball))
1. With a permanent marker (Sharpie), trace your favorite My Melody illustration on the parchment paper and cut it out.
2. Pile up some steamed rice, cover with plastic wrap, place the My Melody stencil, and shape it with your fingers. Pinch and create chiseled jaw, because you want to draw a clear outline where you don't put the ham on top.
3. Place the My Melody stencil on a slice of ham and wrap with plastic wrap. Cut out the hood and the folded ear with eyebrow scissors.
4. Use the Character Nori Punch to cut out eyes and mouth. (you can also use eyebrow scissors)
5. Cut out and place the My Melody's flower hair accessory stencil on a slice of cheese. Use a design knife or a toothpick to cut carefully around the stencil. Cut out a slice of cheddar cheese to make a core of the flower and a nose.
6. Place the side dishes and the rice in a bento box. Then arrange the parts with tweezers.
