昨天,我和幾位新住民姊妹聚會,她們和我分享來自東南亞的點心,這些點心,運用了香蘭、椰糖、蝶豆花、越南白咖啡等食材,都有獨特的滋味,也讓台灣的美食文化變得更精采了。
這幾年我走訪各縣市,常遇到很多認真又有才華的新住民朋友,他們來到台灣,成為了台灣人,也成為家庭和產業的中堅,讓我們的社會越來越多元、茁壯。我除了感謝,也在政策上積極努力,保障新住民的權益、重視新住民子女的教育。

屋企無晒蛋,個仔想食早餐,今日教大家無雞蛋無油的椰糖蒸糕👍👍
材料
📌 椰糖250克
📌 水175ml
📌 班蘭油2滴
📌 椰奶125ml
📌 麵粉300克
📌 泡打粉1茶匙
📌 梳打粉1/8茶匙
做法
1. 椰糖切碎,之後放入小鍋內,加入水,開慢火,邊煮邊用手動打蛋器攪拌椰糖,令椰糖溶掉。椰糖差不多溶掉,就要熄火,之後再攪勻直至椰糖完全溶掉及降溫。
2. 泡打粉和梳打粉放入麵粉內,拌勻。
3. 準備另一個鍋,把已溶掉的椰糖水過篩,如果篩上有未溶掉的椰糖,再用手動打蛋器在篩上攪拌至溶掉及冷卻些少。
4. 把椰奶全部倒入椰糖水內,攪拌均勻,再加入班蘭油,再攪拌均勻。之後把麵粉分兩三次用篩篩入椰糖內,不斷攪拌均勻,直到沒有粉粒。
5. 準備曲奇紙杯托(如曲奇紙杯托太軟身要用鐵杯托盛著),倒入椰糖漿,每杯大約8成滿,之後一杯杯放入大蒸籠內,再放入鍋內蒸20分鐘。即成。

食譜中的材料,大部份能在東南亞或泰國雜貨店舖買到,有時也可以在大型的超市找到?
⭐️羅望子醬:味道酸酸帶有果香,可以代替部份的青檸味道,如果買不到,也可以用酸梅去代替,以上兩者能令味道大大地提升
⭐️棕櫚糖:淡黃色的,泰國店舖會稱它做「椰糖」;而椰糖是較深色,兩者都可以用,或直接用砂糖亦可
材料:
乾蔥 3粒
辣椒 8隻
蒜頭 5粒
芫荽莖 5棵
青檸 6個
檸檬葉 3片
香茅 1支
棕櫚糖/椰糖 1湯匙
魚露 2湯匙
羅望子醬 2茶匙
飲用水 2湯匙
1. 檸檬葉撕去中間的硬莖;芫荽切掉根部;辣椒切粒;蒜頭和乾蔥去皮
2. 香茅切去較硬的根部,撕掉外面的葉子,只保留中間的嫩芯,把它切開
3. 青檸切開,搾出青檸汁,把青檸的籽隔掉
4. 全部材料,加入棕櫚糖、羅望子醬(或可用青檸汁代替)、魚露、飲用水,放入攪拌器攪碎
5. 把製成的汁料放入已消毒的玻璃瓶,並放於冰箱冷藏,食用期為3個月 (因為存放久了顏色變得深色,可能影響味道)
**芫荽只要莖,不要葉子,因為葉子會令汁料變得很深色
**如沒有攪拌器的話,請盡量將材料切碎,味道才會出來

Muah Chee (or 麻糍 in Chinese) is a traditional Hokkien snack. In the past, this simple Chinese snacks can be found almost anywhere in Singapore. If you have tried Japanese mochi before, Muah chee is somewhat similar to it in terms of texture but you can see from the picture above that it looks nothing like Japanese mochi. Instead of being shaped into a real ball like Chinese tangyuan, muah chee is roughly cut up into bite sizes and coated generously with grounded peanuts and some sugar. Although it is not difficult to make muah chee, a good muah chee should be chewy and the proportion of muah chee vs peanuts & sugar should be appropriate. By cooking muah chee with shallot oil, you're also giving it a very nice and soft fragrance in every bite . Try making muah chee at home today. It's really simple.

10 pcs of shallots - sliced
Glutinous rice dough
---------
1 cup of glutinous rice flour
200ml of water
1 tablespoon of shallot oil
Other ingredients
---------
Some peanuts - grounded finely
Some sugar - adjust sweetness yourself but muah chee isn't overly sweet.
