酸菜魚
材料: 桂花魚或其他魚,帶甜咸酸菜,大豆芽 ,泡椒 ,辣椒干,花椒 ,薑,蔥,紅辣椒,花椒
醃魚肉味料: 鹽少許,一隻蛋白,胡椒粉少許
做法: 1 燒熱鑊落油,猛火煎香魚骨,鹽少許,加滾水煮至湯濃白隔起魚骨
2 魚肉加鹽拌勻至感覺有些膠質後加一隻蛋白,胡椒粉少許拌勻待用
3 咸酸菜片薄切塊,白鑊炒至乾身
4 落油將薑絲,蔥頭,泡椒,大豆芽,咸酸菜炒香
5 開火煲熱魚湯落魚肉加鹽,菇粉各少許稍滾,魚肉鏟起放做法 4 面上,繼而淋上魚湯加一匙白醋
6 燒熱鑊落油爆香辣椒干及花椒後倒入酸菜魚湯內,紅椒粒,蔥花飾面

Hot and Sour Fish Soup with Pickled Mustard Greens
(YouTube video starts at 1:33.)
Ingredients:
Fish - 1 large sea bass (or your choice of fish)
(Separate the meat from the bones and head. Thinly slice the meat at 45-degree angle into bite size pieces. For larger pieces, make a slit in the center of each slice. Set aside.)
Chinese pickled mustard green (“syun choi” or “hum choi”) - 1 package
(Important to choose ones that are SWEET tasting instead of salty.)
(Slice horizontally into half then slice vertically into pieces. Pat dry then pan fry them without oil until dry and fragrant. Transfer to a bowl. Set aside.)
Chinese pickled green chili (“pao jiao”) - 1 jar
Ginger shreds
Garlic pieces
Bean sprouts
Salt - to taste
Mushroom seasoning powder - to taste
White vinegar - 1 tbsp
Potato starch noodles or glass noodles “fensi” - optional to add into the soup
Fish soup base ingredients:
Fish bones
Fish head
Ginger slices - for frying the fish bones and head
Ginger slices - for making the soup
A dash of salt
Very hot boiling water (to make the fish soup creamy white)
Marinade fish meat ingredients:
Salt - a dash
Egg white - 1
White pepper - a dash
Garnish ingredient:
Dried chili
Sichuan peppercorns
Green onion pieces
Fresh red chili pieces
Sichuan peppercorn oil
Methods:
1. In a bowl, add in all the fish meat, a dash of salt, and thoroughly mix until slightly sticky. Add in 1 egg white, a dash white pepper, and mix well. Set aside.
2. Heat up a wok to very hot and add oil. Sprinkle in a dash of salt, add in ginger slices, and add in fish bones and head to make the soup base. Fry them until fragrant and golden brown on HIGH heat, and remove the ginger slices.
3. Add in very hot boiling water, add ginger slices, and bring it to a boil and cook until creamy white. Turn off heat and remove all the fish bones and head and pour the soup through a strainer into a bowl.
4. Return the soup back to the wok and add in marinated fish meat prepared in Step 1 and simmer until cooked. Add in salt and mushroom seasoning powder to taste. Set aside.
5. Heat up a wok, add in oil. Add in ginger shreds, garlic pieces, Chinese pickled green chili, and stir fry until fragrant. Add in bean sprouts, Chinese pickled mustard greens, and mix well. Add in cooked fish meat and fish soup.
6. Drizzle in 1 tbsp of white vinegar.
7. Heat up a separate frying pan, and add oil. Add in dried chili, Sichuan peppercorns, and pour on top of the soup.
8. Garnish with fresh red chili and green onion pieces.
9. Drizzle Sichuan peppercorn oil on top.

材料: 牛肉,青紅辣椒,咸菜
香料: 薑一片,蒜一粒
醃料: 糖少許,胡椒粉少許,鼔油,生粉適量
做法: 1 牛肉先醃備用
2 落油爆香薑,蒜,青紅辣椒,落牛肉炒,最後加咸菜炒勻即可
備註: 咸菜有二隻,一帶甜,另一帶咸,今次是帶甜

Stir Fried Beef with Pickled Mustard Greens

Ingredients:
Beef steak slices
(You can replace with beef tenderloin or pork.)
Chinese pickled mustard green (“syun choi” or “hum choi”) - 1 package
(Important to choose ones that are SWEET tasting instead of salty.)
(If you are using the SALTY type, just add more sugar.)
(Slice horizontally into half then slice vertically into pieces. Pat dry then pan fry them without oil until dry and fragrant. Transfer to a bowl. Set aside.)
Red and green sweet bell peppers - sliced
Minced ginger
Minced garlic - 1 clove
Marinade beef ingredients:
Cooking oil
Sugar
Light soya sauce
White pepper
Corn starch / flour
Methods:
1. In a bowl, add in sliced beef steak, cooking oil, sugar, light soya sauce, white pepper, corn starch, and mix well. Set aside.
2. Heat up a wok, add oil. Add in minced ginger, minced garlic, red and green sweet bell pepper slices, marinated beef slices, and briefly stir fry until fragrant. Transfer to a bowl. Set aside.
3. Heat up the wok, add Chinese pickled mustard greens. Optional to add sugar now if you find it salty.
4. Return the partially cooked beef back to the wok, and mix well. Transfer to serving plate. Serve.

芒果棷汁糕
材料:
凍滾水 250 ml
奶 250 ml
魚膠粉 35 gr (可改用魚膠片5-6片)
沙糖 100 gr (可依個人喜好加減)
棷奶 1罐
芒果 2-3個
做法:
1. 凍滾水、奶 、魚膠粉、沙糖放入煲內,開中大火煮,邊煮邊輕輕攪拌至魚膠粉和糖完全溶解。
2. 加入棷奶,攪拌至混合後關火,放涼備用。注意:加入棷奶後不要煮太久,以避免油水分解。
3. 芒果去皮切粗條或粗粒,排放入糕盆內,倒入已放涼棷奶混合液,蓋好後放入雪櫃雪至硬身便可

Mango Coconut Pudding
(YouTube video starts at 35:35.)
Ingredients:
Drinking water - 250ml (do not use tap water)
Milk - 250ml
Gelatin powder - 35g (or replace with agar agar)
Sugar - 100g or to taste
Coconut milk - 1 can
(Add in last to avoid the oil separating, which will result in two layers when pudding is set.)
Fresh mangos - cut into your choice of designs. (Cubes or strips or floral.)
(Cut into THICK pieces to avoid pieces from moving.)
Methods:
1. In a cooking pot, add in drinking water, milk, gelatin powder, sugar, and cook until sugar and gelatine have melted and little bubbles appear by continue stirring.
2. Add in coconut milk and taste test for sweetness.
3. Let it cool down to room temperature.
4. In a mould, add in fresh mango pieces on the bottom layer then pour coconut milk mixture on top.
5. Put in the refrigerator to set.
6. Cut into cubes. Serve.
To create mango layers:
Optional to layer mango pieces on the bottom of the mould then refrigerate until they are a bit dehydrated and stick to the mould. This is to prevent them from moving or floating.
Once the mango pieces are set on the bottom of the mould, pour half of the coconut milk mixture in and set in the refrigerator for about 30 minutes.
After 30 minutes, or once the pudding is set, add the remaining mango pieces, coconut milk mixture, and refrigerate it until set and firm. You may create more than 2 layers.
Once set, loosen the pudding from the mould and transfer to a serving plate with the bottom of the pudding facing upward displaying the mango pieces design. Slice and serve.

🇬🇧Glutinous rice balls (custard, black sesame, and sweet purple potato flavors) in sweet purple potato mixed with coconut milk - nice one but I’d prefer the ginger soup with glutinous rice ball. Actually it’s also served with Sago but sadly it’s not available today😭. I think Sago with this sweet purple potato coconut milk would be very nice ! @sugarcraver

中秋芋圓(芋圓湯圓):
材料:
紫薯170克
南瓜170克
木薯粉200克
甜味料:
蜂蜜、椰漿、鮮奶
雪糕、紅豆、薑糖
(隨意加入)
處理:
1. 紫薯,洗淨,刨皮。
2. 南瓜,刨皮。
3. 紫薯及南瓜切薄片。
4. 煲滾3升水,大火蒸紫薯及南瓜12分鐘。
5. 另一邊,煲滾1升水,放薑片及半塊片糖煲糖水。
6. 放50克木薯粉落碗,加入少量凍滾水。
7. 戴上透明膠手套,攪勻粉漿。
8. 取出紫薯及南瓜。
9. 壓爛紫薯,加入粉漿,攪勻。
10. 戴回膠手套,逐少量逐少量加入薯粉,直至將紫薯搓至一個粉團。
11. 洗淨雙手,灑少許木薯粉在砧板上,輕手上下上下的搓粉團成粗條狀,切開一吋一粒,搓粉團至圓形。
12. 在芋圓上灑上木薯粉,避免黏在一起。
13. 篩出多餘的木薯粉。
烹調:
1. 大火煲滾水,水滾後,放芋圓落煲,滾至浮起,加入少量凍滾水,等再次浮起。
2. 預備一碗冰水。
3. 芋頭再次浮起,撈起即時放入冰水。
4. 擎乾水,分配好芋圓。
5. 加入蜂蜜,或加椰漿,或加入薑糖水,任君選擇。
Taro tong yuen sweet soup :
Ingredients:
Purple sweet potato 170g
Pumpkin 170g
Tapioca starch 200g
Sweeteners:
Honey, coconut milk, fresh milk, ice~cream, red bean or ginger sugar (just choose one flavour you like)
Preparation:
1. Purple potato, rinse and peel.
2. Pumpkin, peel.
3. Purple potato and pumpkin, thinly slice.
4. Boil up 3L of water, steam sweet potato and pumpkin at high flame for 12 minutes.
5. On the other side, boil up 1L water with ginger slices and half slice of slab sugar. Get ready for the sweet soup.
6. Put 50g of tapioca starch into a bowl. Mix with little cold boiled~up water.
7. Put on transparent gloves, mix well the tapioca sauce.
8. Take out the purple potato and pumpkin.
9. Squash the purple potato, mix well with tapioca sauce.
10. Put on the gloves, add tapioca starch little by little until a dough can be made.
11. Rinse your hands thoroughly. Put little yapioca starxmch on chopping board Roll the dough, then cut into size, 1" , 1", then make it in round shape.
12. Pad some tapioca starch on the dumplings avoiding stick together.
13. Filter the excess tapioca starch.
Steps:
1. Boil up a pot of water at high flame. Put taro tong yuen into the pot after water boils up. Wait for the dumplings flows up. Add little cold boiled~up water. Waits for boil up again.
2. Get ready for a bowl of iced water.
3. Taro flow up again. Pick them up then put into iced water at once.
4. Hang dry. distribute the food equally.
5. Add honey, coconut milk or ginger sweet soup. Just choose one that you like.

Soto (also known as sroto, tauto, or coto) is a traditional Indonesian soup mainly composed of broth, meat and vegetables. Many traditional soups are called soto, whereas foreign and Western influenced soups are called sop. Soto is sometimes considered Indonesia's national dish, as it is served from Sumatra to Papua, in a wide range of variations. Soto is omnipresent in Indonesia, available in many warungs and open-air eateries on many street corners, to fine dining restaurants and luxurious hotels. Soto, especially soto ayam (chicken soto), is an Indonesian equivalent of chicken soup. Because it is always served warm with a tender texture, it is considered an Indonesian comfort food.
Some sotos are named based on the town or region where they are created:
Ambon soto – made of chicken and broth, flavored and colored with turmeric, ginger, galangal, garlic, lemongrass and loads of spices. Served with rice, the toppings are blanched bean sprouts, shredded chicken, vermicelli, chopped celery leaves, golden fried shallots, fried potato sticks, kecap manis (sweet soy sauce), hot sauce, and potato croquettes.
Bandung soto – a clear beef soto that has pieces of daikon
Banjar soto – spiced with star anise, clove, cassia and lemongrass and sour hot sambal, served with potato cakes
Banyumas soto, sroto Banyumas or sroto Sokaraja – made special by its peanut sambal, usually eaten with ketupat
Betawi soto – made of beef or beef offal, cooked in a whitish cow milk or coconut milk broth, with fried potato and tomato
Kediri soto – a chicken soto in coconut milk
Kudus soto – made with water buffalo meat due to local taboos of the consumption of beef
Lamongan soto – a popular street food in various Indonesian metropolitan areas, a variation of the Madura soto
Madura soto or soto Sulung/soto Ambengan – made with either chicken, beef or offal, in a yellowish transparent broth
Makassar soto or coto Makassar – a beef and offal soto boiled in water used to wash rice, with fried peanut
Medan soto – a chicken/pork/beef/innards soto with added coconut milk and served with potato croqutte (perkedel). The meat pieces are fried before being served or mixed.
Padang soto – a beef broth soto with slices of fried beef, bihun (rice vermicelli), and perkedel kentang (fried mashed potato).
Pekalongan soto or tauto Pekalongan – spiced with tauco (a fermented miso-like bean paste).
Semarang soto – a chicken soto spiced with candlenut, mixed with rice, perkedel, tempe, and often eaten with sate kerang (cockles on a stick) or tripes and quail eggs. Soto Semarang is also known as Soto Bangkong, named after Bangkong crossroad in Semarang.
Tegal soto or Sauto Tegal, almost same with Pekalongan soto spiced with tauco (a fermented miso-like bean paste). Sauto can be chicken soto, beef soto, or even beef offal.
Soto ayam with clear yellow broth, garnished with emping crackers and fried shallot.
Other sotos are named based upon their chief ingredient:
Soto ayam – chicken in a yellow spicy broth with lontong, nasi empit, ketupat (rice compressed by cooking wrapped tightly in a leaf, then sliced into small cakes), or vermicelli, commonly found in Indonesia, Singapore and Malaysia. Some versions are prepared with cellophane noodles.
Soto ceker – a chicken foot soto, served in rather clear yellowish spicy broth soup, which uses spices including shallot, garlic, lemongrass and turmeric that add the yellowish colour, served with of cabbage, celery, rice noodles, and garnished to taste with sambal, lime and soy. Soto ceker is one of the popular street food in Jakarta, Bali, and most of major cities in Java. In street side warung or humble restaurants, soto ceker is usually offered as a variation of soto ayam.
Soto babat – a cow's or goat's tripe, served in yellow spicy coconut milk soup with vermicelli, potato, and vegetables, usually eaten with rice. It is commonly found throughout Indonesia.
Soto kaki (lit. "foot soto") – made of beef cow's trotters; tendon and cartilage taken from cow's feet, served in yellow spicy coconut milk soup with vermicelli, potato, vegetables, and krupuk, commonly eaten with rice. It is Betawi food and can found in Jakarta, Indonesia.
Soto tangkar – also Betawi specialty soto made of chopped goat or beef ribs (Betawi:tangkar) and beef brisket cooked in coconut milk soup spiced with turmeric, garlic, shallot, chili, pepper, candlenut, cumin, galangal, coriander, cinnamon, Indonesian bay-leaf and kaffir lime leaf.
Soto mi (spelled mee soto in Singapore and Malaysia) – a yellow spicy beef or chicken broth soup with noodles, commonly found in Indonesia, Singapore and Malaysia. Bogor, Indonesia, is famous for its soto mi made with beef broth, kikil (cow's cartilage), noodles, and sliced risoles spring rolls.
Soto babi – a pork soto from Hindu majority Bali island.
