Taking me some time to pen up【Bibi & Baba, Wanchai, HK 🇸🇬🇭🇰】, but my own legit reason is highlighted below as it's not easy to explain. In fact, I felt this was one of the Best New 2020 Openings in early October in HK! When dining here I actually felt so moved by the 'precision', 'complexity' of flavors to be unlocked within every bite of each dish here. I thought instantly that on a relative scale, this was equivalent to a Michelin 1 🌟 in this genre of food level good..

•Nyonya Laksa Lemak 娘惹叻沙 $108. I won't bore anyone with how it's all Peranakan/Nyonya with Malaysian, Singaporean or Indonesian plus Chinese influence sorts of things. One can read up on that history separately.
What I wanted to say is, TRUST my suggestion: Eat this Laksa 1st when you arrive, before u touch the Appetizers, or the Main Courses. 第一件事, 先叫同食咗呢一碗喇沙, 先再食其他嘢. Except for probably an Otah/Otak to pair.

The reason is because the 'Layerings' beneath this Laksa, Broth, Spices, Herbs etc are so balanced. It's totally soul moving material, kind of like a Grand Cru version of a Burgundy in Laksa form! It's not designed to be smack in your face, but created almost for its only solemn existence, kind of enjoyed like how Japan Ichiran ramen 一蘭拉麵 forces u to eat behind closed curtains. You start directly from this bowl, & finish every sip of it in its holistic entirety, b4 you venture onto other dishes. I wouldn't say it's subtle either (I.e. Rxxpxh is subtle), but all the perfect balance of Nyonya hearty spirit extracted flavors are swimming inside the bowl here waiting for you to discover!
This is serious high end, stone & mortar artisanal stuff!! The other best comparable Laksa I have eaten recently is probably Barry Quek's version at Return of Lemak, but they do have different base stylistic approaches. If you eat this together with other heavier dishes at the same time, the palate instantly gets murked & swamped. Every time that happened, it took me many sips of the Laksa Broth to reset the palate & olfactory sensitivity, to thoroughly enjoy this amazing bowl again! 🥣 Best in Town, and that fragrance!

Ingredients:
Serves 4 pax
Sambal chilli

50g of dried shrimps (soaked in 1 cup of water)
200g of shallots
30g of garlic
20g of ginger
1/4 cup of cooking oil
25g of dried chilli - hydrated & deseeded
150g of fresh red chilli - deseeded
4 stalks of lemongrass (use only white part)
50g of dried toasted belacan
1 cup of dried shrimp soaking liquid
0.5 cup of cooking oil
2 teaspoons of sugar
Other ingredients / stuff needed

440g of stingray
1 piece of banana leaf
1 piece of baking paper
1 piece of aluminium foil
Some calamansi
Bake for 20 mins at 200C or until fish is cooked.

You gotta try this Sambal Chilli recipe. This is really very good. Roland and I love to eat at this stall along Braddell Road in Singapore that serves up really really good Sambal Stingray and Sambal Sotong. Unlike some stalls in Singapore, this stall is very generous with their sambal chilli so that every bite of the fish or sotong always have sambal chilli. You can even request more sambal chilli from them and they won't even show you a black face or reject you. Nice people! Roland has created this sambal chilli and sambal sotong recipe using their chilli as reference. I would say his recipe is pretty spot on and if you're a lover of sambal chilli dishes, you really gotta make a batch of the chilli at home so that you can just eat it with rice or use it to cook other dishes.

Otah-Otah (or simply known as Otah or alternative spelling as otak-otak or 乌达 in Chinese) is a Nyonya (could be Malay too) dish commonly found in countries across Southeast Asia, especially in Singapore, Indonesia and Malaysia. This spicy grilled fish cake is a mix of ground fish meat and spices. Traditionally served fresh, wrapped inside a banana leaf or coconut leaf, otah can be eaten on its own as a snack or with rice as part of a meal.

Makes 10 pieces
300g of mackerel or any white fish w/ little bones
100g of shallots
4 cloves of garlic
10 pcs of dried chilli - deseeded & hydrated
2 pcs of red chilli - deseeded
20g of galangal (aka blue ginger)
2 stalks of lemongrass (use only the white part)
8 pcs of kaffir lime leaves
15g of dry roasted belachan
1 teaspoon of turmeric powder
1 tablespoon of curry powder
1 teaspoon of sugar
1.5 teaspoons of salt
2 egg white
1 teaspoon of cornflour
1 tablespoon of rice flour
250ml of coconut milk
Some banana leaves
A few toothpicks
Bake at 200 degree Celcius for 20 mins (10 mins on each side)
