Haku's full name is Kohaku (琥珀), which is the color amber.
The kanji Haku (珀) is made of two parts: the left half means king (like Haku's mane) and the right means white. So, Haku also stands for his white lion's mane. :D
He's a Maine coon, and was born in January of 2015. Since Maine coons don't finish growing for 2-3 years, even as big as he is at a year and a half old right now he's still not done growing!

Today we make a traditional Japanese candy from sugar and agar called Kohaku-to. It is old-fashioned candy indeed but surprisingly easy to make. It's got an interesting texture where the outside is crunchy and the inside is jelly-like. And above all, it's really pretty looking! You can put any color and flavor you'd like in it. If you got one of those ring-shaped food picks, you can shape the candy into like Ring Pops.
*Recipe*
1. Leave 5g of string agar in a bowl full of water over night.
2. Have a mold out and ready. If it's an ice tray you are using, thinly spread some salad oil across the surface. You can make the candy with a lunchbox-type of container also like the ziplock containers. In that case, you would also want to apply some salad oil or put some parchment paper at the bottom.
3. Thoroughly drain 1's water
4. Put 3. and 200ml of water in a cooking pot and heat it up.
5. Boil it down until the string agar is completely melted.
6. Put 300g of granulated sugar in a separate cooking pot.
7. Put 5 in 6 while straining it with a strainer
8. Stir it well.
9. Start heating up 8, and slowly boil it down to avoid burning it.
10. Boil it down until it is think and does not snap like a string when you scoop it up.
11. Take it off the heat.
12. Pour out 11 into the mold prepared in 2.
13. Color 12 with liquid food coloring.
14. Let it sit until it congeals. It congeals in a room temperature.
15. After about a day, when you see the surface of the candy covered with a thin layer and is no longer sticky, remove it from the mold to parchment paper. If you made it with a lunchbox-like container, you can use molds or a knife to cut them into pieces. You can eat the candy if you'd like already at this point.
16. And after about another day, when you see the layer covering all over the candy, it is done!
琥珀糖作りました。琥珀糖は寒天と砂糖で作る日本の伝統的な和菓子です。伝統的な和菓子ですが、意外と簡単に作ることができます。（妄想グルメ、１回失敗しましたが・・・）外側はシャリシャリ、中はゼリー状で面白い食べ心地です。そしてなんといってもキレイ！好みの色やフレイバーをつけて楽しんでください。指輪型ピックをつければRingPopsみたいになります。日本だとリングポップ・プチですな。
*レシピ*
１．糸寒天 5gは、前日からたっぷりの水につけておく。
２．型の準備をしておきます。製氷皿・アイストレー等の場合はサラダ油を薄くぬっておきます。ジップロックコンテナーなど お弁当箱型でも作れます。その場合もサラダ油を薄くぬるか、オーブンペーパーを敷きこんでおきます。
３．１の水をよく切る。
４．鍋に３と水 200mlを入れ、火にかける。
５．糸寒天が完全に溶けるまで煮る。
６．別の鍋にグラニュー糖 300gを入れる。
７．６に５を網で漉しながら入れる。
８．全体を混ぜる。
９．８を火にかけ、焦がさないように静かに煮詰める。
１０．すくうと糸のように途切れずにたれる状態まで煮詰める。
１１．火からおろす。
（フレーバーエッセンスでの香り付けや全体を着色する時はここで！）
１２．１１を２で準備した型に流しこむ。
１３．１２に液体食用色素で着色する。
１４．そのまま固める。常温で固まります。
１５．約1日後、表面に薄い膜が張り、ベタつきがなくなったら、オーブンペーパーに型から取り出す。お弁当箱などで固めた場合は、形で抜いたり、包丁で切り分ける。この時点で食べることもできます。
１６．その約1日後、全体に膜が張ったら完全体のできあがり！
１７．こんなん、食べたことあるでしょ？でしょ？家で作れるんだね。初めて知った！
上記レシピで、動画内の型で2回分の分量です。常温で2週間ほど日持ちするそうです。プレゼントなどにもいいですね、梅雨でなければ。。。
１３での着色をかき氷シロップでやったら膜が張らずに失敗してしまいました。ご参考までに。

I'm not DIY professional. Just cat lover...professional. Our walls have had enough of Haku's scratching so I made a DIY corner scratching board so he can't scratch the wall anymore. If you can pay close attention in the video you can also see that we have space for the living room's sliding door to shut right behind it, which was also intentional because Poki (our other cat) likes to open it and go inside when we don't want him to. But first, you need to see what kind of scratching boards you can find where you live and measure them so you know how large to make your scratch pad frame. Adjust the measurements accordingly. Also, I used glue for wood to stick pieces together in addition to the nails. Because the scratching boards can be removed easily you can turn them around, and upside down, to make sure the cats make full use of them before throwing them away.
