Königsberger klopse （柯尼斯堡丸子) 食谱來了☺️
食譜來自於婆婆👩‍🍳
德國通常是配馬鈴薯，如果你们想要配飯，配麵類也OK喔。☺️👌

💫肉丸子（For the meatballs) 💫
材料(Ingredients) ：
500g 牛絞肉 (500g beef minced meat)
2顆雞蛋 (2 eggs)
3片月桂葉子 (3 Bay leaves)
3片浸泡過水的白麵包 (3 soft soaked toast)
60g麵包粉 （60g Bread crumb )
少許鹽巴和胡椒 （some salt and pepper)

白醬汁 （White sauce)
材料 （Ingredients ）:
1 湯匙牛油 ( 1tbsp Butter)
30g麵粉 (30g Flour)
200ml 重奶油（200ml heavy cream)
60克 刺山柑（60g capers)
少許鹽巴和胡椒 （some salt and pepper)
1湯匙 糖 （1 tbsp sugar）

1. 把所有肉丸的材料都混合在一起，除了月桂葉子, 把肉揉成圓形形狀。
1. Mix all the ingredients for the meatballs, except Bay leaves,form the meat into a ball shapes.

2. 準備一鍋水，把月桂葉子放進去煮沸騰後，把肉丸放進去鍋裡煮大概15分鐘直到熟為止。煮熟後，把肉丸撈起，煮過的肉丸湯放著備用。
2. Prepare a pot with water, add in bay leaves bring to a boil. Put the meatballs into the boiling water, cook it around 15 minutes until fully cook.
After the meatballs is cooked, take out the meatballs,keep the meatballs soup for the gravy later.

3.把牛油倒進溫熱的鍋子裡面，把奶油化開，加入麵粉，一勺一勺慢慢加，同時快速攪拌，直到麵粉和牛油混合在一起後還是濃厚液體的狀況。把重奶油＋刺山柑＋一半肉湯加進去繼續攪拌直到濃厚。
💥貼士：醬汁太厚的話可以加点肉湯進去，醬汁太稀的話可以加入麵粉，加入麵粉時為了防止出現顆粒，請快速攪拌均勻。
3. Put the Butter into a warm pot, let the butter melt, add in the flour slowly, bit by bit,stir it fast at the same time. Until the butter and flour are mix well in a thick liquid form. Add in the heavy cream +capers+half of the meatballs soup into the gravy.
💥Tips: If the gravy is too thick, please add in some more meatballs soup. If the gravy is thin, you can add some flour into it. To avoid the gravy turn to lumpy, please stir it as fast as possible.

4. 最後把一湯匙糖，鹽巴＋胡椒加進醬汁裡面，再把肉丸加進去醬汁裡面, 小火煮5分鐘。起鍋前可以加入芹菜點綴。
4. Lastly add in the sugar, salt and pepper into the gravy, and follow by the meatballs, continue cook it for about 5 minutes with slow fire.
Before serve, put some parsley into it.

今天跟大家分享一位韓國粉絲朋友Won Woon Han的演奏，他演奏的曲目是OUR STORY .
知道這位朋友是好幾年前他為了要從台灣無英文網站購買樂譜(台灣購物網站都不國際化)，多次寫信到公司詢問，後來透過公司協助他終於買到了(而且之後他就知道怎麼買了)。
後來看到他常常分享自己的演奏影片，可以看出非常初學的程度仍然努力不懈的挑戰每一首曲目，而且踏板從來不踩也不換，但可以感受到他真心喜歡音樂。

後來我創辦的琴之翼 V.K克國際音樂大賽Wings of Piano V.K International Music Competition
改為網路免費報名，這位朋友也很熱情的報名參加。雖然面對來自世界各地的好手，仍然勇於參加而且非常具有運動家精神並享受這個比賽，令人驚艷的是，有一次我跟他說了踏板的問題，再後來的比賽影片中我發現他已經有所改善，而且持續進步中。參加這個比賽雖然沒有得獎，但是透過他的回覆留言，可以感受到他對於能參加這個比賽與大家交流，他感到非常的滿足，而我也從這些來自各地好手的許多故事而得到了正能量以及讓我更認為我是在做對的事。

這次是我首次看到他登台演出的影片，
我覺得非常的感動，而且對他持之以恆的毅力非常佩服。舞台上他彈奏的每一顆音符展現出來他的努力以及他的誠意，而且進步很多。(其實這樣進步神速的故事台灣參賽者也有許多，我都偷偷看到了。)對我來說，我從粉絲朋友們上面得到了許多正能量，我是幸福的，因此才能夠創作出帶給更多人美好的音樂，如紙飛機的冒險、Evolution era…等等。謝謝你們，讓我們一起欣賞這場在韓國的演出吧。

Korea, Math, P.E(physical education), Computer. < This subject is not problem for me.
But MUSIC is different.
Almost Music performance assessment is show my skill in front of many people.
I'm very scared, I don't know.
When i stand In front of many people, My all body is shiver, this is not light very very very very very harsh.
Don't stop I can't stop, I will not stop. I never stop my body !

Taiyaki

Difficulty: Easy
Time: 20min
Number of servings: 8-10

Ingredients:
150g (5.3oz.) cake flour
2/3 tbsp. baking powder
1 egg
180ml milk
40g (1.4oz.) sugar
250g (8.8oz.) Tsubu-an (sweet Azuki red bean paste with skins)

Directions:
1. Sift in cake flour and baking powder in a bowl. Add sugar and mix well with a whisk.
2. Add beaten egg and milk, then mix well with a whisk. (do not knead the batter)
3. Heat the Taiyaki pan, grease the pan with cooking oil, on low heat, half fill the pan with the batter. Then place the filling (Tsubu-an) in the middle of the batter. Cover the filling with some more batter.
4. Close the pan, cook on medium to low, flip it over occasionally for a few times until they are golden brown on both sides.

nutella goes great with red bean paste ;)

This recipe is for those who cannot get curry roux (curry sauce mix) but want to make Japanese Karē Raisu (Curry Rice) at home.

Also it is way healthier than using the roux since I didn't use any greasy fat ingredient!!!

Vegetarian people can skip the meat ;)

Japanese Curry Rice From Scratch

Difficulty: Easy
Time: 45min
Number of servings: 4

Ingredients:
300g (10.6oz.) lean pork
A
* salt and pepper
* 1/2 tbsp. curry powder
2 potatoes (300g=10.6oz.)
1/2 carrot (150g=5.3oz.)
1 onion (200g=7oz.)
600ml water
consomme cube (or bouillon cube) to make 600ml soup
B
* 1 clove chopped garlic
* 1 tbsp. chopped ginger
* 50ml red wine (you have no choice but skip it if you can't consume it)
* 1 tbsp. curry powder
* 1 bay leaf
C
* 1 tbsp. ketchup
* 1 tbsp. Worcestershire sauce
* 1/2 tbsp. soy sauce
1 potato (150g=5.3oz.)
salt and pepper
cooked rice

Directions:
1. Cut pork into bite-size pieces, then season with A.
2. Cut 2 (300g=10.6oz.) potato and carrot into bite-size pieces. Cut onion into wedges.
3. Place water and consomme cube (crushed) in a pot. Put on the heat, when the consomme cube has dissolved, add B and mix well. Then add the vegetables (2.) and bring to a boil.
4. Add the pork, remove the foam if necessary, add C, then cover and cook on medium for about 20 minutes.
5. Meanwhile, grate 1 (150g=5.3oz.) potato.
6. Season with salt and pepper. Then add the grated potato (5.) and cook until the soup thickens.
7. Serve the curry on a hot bed of rice.
