Whenever I go to Tainan and tell my friends they are jealous, In a good way. If Taiwan is a cake, then Tainan is definitely the cherry on top. And sorry, I won’t mention all the beautiful places to visit here. Also - I will skip the fabulous historical part. I will go straight to the point - FOOD!
Recently, I was invited by the Bureau of Economic Development, Tainan City Government and NCKU Research and Development Foundation to a 3-day trip, and visited 20 shops. You can always count on the kindness and hospitality of the Tainan people. But don't worry, If I was invited, my camera was invited too, and that means I did my best to show off those places, and now I will pay back those nice people, and I am going to invite you on the trip too; are you ready?
PART 01 - When in Tainan, eat as the Tainanese do! - A guide to flavorful, popular (and English speaking) places serving Tainan food!
Taiwanese food is just extraordinary. Everybody loves it. No doubt about it. But now, you need to know that Tainan is the oldest city in Taiwan and because of that - the variety of foods is richer here than anywhere else. So I will introduce a few places around Tainan where you can get local food. So take your chopsticks in the hand and let’s commence our mouth-watering journey around Tainan!
子龍點鴨 (Zi long dian ya)
As a person born and raised in Europe, I am not really used to eating ducks the way they are usually served in Taiwan. I don't really like messing with bones. But here was a great surprise! They prepare meals removing bones. They sell duck with dried noodles or rice, and also have plenty of side dishes, too. The most special one is duck feet with cucumber, which is really good. Another thing is - the restaurant is located in a typical Tainan style neighbourhood near the old street, so after the tasty dishes you can stroll around there for a while.
磨磨茶 (Mo mo cha)
It’s a chic tea house waiting for you in one of the narrow streets downtown in Tainan (walking distance from the train station). The owner showed and let me make my own matcha from dry tea leaves. Usually tea shops are supplied by whole suppliers (importing tea in bulk). However, this is not the case here - the owner’s family has run a tea plantation for 3 generations; you can taste and say - the tea flows through his veins! They serve a whole variety of delicious teas from Taiwan, for instance: high mountain green tea, oolong tea, tea with fruit juice, milk tea, and more.
The place has stunning interiors that are simple, but you can feel a Taiwanese coziness inside. Momocha is a great place to sit and relax, read a book. Just enjoy your gourmet teas and let time stop for a while.
Apart from the teas and drink you can also find here food, such as Gua Bao. If you speak a bit of Chinese you will know that Han Bao (漢堡) is a word for hamburger. Basically, it's a burger but instead of bread they use a steamed bun. If you are in Tainan it's a must try. :)
禾記嫩骨飯 (Hé jì nèn gú fàn)
This is one very special Chinese restaurant. This place is particularly famous in Tainan because it’s already become a chain. Actually, the dishes are very simple - such as rice and meat, but…. the devil is in the details, and in this case it’s the special way they prepare their meats. Of course, that's the chef's secret, but they're delicious. The flag dish is braised pork with soft bones. And indeed the bones are so soft that you can easily eat them! Apart from that you can find other dishes, such as Braised Pork Noodles.
三船熱炒100 (三船の鳗丼 Sānchuán de mán jǐng)
100 stir-fried Taiwanese traditional food. You can see a lot of places with number "100" on the street in Taiwan and especially at night there are crowds feasting there. The number 100 in the name is not an accident here - it’s the price of most of the dishes on the menu - around 100$. Apart from Taiwanese delicacies - such a pig heart, intestines and so on, you can also order typical Japanese meals - such as freshly made sashimi, sushi. It’s worth mentioning that the owner is an eel farmer, so if you love this kind of fish, you will find great quality unagi here!

唐太:「剛患上糖尿病,醫生說要注意食物的升糖指數,是否要吃無糖的食物?」
CheckCheckCin:「升糖指數」(Glycemic Index,簡稱GI)是量度各類含碳水化合物(醣質)食物在進食後對血糖影響程度的數值,食物中的碳水化合物在消化道分解後,會轉化成葡萄糖進入血液,血糖會因而上升,各種食物的轉化速度不一樣,高GI的食物較容易消化而轉化成葡萄糖,一般都是纖維含量低、精緻度高、較為稀爛的食物,例如白飯、粥、麵包、蛋糕、南瓜、薯蓉、果汁、砂糖等,故進食後容易出現高血糖情況;而精緻度低、富含膳食纖維、蛋白質的食物大多屬於低GI,例如糙米、燕麥、全麥麵包、意粉、蘋果、粟米、白扁豆、紅腰豆、牛奶、乳酪等,延長飽足感時間,有助控制血糖。
從中醫角度來看,低GI食物多為粗糧,故建議平日多食用,包括全穀類食品,例如燕麥、藜麥、蕎麥、小米、粟米、五穀米、全麥麵粉等;要注意烹調時間越長GI值亦越高,食物越軟爛,消化時間就越短,血糖會升得較快。

Get to know low GI foods
“I was recently diagnosed with diabetes, and the doctor asked me to take note of the Glycemic Index of the foods I eat. Does that mean I have to start taking sugar-free foods?”
CheckCheckCin: Glycemic Index (GI) is used to measure the effects of carbohydrates (sugars and starches) on blood sugar levels. Once the carbohydrates enter the digestive tract, they will be broken down into glucose that can enter the bloodstream, causing an increase in the blood sugar levels.
Different foods will convert to glucose at different rates. Foods with higher GI can be digested and turned into glucose more easily. They are normally lower in fiber, high in refined carbs, and are easily mashed. These include rice, porridge, bread, cake, pumpkin, mashed potato, fruit juice, and sugar. They might cause blood sugar levels to spike.
On the contrary, foods with a lower GI have lower refined carbs and rich in fiber and protein. Some examples are brown rice, oats, whole wheat bread, spaghetti, apple, corn, white lentils, kidney bean, milk, and cheese. These foods can keep us full for a longer period. Hence, they are effective in controlling our blood sugar levels.
From the perspective of Chinese Medicine, foods with lower GI are generally coarse grains, and Chinese medicine practitioner recommend consuming them on a regular basis. These includes all types of whole grains such as oat, quinoa, buckwheat, millet, corn, grain rice, and whole-wheat flour.
Do note that the longer you cook these foods, the higher the GI readings you will get, as they become mashed. This will also shorten the digestion time, causing the blood sugar levels to rise.

Her favourite (1️⃣st item) is "Dolphin 🐬 Fruits Koko Krunch Cup". What Sienny did is she told little niece, "Dolphin (banana) loves Koko Krunch" & she 👶🏻👀 can see that the dolphin actually bites a Koko Krunch in her mouth (Rostrum)

That actually makes her little niece finish the whole cup with banana 🍌 as her last fruit to chew 😀 Hurray‼️ Her simple trick works & her little niece now eats bananas because of dolphins, 1 of her favourite aquatic #animals. This cereal cup can be enjoyed by little ones just as it is, ie. Chewing the Koko Krunch & the fruits interchangeably or add in fresh milk 🥛 , cultured milk or yogurt 🍦 or ice cream 🍨(Any flavours) as #breakfast or anytime #snacks during the day

Ingredients: 7 inch round cake pan
For the base:
30g almond
40g rolled oats
30g oil
30g dates
For the filling:
150g cashew nuts
100g blueberry
130g sweetener
200g coconut milk
200g water
1 1/2 tsp agar powder(there's no substitution for this as this is coagulant)
2 tbsp kudzu starch(you could use other kind of starch or even skip this. starch gives a kind of chewy texture)
200g bluberry
Instructions:
1. put all the ingredients of the base into a container of food processor and blend well.
2. put the mixture in a cake pan evenly. bake at 350F/180C for 15 min.
3. put all the ingredients of the filling together and blend with high powder blender.
4. gently heat the mixture up with low to medium heat until it thickens.
5. place another 200g blueberries on the base then pour the filling mixture.
6. leave in a fridge for a few hours.

6、冷蔵庫で2〜3時間冷やしたら出来上がり。

As usual we wanted to make some interesting jellies. The colorful fruit sauce which you can make without cooking is perfect for a hot summer. Please try these with your favorite fruit. They are so tasty!
Recipe:Make jellies with an empty center. (10 balls, 3cm in diameter)
1. Put 5g of agar powder in a pot. (I used a "Homemade Cake jelly agar packet made from seaweed" from Kyoritsu-Foods.)

2. Pour 100ml of water over the powder little by little while mixing.
3. When the agar powder has completely dissolved, boil it.
4. When the mixture boils, turn off the heat.
5. Make sure your ice cube tray has no holes.
6. Pour the mixture into an ice cube tray. Fill each cube less than half way.
7. Cover the ice cube tray. Use rubber bands to keep the cover sealed.
8. Rotate the tray in iced water for approximately 5 minutes. Rotate it in all angles so that jelly covers the whole cube.
9. Cool them in the fridge.
Make the fruit sauce.
10. Blend your favorite fruit to a puree using a grater, food processor, mixer, or hand blender. Make a thin sauce in order to insert it into the jellies using a syringe. Making a sweet sauce suits jellies. You can use the syrup from the tinned fruit, or gum syrup to make it sweeter. We recommend adding lemon juice to give a kick to the taste and to stop it changing color.
11. Put the fruit puree into the syringe.
12. Insert fruit puree into 80% of the inside of the jellies. This amount creates a more beautiful jelly than when it is full.
13. Cool them well and enjoy them.
To tell the truth I ate all of them on my own as they were so tasty! I am sorry for my family as I did not share with them...
例によって、ただただ、作ってみたくてやってみました。火を通さないフルーツソースが鮮やかで夏にぴったり。不思議でキレイな冷たいスイーツできました。お好みのフルーツで作ってみてください。ただただ、おいしいです。
*レシピ*
中が空洞のゼリーを作ります(直径 3センチ✕10個)
1.鍋にアガー(今回は共立食品のホームメイドケーキ 海藻から生まれたゼリーの素 アガーを使いました)を5gを入れる。

2.水 100mlを少しずつ混ぜながら加える。
3.完全に溶けたら、火にかける。
4.沸騰したら火を止める。
5.製氷皿に穴がある場合は、テープなどで塞ぐ。
6.5に4を入れる。作りたい立体の体積の半量より気持ち少なめに入れる。
7.フタをする。フタが開かないように輪ゴムなどをするとよい。
8.7を氷水の中でぐるぐると5分ほど回す。一定方向だけでなく、タテ・ヨコ・ナナメと全体にゼリー液がいきわたる様に回す。
9.冷蔵庫で冷やしておく。
フルーツソースを作ります
10.お好みのフルーツをおろし器やフードプロセッサー、ミキサー、ハンドブレンダーなどを使ってピューレ状にする。注射器を通る濃度のソースを作る。今回のフルーツソースは、ゼリーと一緒に食べるので甘みが強いほうがおいしく感じられます。お好みで缶詰のシロップやガムシロップを加えて甘みを調整してください。レモン汁を加えると味がシマリ、変色も防げます。ぜひ、入れてください。
11.10を注射器に入れる。
12.11で9にそっと注入する。めいっぱいに入れるのもいいのですが、八分目くらいに注入するのもキレイです。
13.よく冷やしていただく。
実はこれ、一人で全部、食べちゃった。おいしかった。家族のみんな、ゴメンナサイ。
