今天是正月十四,为了明天的汤圆我准备了一大锅酒酿。其实酒酿还可以做老北京奶酪。虽然叫奶酪,但是和cheese完全不同哦,大家看红楼梦的时候记得有个点心叫糖蒸酥酪吗?就是它本人哦,吃起来甜甜的有酒酿的香味,奶味浓郁,有点像布丁或者奶冻。不管是作为小零食还是餐后小甜品都很合适~

雞中翼 4隻
熟芝麻 適量
醃料:
胡椒粉 ¼茶匙
韓式辣醬 1茶匙
糖 1茶匙
麻油 ½ 茶匙
香蒜牛油雞翼:
雞中翼 4隻
番茜碎 適量
醃料:
胡椒粉 ¼ 茶匙
鹽 1/2茶匙
蒜蓉 1茶匙
牛油 (座溶)15克
蜜糖 1茶匙
腐乳芝士雞翼:
雞中翼 4隻
水牛芝士碎 10克
醃料:
胡椒粉 ¼ 茶匙
腐乳 1½ -2磚
糖 ½ 茶匙
Chicken wings 3 ways (Sweet and Spicy Wings, Garlic Butter Marinade, Fermented Bean Curd Wings with Cheese)
Sweet and Spicy Wings ingredients:
Chicken mid-joints wings 4 pcs
Toasted sesame seeds
Marinade:
Ground white pepper ¼ tsp
Korean chilli paste 1 tsp
Sugar 1 tsp
Sesame oil ½ tsp
Garlic Butter Wings ingredients:
Chicken mid-joints wings 4 pcs
Parsley flakes
Marinade:
Ground white pepper ¼ tsp
Salt ½ tsp
Minced garlic 1 tsp
Butter (Melted) 15 g
Honey 1 tsp

Mozzarella cheese 10 g

160g Chicken Thighs or chicken breasts (5.6 oz)
1 tsp Sake
2/3 tsp Chicken Stock Powder
150g Cabbage Leaves (5.3 oz)
100g Onion (3.5 oz)
50g Long Green Onion, sliced diagonally into 1cm/0.4" pieces (1.8 oz)
100g Mame-Moyashi Bean Sprouts, soy sprouts, trim root ends (3.5 oz)
6 slices of Carrot, 5mm/0.2" thick
8 slices of Sweet Potato, 5mm/0.2" thick
100g Garlic Chives, cut into 5cm/2" pieces (3.5 oz)
80~100g Pizza Cheese (2.8~3.5 oz)
2 Kirimochi, square rice cake, cut into 4 pieces lengthwise
Sesame Oil
- Gochujang Sauce -
1 2/3 tbsp Gochujang, Korean fermented chili paste
1/2 tbsp Soy Sauce
1 1/2 tbsp Sake
2 tsp Sugar
1/2 tsp Ginger Root, grated
1/2 tsp Garlic Clove, grated
2 tbsp Apple, grated, substitute: mirin or ketchup to taste

▋Introduction
今天是正月十三,作为狗年的第一期节目,相信很多小伙伴们都在猜我是不是会更新汤圆吧~其实...今天并没有做汤圆!而是我鬼使神差地做了一锅酒酿~完美暴露我身为酒鬼少女的本质了...
其实酒酿除了做酒酿小圆子或者醪糟鸡蛋,还有一个很神奇的做法,那就是做老北京奶酪!虽然叫奶酪,但是这种中华传统美食和我们一般认识的cheese完全不同,吃起来甜甜的还带有酒酿香。
▋Ingredients
牛奶110g
奶油110g
酒酿汁80g
糖桂花 或蜂蜜 或果酱
1. 酒酿挤压过滤出汁待用
2. 将牛奶和奶油混合
3. 加入酒酿汁拌匀
4. 分装入小碗,盖上锡纸
5. 蒸锅冷水蒸,上汽后小火12-15分钟
6. 关火焖3-5分钟
7. 取出冷藏
8. 浇上糖桂花或果酱即可食用

110g cream
80g fermented sweet rice
preserved osmanthus/honey/fruit jam
1. Squeeze and filter the fermented sweet rice
2. Add the cream into milk
3. Add the fermented sweet rice juice into cream and milk. Mix it.
4. Pour it into some small bowls and coverd with tinfoil
5. Steam for 12-15 mins
6. Turn off the heat and simmer for 3-5 mins.
7. Cool and preserve in refrigerator.
7. Eat with preserved osmanthus,honey,or fruit jam
