Recipe Durian Crepe
INGREDIENTS
4 sb of wheat tpung
4 SB of potato tpung
2 sb tpung jgung
2 SB of custard tpung
2 pieces of eggs
4 sb myk msak
2 sb of fine sugar
1 cwan sgar milk / liquid milk
A pinch of salt
Lemon pwrna
WAYS (crepe skin)
Blnder all the ingredients above..
Then the filter
Add a little water until the mix melts like we make ketayap cake skin (in 1 cups)
For whipping cream
500g whiping
2 SB of sugar icing
**** mixed until thick
Filling durian is enough

This durian crepe is a very popular street food in Vietnam. Slightly different from French crepes, this crepe is thicker but very very tender. The most significant part which makes its flavor is the fresh durian flesh in the filling. However, you can always substitute durian with any fruits of your preference. INGREDIENTS
A. For the crepes (make 8)
100 gr (4/5 cup) all purpose flour/ plain flour
20 gr (1.5 tbsp) sugar
100 gr (96 ml) (1/3 cup + 4 tsp) coconut milk (NOT coconut cream)
200 ml (3/4 cup + 4 tsp) milk
2 eggs medium size (60 g/ egg shell included)
3 ml (1/2 tsp) pandan extract (optional, available in Asian groceries)
1 small piece of butter
B. Whipped cream filling
150 ml (1/2 cup + 2 tbsp) cold whipping cream - min 30% fat
15 gr (1 tbsp) caster sugar
150 gr durian flesh or other fruits of your own preference
C. Custard filling
1 egg yolk (18 - 20 g)
20 gr (1.5 tbsp) sugar
10 gr (1-1/4 tbsp) corn starch
100 ml (1/3 cup + 4 tsp) milk (lukewarm)

* INGREDIENTS
MAKE: 35 cakes (20 gram each)
A. Simple sugar syrup
100 gram sugar
100 ml water
10 ml lemon juice (don't use lime juice as it can make the sugar bitter)
B. Durian pineapple filling
320 gram pineapple flesh (canned or fresh)
260 - 280 gram durian flesh (frozen or fresh)
60 gram sugar (can be adjusted to taste)
15 - 30 ml simple sugar syrup (from A)
C. Dough - 1st style
70 gram unsalted butter - very soft at room temperature
30 gram cream cheese - very soft at room temperature
60 gram whipping cream
35 gram icing/ powdered sugar (shouldn't be substituted with other types of sugar)
1 egg yolk medium sized (18 - 20 gram)
145 gram all purpose flour
D. Cookie dough - 2nd style
120 gram unsalted butter - very soft at room temperature
35 gram condensed milk (cannot be substituted with sugar)
1 egg yolk medium sized (18 - 20 gram)
150 gram all purpose flour
* NOTES

2. Use AP flour for this recipe. Cake flour may result in cakes that are too crumbly and fragile while bread flour may give dry and hard dough.
3. Simple sugar syrup can be substituted by corn syrup, maple syrup or maltose.

INGREDIENTS (makes 20 mini rice balls)
A. Dough
100 g glutinous rice flour
15 g rice flour
30 - 35 g sweet potato (boiled and smashed)
50 - 100 ml warm water (40 - 50 degrees C)
B. Filling
70 gram mung beans/ yellow beans
20 - 25 g sugar to taste
30 g coconut oil (or normal cooking oil)
30 - 40 g shredded coconut (optional)
C. Other ingredients
300 ml oil (for frying)
30 g sesame seeds (for half recipe)
or
5 - 6 ginger slices
40 g brown sugar or palm sugar (for half recipe)
TROUBLESHOOTINGS
1. If the dough puff very little and is hard after being fried, it's likely that you have fried them on too high heat
2. If the dough is hard and chewy, it's likely that you have fried them on too low heat
3. If the balls crack or break when being fried, it might be because there are air pockets between dough and filling OR a part of the ball exposes to the air, i.e., not covered by oil for too long
