香草焗龍蝦及配菜
材料
📌 急凍龍蝦尾4隻(用雙手揸住龍蝦尾的兩邊屈幾下將它屈鬆像按摩一樣. 再用尖嘴剪刀在龍蝦尾的”背部”正中間位剪開殼,一直剪到最尾一格只要剪小小便停. 然後用手指伸入龍蝦尾的”底部”用力頂龍蝦肉出來,直至到尾段停止)
調味及醃料
📌 百里香
📌 黑胡椒少許
📌 鹽少許(不要太多因爲海鮮本身已經有咸味)
📌橄欖油少許
餡料
📌 鷹嘴豆- 1 罐(瀝乾水,用鑊漢乾。如果用生的豆,要浸過夜後及煮淋)
📌 菠菜或其他綠色菜用來做餡料的封口
配菜材料
📌矮瓜(茄子)一條(垂直切四片長片再在意中間打橫對半切)
📌車厘茄(對半切)
📌蒜蓉(素食者可用其他香草代表替)
📌 芝士(任何芝士都可以)
📌 鹽少許
📌 黑胡椒粉少許
做法
1.在每隻龍蝦尾的肉上面放些百里香再撒上黑胡椒粉和小小鹽調味。在上面噴少許橄欖油。
2.將鷹嘴豆塞入每個龍蝦尾的空殼中, 用菠菜做封口塞住那些鷹嘴豆餡在內
3.將塞好餡料的龍蝦尾放在氣炸鍋中, 用200°C焗9分鐘, 如果想脆些就焗10分鐘
4.配菜方面: 在焗架上, 放上茄子片再放車厘茄在面, 鋪上蒜蓉(如素食者可用其他香草代替)再在上面鋪上芝士,加少許鹽和黑胡椒粉調味,然後焗10分鐘。也可以選擇”煎”. 食用前先噴些橄欖油在面。完成。

Ingredients:
Lobster tails - 4 (Flex each lobster tail 5 times to massage it by holding both ends, cut the center of the top shell all the way to the fin with a pair of scissors, and stick a finger underneath the shell to loosen the meat, and gently place the meat on top of the shell. Pat dry.)
Seasoning ingredients:
Thyme - 4 small branches
Black pepper - to taste
Salt - to taste (but not too much because seafood has its own saltiness)
Olive oil
Stuffing ingredients:
Chickpeas - 1 can (drain out the water and pan fry a bit for drier texture or buy raw, soak overnight and cook until tender)
Spinach - or any greens to stuff the lobster tails
Side dish ingredients:
Eggplant - 1 (sliced vertically and into halves)
Cherry tomatoes - cut into halves
Garlic - minced or use herbs for vegetarian
Cheese - of your choice
Salt - to taste
Black pepper - to taste
Methods:
1. Place a branch of thyme on each of the lobster tails. Sprinkle with black pepper and salt to taste. Spray a layer of olive oil on top.
2. Stuff each lobster tail with chickpeas inside the hollow shell. Seal off the stuffing with spinach.
3. Place stuffed lobster tails in the air fryer and cook for 9 minutes or 10 minutes for crispier texture at 200C (392F).
4. On a rack, place eggplant slices, cherry tomato, minced garlic or herbs for vegetarian, sprinkle cheese on top, add salt and black pepper to taste, and air fry for 10 minutes. Optional to bake, or pan fry them. Spray a layer of olive oil before serving.

韓國雪梨(大) 1個
細花膠筒 6、7條
川貝粉/碎 少量
冰糖 2粒
滾水 1/3杯
做法:
1. 花膠在前一晚預發:
花膠用水沖洗,然後放入滾水中、放入薑、酒一同煲至冧身後取出,洗乾淨花膠肚,用清水浸一晚,瀝乾水分備用;
2. 雪梨批皮、去心、切粒,放入燉煲內,加入沖洗過的冰糖、川貝粉花膠和杯1/3杯滾水,燉1至1個半小時便可食用。

Ingredients:
Fish Maw - 3 (Soak overnight in a pot of boiled water with ginger and 1 tbsp of cooking wine. Put weights on top of fish maws to avoid floating. Rub clean the interior of each fish maw.)
Asian pear - 1 (Peel the skin, and diced into cubes.)
Chuan Bei powder - or crushed into powder
Rock sugar - 2 small pieces (Washed)
Hot water - ½ cup
Methods:
1. In a double boiler ceramic pot, add in Asian pear cubes, rock sugar, fish maw, and “Chuan Bei” powder, and put in the double boiler.
2. Cook for 1 hour.

📌 厚切牛柳1件

做法
1. 牛柳中間切開一半,但不要切到底,之後兩邊打開,做成蝴蝶形狀。
2. 準備碟,加入黑胡椒,鹽,把牛柳兩邊醃好。
3. 燒紅鑊,一定要燒紅,加入橄欖油,牛油,之後猛火煎牛柳,牛柳落鑊後不要郁動牛柳,直到煎到脆面,大約1分鐘,之後反轉再煎,放入蒜頭。按照自己喜歡熟度,上碟。
4. 鑊上放入rosemary稍為煎一煎,之後連同蒜頭放在牛柳上。
5. 鑊不用洗,稍為放涼,之後逐樣把醬汁材料一一落鑊煮滾,再加入碟上牛柳的肉汁一起煮滾,到自己喜歡的杰度熄火,最後把醬汁淋在牛柳上即成。

Butterfly Cut Beef Tenderloin

Ingredients:
Beef tenderloin - (butterfly cut by slicing the tenderloin in the middle. Make sure both sides are equal in thickness but DO NOT cut through. Spread both pieces out in the shape of a butterfly. This will cook evenly without overdone.)
Seasoning ingredients:
Black pepper - to taste
Salt - to taste
Olive oil
Butter
Garlic - 1 clove (Only remove the outer layer of the skin. Keep the papery skin intact.)
Rosemary - 2 sprigs
Sauce ingredients:
Black pepper - whole pieces
Yellow mustard with seeds - 1 tbsp
Milk - enough to make a sauce
All purpose flour - enough to thicken sauce
White vinegar - to taste (for tangy sour taste)
Salt - to taste
Sauce from the resting tenderloin
Hot water - to adjust the consistency of the sauce if necessary
Methods:
1. In a plate, add in black pepper, salt, and place one side of the butterflied beef tenderloin to marinate. Flip and marinate the other side.
2. Heat up a pan to very hot on HIGH heat. Add in olive oil, butter, beef tenderloin, and DO NOT touch it. Let it sit and sear to seal in the moisture.
3. Flip to the other side and do the same.
4. Add garlic and rosemary sprigs to the pan.
5. Remove the tenderloin once it reached your desired doneness. Transfer to a plate for it to rest and spoon hot butter over the tenderloin to baste it.
6. In the same pan with the leftover butter, add in whole black pepper, yellow mustard, a bit of all purpose flour, white vinegar, sauce from the resting tenderloin, and mix well. Set aside to serve with tenderloin.

These can be seen as important policy recommendations for "setting standards" and urging "relevant countries to become clean countries." This is especially important for those that want to align with the democratic alliance by showing engagement with clearer norms for policy and standard setting. This is also an important reminder for manufacturers, producers, and R&D centers in the private sector.
If China does not change, it will be encircled. If Taiwan does not join, it will fall out of the team of like minded democracies.
This is also in line with Taiwan’s national interests. Our commercial interests, intellectual property rights, and brain drain will have a greater mechanism to regulate, instead of having to solely face the world’s second largest power, China, led by the CCP, on its own.

In other words, I sincerely believe that there is no need to ridicule any political party's past stance on China because the international situation has completely changed after the Hong Kong incident and the COVID19 epidemic. This is an opportunity given to us by history. However, if the opportunity is not grasped, these parties may be abandoned by the current historical moment and overall public opinion.
Once again, such a democratic country will be stronger by establishing a strong consensus on external threats and opening up debates for domestic policies.
This kind of strengthened democracy will bring us closer with like minded countries.

換言之,我真心認為不需訕笑任何政黨過去對中國立場 ; 因為國際情勢在香港事件、COVID19疫情之後是徹底變化,這是歷史給予我們的契機。但若不能掌握契機,那這些政黨可能就會被時代、主體民意給拋棄。
再強調一次,對外威脅建立堅強共識,對內政策開啟多元競爭,這樣的民主國家,會更強健。
這樣的民主同盟,會更緊密。

IPHONE TIPS 📲
Many people have been asking me on how do I maintain good battery health on my iPhone. This is worth reading especially if you're a heavy user of any iOS device.
Before I give the tips, lemme share something first.

I am a huge fan of Apple or any iOS devices. I started using iPhone way back 2007, which is the first flagship device of Apple, the iPhone 2G. Now, I am an iPhone 7 user, using it for almost 2 years but still have 97% of battery health.🤗 (Sorry don't have enough budget to buy iPhone XS max as of the moment😅) But I still have my lower generation iPhones.
Our phones go with us everywhere, even in water. (Nowadays, smartphones have Ingress Protections) So that means we are also consuming our battery's life hardly.
I've been seeing posts and questions with regards to Battery Health of iOS device which they said, was degrading fastly for unknown reason. Lemme correct that, there is a reason why this thing happens.
So here are some tips on how we can prevent that.
*Do not let your phone reach 20%, or lower, or even the first warning for low power mode as it may lead to damaging your battery, causing your battery health to be degraded thoroughly. If you have your charger and a power source with you, charge your phone even if it's still 30% or higher. Charging your phone consecutively ain't bad. In fact, it is a good practice for your battery.😊

*Using your phone while charging ain't bad too. Just make sure, to use "certified/authentic" charger from Apple. If you have some extra budget, I would highly recommend you to buy the 12 watts version of wall charger rather than the 5 watts. I know it is very costly but trust me, it's very worth it. It will charge your phone even faster.
*Just because it is indicated above that your phone is already 100% doesn't mean it is fully charged. The indicator above is just a measure and is not totally accurate. So I would advise to still charge it for 10-15 minutes for a fully charged battery.
*Overcharging is not an issue with the batteries of iPhone because its battery has its own memory, which automatically stops receiving power when fully charged.

*To maximize your phone's battery life:
-Turn off the Background App Refresh
To turn it off, Go to Settings, General, Background App Refresh and turn the toggle off.
-Turn off Hey Siri if it's not necessary.
-Turning off the Wifi and the Bluetooth in the Control Center doesn't mean it is already off. It just disconnects your phone to any connection but still has battery consumption. Always turn it off in the settings.
-Always force close apps after using.
-Do not use Low Power Mode as it will weaken your phone's power resulting for poor performance and slower processes. This will consume more energy.
-Set your phone's auto lock to 1 minute, or 30 seconds to save battery life.
-Buy your own powerbank so you'll never have to worry for getting into low power.
-Restart your phone atleast once or twice a day. This will clean your RAM and improve you phone's performance.
-Turn off raise to wake up.
-Auto brightness is advisable rathen than adjusting it manually.
Edit / Additional
If in any case that you observed that your battery drains too fast even though you still have good battery health, you can perform a "Battery Calibration" in your iOS device atleast once a month.

Below are the instructions on how to do it.
-Drain your battery life to 0% or till your phone automatically shuts off.
-After draining, plug it in a charger. iOS devices will automatically boot up once it has enough charge. When it boots up, turn it off again. Do not enter your passcode or unlock the screen, just turn it off again.
-Leave your phone plugged and turned off while charging for four hours, yes, four hours!
-After charging it for four hours, turn it on. Do not unplugged the charger yet, just go to your home screen.
-Once you're in the home screen, perform a hard restart in your iOS devices. (Kindly look in Google on how to do a hard restart on your device, make sure to search the exact model because it has different procedures)
-Your phone will automatically restart when you perform a hard restart.
-When the hard restart is done, perform a restart again, turn off your iOS device for 10 seconds, after that, turn it back on.
-Once it turns on, you may now unplugged the charger and continue using your device.
Congrats! You're done calibrating it.💖

材料:
三黃雞 1隻(約2磅)
香茅 4-5條
南薑、生薑 各1塊
絲苗米 隨意
斑蘭葉 2條
蒜頭 2個
青檸 4個
泰國辣椒仔 隨意
糖 2茶匙
越南魚露 2茶匙
水 1/4杯
雞粉 1湯匙
鹽 1湯匙
做法:
1.雞洗乾淨用雞粉加鹽內外擦勻,室溫醃製1小時
2.蒸熟後冷卻,保留蒸雞汁煮飯,然後拆肉
3.米先洗淨,瀝乾水之後,用雞油或其他油先爆香香茅、南薑、蒜頭,然後加入米一齊炒
4.放入電飯煲以一份米比0.9水分的比例,用蒸雞汁加水,加斑蘭葉煮飯
5.煮熟後,將所有料頭取出,加入適量椰漿再煮
秘製醬汁:
青檸汁、蒜頭、辣椒、南薑、糖加水,用攪拌機打碎,加入薑茸用魚露調味
Hainanese Chicken Rice
Ingredients:
Yellow Hair Chicken 1 pc (Approximately 2 lbs)
Lemongrass 4-5 pcs
Galangal 1 pc
Ginger 1 pc
Jasmine rice Amount depends on personal preference
Pandan leaves 2 pcs
Garlic 2 heads
Lime 4 pcs
Thai chili Amount depends on personal preference
Sugar 2 tsp
Vietnamese fish sauce 2 tsp
Water ¼ cup
Chicken powder 1 tbsp
Salt 1 tbsp
Steps:
1. Clean chicken, rub chicken powder and salt on skin and inside cavity, marinate in room temperature for 1 hour.
2. Steam chicken. Once cooked, let chicken cool to room temperature and keep chicken drippings for the rice. Cut chicken into pieces.
3. Wash rice and drain. Heat pan with some chicken fat or other cooking oil. Sauté lemongrass, galangal and garlic cloves. Add rice and stir-fry.
4. Add stir-fried rice into rice cooker. Add water and chicken drippings using 1:0.9 rice to water/chicken drippings ratio. Add pandan leaves to cook with the rice.
5. Once rice is cooked, remove all ingredients except the rice. Then add coconut milk to the rice and cook again.
Special sauce:
- Blend lime juice, garlic cloves, Thai chili, galangal, sugar and water together. Season sauce with ginger paste and fish sauce to taste.

4 large Chikuwa (fish cake)

* leftover beaten egg from the fish fries
* 75ml water
* 5 tbsp. flour
* 2 tbsp. Aonori (green laver)
vegetable oil for frying
((Nori Rice))
cooked rice
Nori seaweed sheet
A
*1 packet (5g) Katsuobushi (bonito flakes)
*1 tsp. Dashi soy sauce (or soy sauce)
((Others))
Takuan (Daikon radish pickles)
Baran (plastic leaf in sushi) if you have
Directions:
((Kinpira Gobo))
1. Use the back of the knife, lightly shave the gobo skin (do not peel because you will peel of the nutritious part between the skin and gobo). First, thinly slice the gobo diagonally. Then stack a few together and cut into thin strips. Soak the gobo strips in water while cutting, then drain well, lightly rinse, and dry off with paper towels.
2. Thinly slice the carrot in the same way.
3. Heat sesame oil in a frying pan and stir-fry gobo and carrot for a couple of minutes until tender.
4. Blend Mirin and sugar to give a sweetness, then season with soy sauce and stir-fry until the liquid is gone.
5. Turn off the heat. Sprinkle with sesame seeds.
((Fish Fries))
1. Remove all the bones from the fish. Season with salt and cracked black pepper.
2. Coat each with flour, dip in beaten egg, and coat with Panko.
3. Fry them in oil at 170C (340F) for 4-5 minutes until cooked golden brown. (Turn them over to cook evenly.) Remove the fish fries from the oil and drain.
4. Mix B to make tartar sauce.
5. Serve the fish fries with tartar sauce and Okonomiyaki sauce (or Tonkatsu sauce).
((Chikuwa Tempura - Deep Fried Fishcake Tempura))
1. Mix A in a bowl. Cut Chikuwa in halves if they are too large.
2. Heat vegetable oil in a deep pan to 170C (340F). Lightly dip the Chikuwa in the batter and fry them immediately until golden and crisp.
3. Drain them on a rack or a sheet of clean paper towel.
*make Okonomiyaki or Tenkasu using the leftover batter
((Nori Rice))
1. Mix A very well.
2. Put rice in a bento box. Put the Katsuobushi mixture on top. Then tear up Nori sheet into small pieces, and put them on top.
((Others))
Place side dishes on top of the Nori Rice. Serve the fish fries with tartar sauce and Okonomiyaki sauce (or Tonkatsu sauce). Okonomiyaki sauce goes great with Chikuwa Tempura as well!
