HOLY MOLE @pujol !!! Chef @enriqueolveraf’s signature Mole Madre x Mole Nuevo is a dish that’s 1982 days (and counting) in the making.
The lighter orange circle in the center is the Mole Nuevo meaning “new.” This mole was made the day of, using fresh ingredients such as chiles, garlic, onion, nuts, spices, and more.
The Mole Madre (which translates to mother in Spanish) is the darker mole that has been aged with dozens of ingredients. The mole madre is reheated twice a day and is ‘fed’ with new mole whenever the batch is down to 10 liters. This method is what gives the mole its complexity and abundant flavor. The mole has essentially been cooked uninterrupted and has now been “alive” for 6 years. The recipe is continually changing due to the seasonal ingredients that are constantly added, in essence giving the mole different flavors depending on the season.
Pujol's team recommends trying the "Nuevo" first, then the more mature "Madre." We mopped up all that mole magic with the corn tortillas each pressed with a pretty Hoja Santa leaf (Mexican pepper leaf). @ PUJOL
