Christian's 10 minute Pasta with Clams (Linguini Vongole) - Recipe (English/Chinese)
今日終於停雨喇!煮番個平靚正嘅地中海風味嘅蜆肉扁意粉賀一賀佢先!D蜆我買左$35,意粉$25加埋蕃茄$20,$80已經可以餵飽一家四口!
The rain finally stopped! Here’s a Mediterranean-inspired dish to brighten up your meal! What's best about this dish is that it's real value for money $35 for clams $25 for pasta $20 for tomatoes = $80 and you can feed 4-5 adults!
材料:
300-500g蜆,用水浸住去沙
200g扁意粉
6至8粒去皮蒜頭
半個洋蔥切碎
5至10個車厘茄(或者半個蕃茄切粒)
橄欖油
50g白酒
2湯匙蕃茜或者芫茜切碎
1湯匙牛油
煮法:
煲一大煲水,水滾之後加1湯匙橄欖油、1茶匙鹽同埋扁意粉。呢個時候D水會無咁滾,慢慢攪拌渾水同埋扁意粉直至D水滾返為止等D意粉唔會黐埋一齊。睇返個意粉包裝講要煮幾耐,跟住由佢開蓋煮返相應嘅時間減1分鐘。
用另外一個pan或者煲,開中火然後用橄欖油煎到D蒜蓉金黃色,再落洋蔥煮到半透明就差唔多喇。
跟住落蜆爆一爆佢,加白酒然後冚蓋用大火滾兩至三分鐘直至D蜆開囇口為止。熄火之後可以落埋D車厘茄。將煮好咗嘅意粉加埋落啲蜆到等佢索一索D蜆汁,開返火煮大約1分鐘就可以熄火喇!最後攪D牛油入去個意粉到等佢有少少creamy 嘅口感再灑D芫茜或者蕃茜喺面就食得喇!
Christian's 10 minute Pasta with Clams (Linguini Vongole)
Ingredients:
300-500g Clams (more clams than pasta? Why not?)
200g Pasta uncooked (any long pasta will do)
6-8 pieces whole garlic cloves, peeled
1/2 minced onions
5-10 cherry tomatoes (or 1/2 tomato, chopped)
olive oil
50ml white wine
2 tablespoons chopped parsley (or coriander.. Not exactly traditional but tastes amazing)
1 tablespoon butter (if you like butter)
Instructions:
1. Boil a large pot of water, when it comes to a boil, add 1 tablespoon of olive oil and 1 teaspoon of salt then boil the pasta. The water temperature will come down, stir gently until the water comes back to a boil. This will stop the pasta from sticking together. When the water is boiling, let it boil without covering the pot. The pasta package will tell you how long you need to cook the pasta,(8, 11, 12 minutes etc..) and aim to cook the pasta 1 minute below the recommended time.
2. Choose another pot (that has a lid), heat it on medium heat and add olive oil, and gently fry garlic till golden brown, the add onions. Cook on medium heat until the onions are translucent
3. then add the clams and stir once or twice. Then add the white wine and turn it up to high heat and cover the pot for 2-3 minutes or until the clams have opened. Then turn the heat off.
4. Stir gently and add the tomatoes,
5. When the pasta is ready (recommended time -1 minute), add the pasta to the clams and turn the heat back on. the pasta will start absorbing the clam flavour. Cook and taste until the pasta is the right doneness.
When ready, serve right from the pot and stir in some butter to add some nice richness. Then top with fresh parsley.
Easy...

What a surprise to us as it's common not to have him on dinner table due to his work schedule. We rushed for action and managed to put together something to our best ability given such a short notice.

Ingredients:
Serves 4 pax - if it's a single dish meal
or 8 people if there are other dishes
Preparation for seafood
=========
200g of prawns - deshelled & deveined
150g of scallops
Ice bath (2 tsp baking soda + 1 tsp sugar + 2 cups of water & ice)
Other ingredients:
1 tube of egg tofu
1/3 head of a broccoli
1/2 a stalk of carrot - sliced
1/2 thumb size of ginger - sliced thinly
2 cloves of garlic - chopped
5 pcs of dried mushrooms - rehydrated & cut in half
1 teaspoon of sesame oil
400ml of chicken stock
1.5 tablespoons of oyster sauce
1/2 teaspoon of sugar
1 pc fish maw - rehydrated in hot water for 30 mins
60g of canned razor clams
Some cornstarch solution
A few dashes of white pepper
1 tablespoon of Chinese cooking wine aka Shaoxing Huatiao wine

50ml White Wine or Sake (1.7 fl oz)

3 cups rice (450g or 15.87oz)
3 cups water (510ml or 17.25 fl oz )
20g dried scallops (soak in the 3 cups of water for 1 hour then shred them with a fork)
