Christian's 簡易百搭Gravy
Christian’s Super Versatile Gravy (recipe in English and Chinese)
上次教大家整超脆豬手,有位朋友留言問可唔可以教點整襯豬手嘅Gravy。今日就同大家分享一個又易做又可以襯唔同菜式嘅肉汁啦!
材料:
400ml 紅酒或者波特酒
500ml牛湯或者雞湯
3瓣蒜頭
半個洋蔥切碎
1條蘿蔔切碎
1湯匙麵粉
1湯匙室溫牛油
做法:
將紅酒、牛湯、蒜頭、洋蔥同埋蘿蔔放落個煲度用中火煲15至20分鐘到差唔多淨返2碗水就可以攞出嚟。
跟住用個隔渣器,壓返D煲林左嘅湯渣嘅汁出嚟落個肉汁度。淨返D湯渣千其唔好擺返落個肉汁度,等個gravy 口感smooth D。
將gravy擺番落個煲度用慢火煮一煮熱。用手將D牛油同麵粉搓埋一齊,跟住加落gravy度攪渾。當個gravy 慢慢變杰身嘅時候,你可以試一試味。如果仲係試到麵粉味,就繼續用慢火煲到無麵粉味為止就搞掂喇!
呢個gravy除左用嚟襯豬手之外,其實襯牛鷄魚都得㗎!你亦都可以用呢個肉汁做基礎,演變出唔同口味嘅汁。例如可以加煎香左嘅蘑菇、黑椒、意大利香醋、喼汁、粗粒芥末或者松露醬去變出你鍾意嘅口味!咁就唔使食到悶喇!
400ml Red wine (or port wine)
500ml beef stock (or chicken stock)
3 cloves Garlic
1/2 Onion, chopped
1 Carrots, chopped
1 tablespoon flour
1 tablespoon butter, at room temperature
Put the wine, beef stock, garlic, onions and carrots in a pot and boil at medium heat for 15-20 minutes or until it reduced by 60%. This concentrates the flavours of the wine and beef.
Use a fine mesh stainer and squash the cooked vegetables to incorporate the sweetness of the onions and carrots as well as the earthiness of the garlic into the gravy. Don’t add the residual vegetables as that would make the gravy a bit too chunky.
Put the strained liquid back into the pan and gently heat on low heat.
Knead the butter and flour together and stir into to the gravy. As it heats, it should thicken up. This is a very traditional French technique to thicken sauces. When the sauce is thick, taste it. If it tastes like flour, keep gently cooking until it doesn’t have the taste of flour anymore.
This is a basic gravy that can be used for Beef, Pork, Chicken even Fish. It is also can be considered a sauce base. You can add other flavours such as sautéed mushrooms, black pepper, balsamic vinegar, Worcestershire sauce, grainy mustard, fresh herbs or yummy truffle paste to make it your own!

Felt like being alive again when I finally had my first real meal for so long. I would definitely reduce the portion of sesame oil and soy sauce.)
I will introduce more about "Mushroom marinated with sake and balsamic vinegar" next time. That one was actually adapted from a restaurant recipe that my friend secretly gave me.

---Why didn't I use roux?---
I used beurre manié instead of making roux.
The advantage of beurre maniés is that you can adjust the concentration at any time without having to measure the amount of liquid.This is a technique often used in restaurants.
The flour does not become gelatinized by just frying in oil, so the raw flour taste remains. Flour becomes gelatinized when heated with water.
When starch is heated with water, it changes from beta starch to alpha starch.
Therefore, it is necessary to boil the sauce to remove the raw flour taste. So roux and bourmannier, if you add liquid and let it boil, it's the same thing in the end.
▼Ingredients
RED WINE SAUCE
50ml balsamic vinegar
200ml red wine
250ml brown stock(beef stock)
5g butter
5g flour
1tsp sugar
pinch of salt
GREEN PEPPARCORN SAUCE
10g green pepparcorn
50ml brandy
200ml brown stock(beef stock)
50ml heavy cream
5g butter
5g flour
BÉARNAISE SAUCE
1 chopped shallots
1tbsp chopped tarragon
200ml white wine
2 egg yolks
120ml clarified butter
salt,peppar
