#金沙生吐司
中秋節做了一堆蛋黃酥,剩下的鹹蛋黃怎麼辦好呢?靈機一動,拿來做金沙內餡,包在生吐司裡面,好好吃啊❤️❤️❤️ 食譜和注意事項照例寫在下方~
*麵包體:
1.高筋麵粉260克+速發乾酵母粉3克+鹽4克+糖20克+蜂蜜30克+動物性鮮奶油80克+牛奶80克+水30-40克(水的份量要看麵粉吸水性調整),攪拌至出筋,加入無鹽奶油25克,攪拌至薄膜.蓋上鍋蓋,放在溫暖的地方做基礎發酵,至麵糰兩倍大(時間不一定,因為氣溫環境40分鐘一小時不等,大約發酵至原本體積兩倍大即可)
*金沙內餡:
1.鹹蛋黃4顆,沾米酒,160度烤10分鐘,放涼備用
2.室溫無鹽奶油40克+糖粉30克,攪拌均勻,加入奶粉20克+牛奶20克,加入鹹蛋黃碎,少許鹽,攪拌均勻
*發酵好的麵糰桿成長方形,抹入鹹蛋黃醬,整成辮子(請看影片),放入吐司模。後發至高度到吐司模約9分滿,180度烤35分鐘 (發酵時間請依烤箱不同自行調整)。⭐記得吐司模下方要放烤盤,發酵和烘烤的時候奶油才不會滴在烤箱內。如果烤的中途已經上色可以蓋鋁箔紙
Ingredients:
Dough:Bread flour 260g+instant dry yeast 3g+salt 4g+sugar 20g+honey 30g+whipping cream 80g+milk 80+water 30~40g. + unsaltedB butter 25g. First proof.
Fillings: salted egg yolks 4, rinse with rice wine, bake at 160 degrees for 10 min.+ Unsalted butter 40g +powdered sugar 30g+milk powder 20g +milk 20g, with minced salted egg yolks.
Shape, put into toast mold, 2nd proof, bake at 180°C for 35 min.

As part of our collaboration with Bosch Home (SG), we have recreated this popular traditional dish using homemade red glutinous rice wine – fermented using glutinous rice and red rice yeast.
Red Glutinous Rice Wine chicken is a traditional FooChow dish. Setiawan, a coastal town in Perak, Malaysia holds strong to their FooChow heritage. Mention Setiawan, a serious foodie will immediately mention ‘Ang Jiu Mee Sua’, red glutinous rice wine chicken with mee sua. They boast the best cottage industry in producing the red wine lees and silky QQ strands of mee sua. Each home will have their signature way of making the red wine lees.
The chicken meat is marinated in the red wine lees and braised in the rich sweet alcoholic red yeast wine. We added more red yeast wine before serving to give it a rich red wine lees arima and taste. You can either serve it with rice or mee sua.

1.糯米包
材料:
雞頸皮 10片(100公克)chicken neck skin 100g
市售油飯 1份(900公克) Taiwanese sticky rice 900g
玉米粉 適量 corn starch
醃料:
白胡椒粉 1/2茶匙 ground white pepper 1/2tsp.
五香粉 1/4茶匙 five-spice powder 1/4tsp.
醬油 2茶匙 soy sauce 2tsp.
糖 1/2茶匙 sugar 1/2tsp.
米酒 2茶匙 cooking rice wine 2tsp.
作法:
1.將雞皮與醃料混合均勻,靜置5分鐘。
2.醃製好的雞皮用牙籤將一端開口串緊,並塞滿油飯,另一開口再用牙籤串緊即可。
3.塞好的油飯包表面沾滿玉米粉,放入氣炸鍋內,表面刷上少許油,溫度設定180度12分鐘即可。
2.薄皮脆雞
材料:
雞肉 1200公克 chicken 1200g
玉米粉 適量 corn starch
醃雞材料:
鹽 1/2茶匙 salt 1/2tsp.
糖 1茶匙 sugar 1tsp.
香蒜粉 1茶匙 garlic powder 1tsp.
洋蔥粉 1茶匙 onion powder 1tsp.
黑胡椒粉 1茶匙 ground black pepper 1tsp.
白酒 1大匙 white wine 1tbsp.
蛋 1顆 egg 1
作法:
1.將雞肉與醃料混和抓勻,靜置約4小時使之入味。
2.取一個盤子裝滿玉米粉,讓醃置好的雞塊均勻沾裹玉米粉,放入氣炸鍋烤盤,設定溫度180度15分鐘,待時間運轉結束即可。
3.雞米花
材料:
雞 600公克 chicken 600g
低筋麵粉 2大匙 cake flour 2tbsp.
醃雞材料:
薑母粉 1/2茶匙 ginger powder 1/2tsp.
醬油 1大匙 soy sauce 1tbsp.
糖 2茶匙 sugar 2tsp.
米酒 2大匙 cooking rice wine 2tbsp.
白胡椒粉 1/2茶匙 ground white pepper 1/2tsp.
五香粉 1/4茶匙 five-spice powder 1/4tsp.
作法:
1.將雞肉與醃料混和抓勻,靜置約4小時使之入味。
2.取一個盤子裝滿低筋麵粉,讓醃置好的雞塊均勻沾裹低筋粉,再用漏杓將沾裹麵粉的雞塊過水一次,再沾滿麵粉並輕拍表面。
3.將沾好麵粉的雞塊放入烤盤,溫度設定180度15分鐘,待時間運轉完畢即可食用。
4.菜脯烘蛋
材料
雞蛋 6顆 \ egg 6
菜脯80g \ preserved radish 80g
蔥花15g \ scallion 15g
白胡椒粉 少許 \ white pepper powder
作法
1.菜脯放入氣炸鍋中用160℃,氣炸3分鐘。(標:先氣炸出菜脯香氣)
2.打開拌入蔥花,再倒入1大匙油,利用餘溫炒香蔥花。
3.雞蛋加白胡椒粉打散,倒入氣炸鍋中與菜脯與蔥花拌勻。
4.改用180℃,氣炸12分鐘,炸3分鐘後,打開攪拌一下再氣炸5分鐘即可。
5.番茄炒蛋
材料
雞蛋 3顆 \egg 3
番茄丁 2顆 \ tomato 2
番茄醬 1大匙 \ ketchup 1tbsp.
糖 1/2茶匙 \ sugar 1/2tsp.
鹽 1/4茶匙 \ salt 1/4tsp.
蔥花 適量 \ scallion
太白粉水 1大匙 \ potato starch water 1tbsp.
香油 1/4茶匙 \ sesame oil 1/4tsp.
作法
1.取蛋糕烤模加入1茶匙油,放入先入氣炸鍋以180℃氣炸3分鐘預熱。
2.雞蛋加油1茶匙打散後,倒入作法1烤模中。
3.以180℃氣炸3分鐘後打開取出,再將蛋拌成炒蛋。
4.再加入番茄丁、番茄醬、糖、蔥花、太白粉水、香油。
5.再以180℃氣炸3分鐘,打開攪散再氣炸3分鐘即可。
6.魚香烘蛋
材料
雞蛋 6顆 \ egg 6
沙拉油 1大匙 \ oil 1tbsp.
作法
1.雞蛋加沙拉油打散成蛋液。
2.烤模塗上1茶匙油(分量外),先放氣炸鍋中,180℃加熱3分鐘。(先加熱可加快蛋液成型)
3.蛋液倒入模型中,再放入氣炸鍋中。
4.設定180℃,氣炸約12分鐘,淋上魚香醬即可。
7.酥炸紅燒肉
材料:
豬五花 1000g pork belly
地瓜粉 適量 tapioca starch
醃肉材料:
紅糟醬 100g red yeast sauce
鹽 1/2茶匙 salt 1/2tsp
蒜泥 30g garlic puree 30g
五香粉 1/2茶匙 chinese five spices 1/2tsp
醬油 1大匙 soy sauce 1tbsp
糖 1大匙 sugar 1tbsp
作法:
1.豬五花切成長條片,並與醃肉材料混合均勻,再與豬肉片抹勻醃製約12小時(或放在冰箱一夜)。
2.另用盒子裝地瓜粉,再將肉片均勻沾滿地瓜粉,放入氣炸鍋內,表面塗上少許油,設定溫度170度10分鐘即可。
8.炸三鮮
材料:
花枝 600g cuttlefish
地瓜粉 適量 tapioca starch
醃料:
蒜泥 50g garlic puree
鹽 1/2茶匙 salt 1/2tsp
白胡椒粉 1茶匙 ground white pepper 1tsp
太白粉 2大匙 potato starch 2tbsp
蛋黃 1顆 yolk 1
糖 1茶匙 sugar 1tsp
作法:
1.花枝縱切成約1公分長條狀,與醃料抓勻,醃約5分鐘即可。
2.取另一盒子裝入地瓜粉,並將花枝均勻地沾滿地瓜粉,放入氣炸鍋表面噴上少許油,設定溫度200度8分鐘,待時間結束即可食用。
9.酥炸鱈魚
材料
鱈魚 2片
cod 2
地瓜粉 適量
tapioca starch
鹽 適量
salt
黑胡椒粉 適量
black pepper powder
作法
1.鱈魚撒上鹽、黑胡椒抹勻,翻面在撒上鹽、黑胡椒抹勻。
2.再均勻沾裹上地瓜粉。
3.取氣炸鍋的炸籃,塗少許油。
4.鱈魚放入氣炸鍋的烤籃中,表面在塗上少許油。
5.設定190℃,氣炸約12分鐘即可。
10.照燒鯛魚
材料
鯛魚片 4片(約300公克)
seabream 300g
市售照燒醬 2大匙
teriyaki sauce 2tbsp.
白芝麻 適量
white sesame
作法
1.鯛魚片放入氣炸鍋的烘烤鍋中,表面塗上少許油。
2.設定200℃,氣炸約10分鐘即可。
3.打開塗上照燒醬,再設定200℃,氣炸約3分鐘。
4.撒上白芝麻即可。

This is the second week of what i eat in a week! Attempting intermittent fasting again. It was quite difficult for the first few days but it gets easier!
Really happy that I lost a kg in a week. It's mostly water weight since I get bloated from water so easily. I don't really restrict myself too much, of course I ate a lot less sugar since I came back. I was really packing it on when i was overseas lol. I still really enjoy my healthy meals. They are DELICIOUS, except for that black bean whatever bean yucky spaghetti.

Tofu Mushroom Soba
Serves 2 - ie 2 portions
200g Tofu
Mushrooms (as much or as little as you like) I just bought a pack of mushrooms. There's 3 different types in mine.
300g of Soba Noodles
A Tablespoon of Miso Paste
2 Tablespoon of low sodium Soy Sauce (Less or More depending on how tasty you want it to be)
Fry the tofu separately.
Cook the mushrooms with some garlic. Add some miso paste and soy sauce and mix it well. Then add the cooked soba noodles! (I use frozen soba noodles, so I just cook them in hot water, drained them and add to the mix.)
Stuffed Capsicum

1 Red Bell Pepper (Capsicum)
2 Eggs
1 Egg White
A handful of Spinach
Salt and Pepper
Fan bake at 180 degree celsius/350 Fahrenheit for 25 mins!
Too easy! Tasty af!

Sashimi Bowl (Serves 2 - ie 2 portions)
Approx 688kCal Per serving
160g of Tuna Sashimi
120g of Salmon Sashimi
Japanese Seaweed Salad
Avocado (half)
Scallop Salad
Sesame Oil
One cup of Brown Rice
Japanese Ginger
Japanese Rice Wine Vinegar
Low Sodium Soy Sauce
Sesame seeds
Green Onions!
To make the rice,
Mix 1 tablespoon of rice wine vinegar to a cup of cooked brown rice, a teaspoon of maple syrup and some salt
To make the sashimi, chop up the fish, add a teaspoon of sesame oil, two tablespoons of low sodium soy sauce, sesame seeds, 1-2 Tablespoons of Rice Wine Vinegar, a bit of green onions!
Now just put everything together, add some ginger if you like to! I love this dish soooo much!

Paleo Banana BreadDedDDED (it's good)
Serves 9. Approx 143 kCal per Serving.
Wet Mix
3 super ripe bananas (300g)
1 Tablespoon of Coconut Oil
2 Large/X-Large Eggs
3 Egg Whites
1 teaspoon of Vanilla Extract
1 teaspoon of maple syrup (if your bananas are not ripe enough)
Dry Mix
55g of coconut flour
55g of almond meal/almond flour
1 teaspoon of baking soda
I mix all the wet ingredients in the blender, then pour it into the dry mix. Then fan bake it in the oven for 25 - 30 mins at 180 degree celsius / 350 Fahrenheit.
Bake time may vary depending on your oven.

Zucchini Salmon Pesto
Serves 2
3 Zucchinis
2 Salmon Fillets
Fan Grill Salmon in the oven for around 10 minutes at 200 degree celsius/450 degree Fahrenheit. (may take longer or shorter depending on the thickness of salmon)
To make Pesto (serves 2)
Approx 210 kCal Per Serve
3 cloves of roasted or fresh garlic
20g of Pine Nuts
Half an Avocado
A cup of Basil
1/4 cup of Parmesan Cheese or Nutritional Yeast
A Tablespoon of Lemon
Salt and Pepper
Chuck all of those in a food processor and there's your pesto!
