台中│每天都是Vegan Day
如果我住在台中,一定天天去 Veganday Cuisine,首先老闆娘年輕美麗可愛,原來就是 布魯桑 / Bluesomeone!這家的食物非常非常高水準,我差點就錯過了,幸好有 植芮堂-素食保養專賣 介紹我去!
一打開菜單,第一道被我相中的就是招牌菜 - 很像紅酒燉牛肉,跟菜名一樣,真的很像,牛肉是猴頭菇,一口咬下去,立刻在咀裡融化,超嫩口的!然後,白花辣蔬翅,這根本就是雞翅吧,真的太像了,居然是花椰菜做的?!還有蘿蔔湯,不喜歡吃蘿蔔的我竟然吃不出來,還覺得湯很甜很好喝,太利害了!
除了主菜和小吃,當然少不了我最愛的甜點囉,分別點了巧克仙度瑞拉:朱古力味不會很重,淡淡的有點像咖啡味,超喜歡;提拉米蘇:選用豆腐做奶油,超好吃,大愛;法式草莓蛋糕 (抹茶味):這是新品喔,不管你是否抹茶控,也會立馬愛上;檸檬塔:酸酸甜甜的,很開胃,吃完覺得還可以再繼續!
差點忘了,這家的飲料也是超利害的,黑糖拿鐵和經典豆香奶茶是必點!
Veganday Cuisine 實在讓我太驚豔了,無論是主菜、小菜、甜點、飲料,還是裝潢、老闆、員工、還有寄賣純素周邊的小物品 (保養品、化妝品、環保物品)等等等等,都做得非常完整和完美!超級羨慕住在台中的你們,老闆娘我求你快來香港開一家!

If I live in Taichung, I must go to Veganday Cuisine every day because it's really amazing. No matter it's main course, side dish, dessert, drink, decoration, the owner, the staff etc. All done very complete and perfect! Super envy of you living in Taichung, please come to Hong Kong to open one for us!
As soon as I opened the menu, the first one was the signature dish - Vegan boeuf burgundy without wine. It was really like red wine stewed beef. The beef is actually monkey head mushroom. It melts immediately in the mouth when you bite it! So Juicy! Then, the cauliflower wings, this is just same as chicken wings? ! There is also a radish soup, I don't like to eat radish, but I didn't realize it is and I even think that the soup is very sweet and tasty!
In addition to the main dishes and snacks, of course, my favorite desserts come to the end, I ordered 3 different kinds of vegan cakes, and the owner offer us a new mutcha strawberry cake as well! I can't stop eating those cakes because they are just tooooo good~

Ingredients:
For the crust:
170g pastry flour
50g maple syrup
50g oil
For the filling:
200g soy milk
40g maple syrup
20g tapioca starch
1/2 tsp agar powder
zest of a lemon
juice of a lemon
1/2 tsp turmeric
For the meringue:
100g chickpea juice(from 200g chickpea & 300g water)
70g cane sugar
1/2 tsp vinegar
1 tsp vanilla extract
Instructions:
1. soak chickpea overnight. boil with pressure cooker for 5 minutes.
2. mix pastry flour, maple syrup and oil and bake it for 20 minutes at 350F / 180C.
3. put all the ingredients of lemon custard and bring to a boil or until it thickens.
4. whip chickpea juice, vinegar and vanilla extract until it forms stiff peaks. add sugar in batches.
5. put together everything.

「作り方」
1、ひよこ豆を一晩浸水し、圧力鍋で5分ほど圧をかけます。
2、クラスト生地の材料を全て混ぜ合わせ型に敷き詰め、180℃で20分ほど焼きます。
3、フィリングの材料を全て混ぜ、とろみがつくまで弱火にかけます。
4、ひよこ豆の煮汁、酢、バニラエクソトラクトを混ぜ、ハンドミキサーでツノが立つまで混ぜる。きび砂糖を数回に分けて加える。
5、クラスト生地にフィリングを入れ、メレンゲを絞る。

Ingredients:
for the lemon curd:
400g coconut milk
100g lemon juice
2 tbsp lemon zest
80g sugar
40g tapioca starch(it doesn't have to be tapioca)
for the tart crust:
100g rolled oats
100g garbanzo flour(You could use any kind of other flour like wheat flour, rice flour etc)
40g almonds
60g oil
60g maple syrup
dried lemon & mint for garnish
*I sliced lemon 2mm thick and put them in dehydrator for over 18 hours at 125F/52C
*If you don't like the slimy texture of the lemon curd, try to use 20g tapioca starch and 1/2 tsp agar powder instead of using 40g tapioca starch.
Instructions:
1. put all the ingredients of lemon curd and gently heat it up over low heat until it brings to boil. keep stirring.
2. strain the mixture with strainer.
3. combine all the ingredients of tart crust in food processor. run food processor until mixture is kind of sticky. push the mixture hard into a small tin. bake for 20 minutes at 350F/180C.
4. pour the lemon curd mixture into a tart crust, garnish with dried lemon and mint.

ココナッツミルク 1缶(400ml)
レモン汁 100g
レモンの皮 大さじ2
きび砂糖 80g
タピオカ澱粉 40g(タピオカでなくても構いません。)
☆タルト☆
オーツ 100g
ひよこ豆粉 100g(小麦粉や米粉など、なんでも代用OKです。)
アーモンド 40g
オイル 60g
メープルシロップ 60g
ドライレモン
ミント
「作り方」
1、レモンカードの材料を全て混ぜてとろみがつくまで火にかけます。舌触りをよくしたい場合は裏ごしします。
2、タルト生地の材料を全てフードプロセッサーにかけます。
3、型に敷き詰め、180℃で20分ほど焼きます。
4、レモンカードをタルトに入れ、飾り付けしたら完成です。
※レモンカードのモチモチした感じが好きでない場合は、タピオカ澱粉40gの代わりに粉寒天小さじ1/2とタピオカ澱粉20gで代用すると良いと思います。
※ドライレモンは、レモンを2mm厚にスライスしてディハイドレーターで52℃で18時間ほど乾燥させました。

a hint of salt
For the filling:
100g pastry flour
30g almond flour
50g oil
80g soy milk
50g cane sugar
1 tsp baking powder
1 tsp vanilla extract
1/2 tsp cinnamon powder
For the garnish:
600g apple
1 tsp lemon juice
200g water
Instructions:
1. combine all the ingredients for the crust. place the dough into a tart tin.
2. bake at 350F/180C for 10 mins.
3. peel apples. simmer with water and lemon juice until apples soften.
4. combine all the ingredients for the filling, pour the mixture into the crust.
5. put apples on top.
6. bake at 350F/180C for 30 mins.
