What a beautiful day to seize the day. Joke, I look and feel the opposite of this pic. My hair is in need of a good wash, I’m wearing my bin bag coat (that I happen to love because I never get too warm or cold in it), I just finished devouring a McDonalds breakfast to cheer myself up as I’m sitting in my car taking a breather while my toddler is resting up from tantruming all week. Good morning! Having breakfast with the kiddos while the hubby conquers his 9-hole.

Truth be told, a family vacation is never going to be relaxing. I have been nagging non-stop because these kids just don't seem to listen, the hubby has flared up and raised his voice at them, we have to keep telling them off when they misbehave or show disrespect because nurturing kids never takes a holiday.

If I look like I haven't been sleeping well, it's because the toddler has been waking every few hours to demand for his milk. While I was breastfeeding, the little sister woke up to go to the toilet and bawled when she couldn't find the light switch, so the hubby had to wake in the end too. Not to mention that I have been taking so many pics and vids and uploading them because I have to work to earn this trip. So if you are a fellow parent with young kids, you will know what I mean when I say a holiday is never a holiday.

Nonetheless, I've definitely rested and felt much more relaxed than at home (yoohoo, no laundry to do, no need to cook, no cleaning to do too!). A family holiday is always very much welcome and I love how we are making memories every day to last us for a lifetime.

Using cooked rice is a quick and easy way to make Rice Porridge (Congee)!

Rice Porridge (Congee)

Difficulty: Super Easy
Time: 20min
Number of servings: 1

Ingredients:
3 tbsp. cooked rice
150ml water

Directions:
1. Put cooked rice and water in a pot.
2. Bring to a boil then turn down to low and cook for 10 minutes. *if you want the rice water, skim the liquid.
3. Stop the heat, cover, then steam for 10 minutes. *you can grate the congee for baby food.

You can eat with Umeboshi (pickled plum), Shio-Kombu (salted kelp), salmon flakes, or any kind of rice seasoning of your choice!

My daughter runs away from the breakfast table… so I ended up making these, if she runs away, I can feed her one by one chasing in a busy morning. Haha

Toppings are my daughter’s favorites.

Quick Toddler Breakfast Toast Idea

Difficulty: VERY Easy
Time: 5min
Number of servings: 1

Ingredients:
a slice of bread
ketchup
2 sausages (no casing)
sliced cheese *if you like

Directions:
1. Remove the crusts from the bread, then cut it into small squares using kitchen shears.
2. Pipe out dots of ketchup on top of the bread squares.
3. Place some sliced cheese if you like
4. Thinly slice the sausages and place them on top.
5. Bake in the oven until cheese melts.

*daddy eats the bread crusts… haha
