昨天Narayan一大早四點多就要出差前往機場,我為他做了一頓有機純素飛機餐讓他路上帶著吃~~不但比一般素食飛機餐美味健康,還省了塑膠餐具(自己感到有這種女友真是沒話說!哈哈哈😂)
食材:
◦ 有機豆乾
◦ 有機萌芽豆類
◦ 有機羽衣甘藍
◦ 有機紅莧菜
◦ 有機黑藜麥
◦ 有機櫻桃小番茄
◦ 有機義大利香醋
◦ 營養酵母粉
◦ 薑黃粉、歐芹、黑胡椒、牛至等調料
◦ Table Tasty無鹽調料(這個東西超強,建議大家google研究一下)
作法:
◦ 把藜麥煮好後,和切半的小番茄一起拌在底層
◦ 用清水炒豆乾和萌芽豆類,加入薑黃粉和上列其他調味料
◦ 羽衣甘藍和紅莧菜切小段直接擺上,淋上義大利香醋
這頓飯裡含有十字花科蔬菜、綠葉蔬菜、豆類、全穀物和香草,不含精緻澱粉,製作容易,營養滿分!💚

Before Narayan travelled for work yesterday, I made him a whole food plant-based in-flight meal that's much healthier and tastier than what he could get on the plane, and helps reduce plastic use (I'm very proud of myself hahaha).
Ingredients:
◦ organic bean curd
◦ organic sprouted beans
◦ organic kale
◦ organic amaranth
◦ organic black quinoa
◦ organic cherry tomatoes
◦ organic balsamic vinegar
◦ nutritional yeast
◦ parsley, black pepper, oregano, turmeric, etc.
◦ Table Tasty (google this if you don't know it - it's magical!)
Instructions:
◦ boil the quinoa and mix with halved cherry tomatoes when it's ready
◦ fry bean curd and sprouted beans with turmeric and other spices listed above
◦ chop kale and amaranth and sprinkle some balsamic vinegar on top
This nutritious, easy meal contains beans, cruciferous, greens, whole grains and herbs. 💚

Ingredients:
For the base:
100g macadamia nuts
50g almond pulp
10g cacao powder
40g water
10g instant coffee
For the filling:
200g cashew nuts
250g water
100g coconut oil
50g maple syrup
50g agave syrup
1 tbsp nutritional yeast
1 tsp vanilla extract
Instructions:
1. soak madam nuts overnight.
2. blend all the ingredients for the base with a food processor.
3. transfer the base mixture to the cake tin and push down evenly.
4. blend all the ingredients for the filling with a high power blender.
5. pour the mixture into the cake tin.
6. leave it in freezer for 6 hours or more.

1、マカダミアナッツを一晩浸水します。
2、ベース生地の全ての材料をフードプロセッサーにかけます。
3、型に移し、全体を平らにします。
4、フィリングの全ての材料をハイパワーブレンダーで滑らかになるまで混ぜます。
5、型に流し入れます。
6、冷凍庫で6時間以上冷やします。

This is the second week of what i eat in a week! Attempting intermittent fasting again. It was quite difficult for the first few days but it gets easier!
Really happy that I lost a kg in a week. It's mostly water weight since I get bloated from water so easily. I don't really restrict myself too much, of course I ate a lot less sugar since I came back. I was really packing it on when i was overseas lol. I still really enjoy my healthy meals. They are DELICIOUS, except for that black bean whatever bean yucky spaghetti.

Tofu Mushroom Soba
Serves 2 - ie 2 portions
200g Tofu
Mushrooms (as much or as little as you like) I just bought a pack of mushrooms. There's 3 different types in mine.
300g of Soba Noodles
A Tablespoon of Miso Paste
2 Tablespoon of low sodium Soy Sauce (Less or More depending on how tasty you want it to be)
Fry the tofu separately.
Cook the mushrooms with some garlic. Add some miso paste and soy sauce and mix it well. Then add the cooked soba noodles! (I use frozen soba noodles, so I just cook them in hot water, drained them and add to the mix.)
Stuffed Capsicum

1 Red Bell Pepper (Capsicum)
2 Eggs
1 Egg White
A handful of Spinach
Salt and Pepper
Fan bake at 180 degree celsius/350 Fahrenheit for 25 mins!
Too easy! Tasty af!

Sashimi Bowl (Serves 2 - ie 2 portions)
Approx 688kCal Per serving
160g of Tuna Sashimi
120g of Salmon Sashimi
Japanese Seaweed Salad
Avocado (half)
Scallop Salad
Sesame Oil
One cup of Brown Rice
Japanese Ginger
Japanese Rice Wine Vinegar
Low Sodium Soy Sauce
Sesame seeds
Green Onions!
To make the rice,
Mix 1 tablespoon of rice wine vinegar to a cup of cooked brown rice, a teaspoon of maple syrup and some salt
To make the sashimi, chop up the fish, add a teaspoon of sesame oil, two tablespoons of low sodium soy sauce, sesame seeds, 1-2 Tablespoons of Rice Wine Vinegar, a bit of green onions!
Now just put everything together, add some ginger if you like to! I love this dish soooo much!

Paleo Banana BreadDedDDED (it's good)
Serves 9. Approx 143 kCal per Serving.
Wet Mix
3 super ripe bananas (300g)
1 Tablespoon of Coconut Oil
2 Large/X-Large Eggs
3 Egg Whites
1 teaspoon of Vanilla Extract
1 teaspoon of maple syrup (if your bananas are not ripe enough)
Dry Mix
55g of coconut flour
55g of almond meal/almond flour
1 teaspoon of baking soda
I mix all the wet ingredients in the blender, then pour it into the dry mix. Then fan bake it in the oven for 25 - 30 mins at 180 degree celsius / 350 Fahrenheit.
Bake time may vary depending on your oven.

Zucchini Salmon Pesto
Serves 2
3 Zucchinis
2 Salmon Fillets
Fan Grill Salmon in the oven for around 10 minutes at 200 degree celsius/450 degree Fahrenheit. (may take longer or shorter depending on the thickness of salmon)
To make Pesto (serves 2)
Approx 210 kCal Per Serve
3 cloves of roasted or fresh garlic
20g of Pine Nuts
Half an Avocado
A cup of Basil
1/4 cup of Parmesan Cheese or Nutritional Yeast
A Tablespoon of Lemon
Salt and Pepper
Chuck all of those in a food processor and there's your pesto!

Ingredients:
80g cashew nuts
150g water
1 capsule of probiotic powder
1/2 tsp salt
1 tsp apple cider vinegar
240g butter flavored coconut oil (or use 240g refined coconut oil and 2 tsp nutritional yeast instead)
2 tsp sunflower lecithin powder (optional)
Instructions:
1. blend cashew nuts and water in a blender. add probiotic powder and stir well. leave it at room temperature to allow it ferment for 6 - 12 hours.
2. add all the ingredients into a blender and blend.
3. pour into a silicon mold.
4. leave it in a fridge for a few hours.
5. Enjoy!
It lasts a few weeks in a fridge. If you keep it in a freezer, it lasts a few months.

1、カシューナッツと水をブレンダーにかけ、プロバイティックを加えて常温で6〜12時間ほど発酵させます。
2、全ての材料をブレンダーの容器に入れて、ブレンダーにかけます。
3、シリコンなどの型に流し込みます。
4、冷蔵庫で数時間ほど冷やしたら出来上がりです。
5、食べ過ぎには気をつけてねーーーーーっ!(美味しいから)
