正在裝修東京的房子做蔡菜館。
一切從頭開始。
朋友問我為什麼在香港上了軌道,卻突然到了東京。
有兩個原因:
標準化
一直以來都不敢開分店,其實對我來說最大難度是『標準化』。
『標準化』也是中菜的一大難題。
同一個食譜,不同的中廚會弄出不同的口味。
就算是同一個廚師,在不同的情況下,同一個菜式也不免有差別。
日本人在『標準化』上是世界首屈一指的。
所以,日後就算開不開分店,也很想解開這個難題。
日材中煮
有些日本食材配上中菜的做法,有另一種迷人風味。過去的一年多也不停在這方面研究。
基於以上兩個原因,膽粗粗來到東京。
與日本的合作夥伴合約到期,剛巧又遇上世紀疫症,所以決定改裝東京的小車庫做一間小餐館。
很想安慰自己,說很多大企業也是從車庫開始。。。
但是經營了十年的蔡菜館卻是越做越小。以前在香港的蔡菜館,可以招呼20位客人,現在在東京的蔡菜館,卻最多只能招呼4位客人。
Facebook專頁超過1,000,000,餐廳只能坐4個人。。。
無論如何,真心感激大家一直以來的支持,也感激自己的一股傻勁。
不知以後會怎樣,大家真的要互相鼓勵,用感恩之心及傻勁,一起面對笑看風雲。

Taking a fresh start...
Many friends asked why I switched track to Tokyo when I've got things up and running well in Hong Kong.
Well, there were two reasons.
1. STANDARDIZATION
I've always been cautious about branching up. My major consideration was standardization, a prominent challenge for the Chinese kitchens.
The same recipe would taste miles apart in the hands of different cooks. Even the same dish prepared by the very same person could taste different at different times.
Japan is known to excel in standardization. Even if I may not necessarily branch up, I would still love to dig deep and understand how they do it.
2. CHINESE CUISINES WITH JAPANESE INGREDIENTS
Sometimes incorporating the right Japanese ingredient can take a Chinese dish to another level of deliciousness. This was actually what I've been working on over the past year.
So there you go. These were my reasons for taking that bold move to Tokyo.
Now for a little update. As my contract with my local partner expired, coinciding with the global pandemic under which everything comes to a stall, I'm embarking on a new project by converting a garage into a little bistro.
I tried to told myself that many great enterprises start from a humble garage as well.
But in reality, the decade-long ChoyChoy Kitchen has been growing backwards. Back in Hong Kong we could serve 20 guests, compared with four now in Tokyo. A little four-seat joint embodying a Facebook page with over a million followers...
No matter what, I am deeply grateful for the unfailing support from all of you, and also my own persistent drive to press forward as well.
Nobody knows what the future holds. Let's stand by each other and embrace tomorrow together. Stay humble. Stay foolish.

(Primitive Technology Looking for food & Trap and cooking snakes india - Survival Skills)
We go in search of food every morning. On this video we saw a snake crawling into a small cave. We used a copper shovel that we had made to dig snakes and we saw a lot of snakes in the nest we dug. We then cooked the snakes we hunt and ate them which were very delicious.
Next: We found out that our house was in quite a bad condition. It could easily collapse. We are considering to demolish it to rebuild or potentially repair it. You can watch it in the following video. Thank you

Long time no hair tutorial! Sorry it's been a while guys! I was inspired to create this hairstyle after seeing it so many times in korean style magazines. I tried it out and have been loving the results. It only takes a few minutes too.
It is definitely something different. It is not your everyday braid because you will be learning to braid in four sections instead of 3. Dont worry- the concept is just as easy. It just takes practice.
You can use your thin scarves or cut out strips of fabric to weave into your hair. It is a great way to dress up your outfit. Denim is great for all seasons. So definitely dig out old clothes and recycle them by turning them into hair accessories.
This hairstyle looks best on shoulder to long hair. If your hair is shorter =( Maybe try hair extensions? Or cut smaller chunks of fabric perhaps.
Hope you guys enjoy this hair tutorial. It's unique, quirky and fun. I think it looks great with floral clothing too.

We used an empty plastic bottle to make a gelatin dessert that looks like a watermelon. This watermelon gelatin dessert has a nostalgic strawberry taste. This recipe is light on both sweetening and coloring, so feel free to add syrup to taste. It's hard to tell on the video, but when completely cooled, it will solidify to the consistency of gummy candy.
*Recipe* (enough to fill one 500 ml plastic bottle)
1. Thoroughly wash a plastic bottle, then coat the inside with a thin layer of vegetable oil. (You should still be able to remove the gelatin if you skip the oil)
2. For the green gelatin, dissolve 13 g of gelatin powder in 115 g of hot water. Stir in 18 ml (22 g) of green syrup.
3. Add the mixture to the plastic bottle from step 1, then place in ice water and circulate to cool.
4. For the clear gelatin, dissolve 11 g of gelatin powder in 95 g of hot water. Stir in 12 ml (15 g) of clear syrup.
5. Add this to the cooled mixture from step 3, then cool again in ice water.
6. For the red gelatin, dissolve 28 g of gelatin powder in 240 g of hot water. Stir in 42 ml (50 g) of red syrup. The grocery store syrup wasn't quite red enough, so we added 3 g of Monin red syrup.
7. Cool the liquid gelatin with ice water. Once it starts to thicken, mix in some chocolate sprinkles.
8. Pour this mixture into the bottle from step 5. It will rapidly begin to solidify, so do this quickly.
9. Cool completely in the refrigerator.
10. Remove from the plastic bottle, and cut into slices. If you warm up a knife in hot water, and don't dry it off, it will cut through the gelatin very cleanly. A slice guide for slicing bread came in handy here.
11. Dig in. Gelatin is a perfect snack for the summer months.
空きペットボトルを使って、スイカみたいなゼリーを作りました。懐かしのイチゴ味のスイカゼリーです。色も甘さも控えめレシピです。お好みでシロップを追加してください。動画では分かりづらいですが、しっかり冷やすとグミほどのかたさが出ます。
*レシピ*(500mlのペットボトル 1本分)
1.よく洗ったペットボトルの内側に植物油を薄く塗る。(省略してもゼリーを取り出すことができそうでした。)
2.緑のゼリー作ります。お湯 115gに粉ゼラチン 13gを溶かす。緑のシロップ 18ml(22g)を入れ混ぜる。
3.1のペットボトルに入れ、氷水に入れ回しながら冷やす。
4.透明のゼリー作ります。お湯 95gに粉ゼラチン 11gを溶かす。透明のシロップ 12ml(15g)を入れ混ぜる。
5.3に入れ、氷水に入れ回しながら冷やす。
6.赤のゼリー作ります。お湯 240gに粉ゼラチン 28gを溶かす。赤のシロップ 42ml(50g)を入れ混ぜる。明治屋のシロップだけでは赤が足りなかったのでモナンの赤シロップを3g足しました。
7.氷水にあてながらゼリー液を冷やす。少しとろみが付いたら、チョコスプレー(チョコレートスプリンクル)を加え混ぜる。
8.5に流し入れる。固まりだすと早いので急いで作業する。
9.冷蔵庫でしっかりと冷やす。
10.ペットボトルから取り出し、切り分ける。お湯で温めたナイフで水分を拭わず切るときれいに切れます。パンを切るときに使うスライスガイドを使うと便利でした。
11.いただきます。暑くなってくるとゼリーがおいしい、ってかこれ妄想グルメのスイカシリーズ2019第一弾だわ!
