The rainforest at night can be truly enchanting, nature in its purest form and greatness. As the sun goes down, diurnal wildlife would look for safe places to sleep while the nocturnal awakes to look for their food. Apart from my pure love for wildlife observation during many nighttime wanderings, this mesmerizing bioluminescent mushrooms are also a favorite to come across with.

[減糖大哉問]
當甜點老師的時候,最常被學生問的就是“食譜可以減糖嗎?” 有時候可以,但有時候我面露難色時,學生就會很快地接著問“那....我可以用xxx代替砂糖嗎?“
我自己剛開始接觸烘培的時候也有一樣的疑問,自己亂減糖或以其他替代品代替糖的後果,有時候沒事(擦冷汗),有時候夜路走多了難免遇到鬼XD,做出一堆災難。
好在,料理科學的興盛,以及站在許多前人經驗的肩膀上,我們越來越清楚糖(蔗糖/白砂糖)在烘培中扮演的重要角色(甜度,好啦是廢話):
1. 糖會吸附水分子,屬於柔性材料。由於此特性,糖可以減緩餅乾和蛋糕烘烤時水分子蒸發的速度。
2. 糖的吸水性可以延長烘培產品的保存期限,即使冷卻後,水分會糖結合而不是揮發到空氣中。最好的例子就是傳統的磅蛋糕,大量的糖分使蛋糕可以在常溫中保存5~7天並維持濕潤口感。
3. 糖在高溫時(160C/320F) 以上會產生焦糖化反應以及一系列複雜但無敵美味的化學反應,你喜歡的金黃色麵包外表或是蛋糕表皮就是焦糖化反應的產物之一。
4. 影響冰品的質地。為何冰塊吃起來硬邦邦,但冰淇淋卻是綿密化口呢?也是因為糖。大量的糖除了降低水的冰點,也讓冰晶形成的速度相當快並且細小。
理智上,我們都知道糖的重要性,但感性/潛意識上我們就是覺得太多糖對身體不好,因此跟大家分享幾種常見糖的替換品 &注意事項:
*以下提供的是一般通則,根據不同食譜也許需要更多調整
- 黑糖/紅糖(Dark brown sugar / Light brown sugar) :甜度與白糖相近,大部分來說可以1:1替代糖。成分中含有較多的轉化糖,吸濕性比白糖佳,在製作帶有嚼勁的餅乾時,黑糖是很好的選擇。相對來說,想要做出酥脆餅乾時就不太適合。想做出外脆內軟的美式經典餅乾?https://goo.gl/hGIqJH
- 蜂蜜:富含維生素與礦物質,甜度高於糖。3/4杯替代1杯糖,並減少2湯匙的其他液體材料。除非食譜有酸奶或是其他鹼性材料,加一撮的小蘇打粉來平衡它的酸性。易使烘培品快速上色。
- 楓糖:甜度高於糖20%,以3/4杯替代1杯糖,並減少3湯匙的其他液體材料。易使烘培品快速上色。
- 海藻糖:甜度只有糖的40%,保水性佳,可以延緩澱粉老化。低甜味也表示需增加用量,結晶性強,無法使糖產生焦糖反應,適合與糖搭配使用。
- 玉米糖漿(Corn syrup): 富含轉化糖,糖度略低於糖,常使用於料理和糖果食譜。特色是不會結晶,並且不像蜂蜜或黑糖會增加特殊風味。
- 糖粉:一般來說是無法替代。以體積論,糖粉比糖輕,因此1 ¾杯替代1杯糖,且避免在需要打發麵糊的食譜中使用糖粉,例如蛋糕。糖粉通常會添加少許玉米澱粉預防結塊,所以也不適合用於飲料食譜中(除非你剛好喜歡稠稠的口感)

最後,純粹心得分享:第一次製作時最安全的方式總是按照食譜。但是不可否認,歐美的口味偏甜,如果你的食譜來源是這個區域的話,也許少個10~20%的糖量會比較符合台灣人的口味。如果食譜本來就來自日本或台灣師傅的話,應該維持原糖量就可以了。
呼~以上是看了很多資料+綜合我個人經驗的分享文,希望可以小小的回答『可以減糖嗎?』的大哉問。我是滿鼓勵大家實驗的,不論成功或失敗,在實驗中可能會造成更多驚喜(驚嚇?!),但這讓烘培的過程更有趣了,不是嗎?

網友提問打發蛋白霜的糖是不是可以用蜂蜜/楓糖替代呢?
蛋白沒加糖也可以打發,但是糖對於打出細緻、穩定的蛋白霜有重要的功用,無法直接用蜂蜜、楓糖取代。變通的方法是,如果食譜是分蛋法(蛋白、蛋黃分開打發)倒是可以把蜂蜜取代蛋黃鍋部分的糖。

Do give the recipe a try, one thing to take note is the temperature of the oil use for deep frying be sure to keep it around 190 degrees C so you won't end up burning them.
