**For the crust: Phần đế bánh
100g butter (bơ) = 3.53 oz or ½ cup
130g all-purpose flour (bột mì đa dụng) = abt 1 cup
1/8 tsp salt (chút muối)
80ml water (nước) = 1/3 cup
**For the filling: Phần nhân trứng

1 tbsp cornstarch (1 ms bột bắp)

とろりんクリームパン♡ | Cream Pan(Custard Buns)
‘Cream Pan’ is sweet bread roll filled with custard cream. I loved it when I was a little girl, and, of course, I still love it. I bet you would love it once you taste it.
レンジで簡単カスタードクリームをたっぷり詰めたクリームパンです。通常クリームパンは固めに炊いたクリームを包みますが、これが意外に包むのが大変で、、柔らかすぎるとうまく包めず、、、。
ってことで、とろりんクリームを後から詰めちゃいました!
仕事から帰った夫がかぶりつきながら一言。
「クリームパンだーーーー♡」

【Ingredients】8 Bread rolls
Bread Dough:
★150g Bread flour
★12g Sugar
★2g Salt
★6g Non-Fat Dry Milk Powder
75g water
2g Dry yeast
18g Whole egg
15g Unsalted butter(room temperature)
Egg wash
15g Egg(Beaten egg )+1/2tsp water
Vanilla Custard Cream:
2 Egg yolks
30g granulated sugar
18g Cornstarch
180g Milk
vanilla extract
The best water temperature for the dough: About 30℃ for spring and autumn. About 10℃ for summer, and about 40-45℃ for winter.
【Directions】
●Make Custard( Microwave )
① Place all ingredients in a heat-proof bowl and whisk well to combine well and cover with plastic wrap.
②Cook in the microwave in medium power about 600W for 1 minutes. Mix well, then cook again in medium power for 1.5 minutes and mix well.
③Last, add the vanilla essence and mix
④Immediately transfer into a container and let cool. (Wrap with plastic wrap,so that the surface doesn't dry out, pressing lightly on the plastic to ensure it's tightly wrapped)
Put it in the fridge once it has cooled down.
●Make Bread Dough
①Combine water and dry yeast.
②Combine the dry ingredients (★)and mix together with a whisk.
③Add ①and Whole egg,and mix.
④Put it on the table and knead. (10mins)
⑤Add butter and knead more. (5mins)
⑥Make it round, then leave it at a warm place until it gets twice as bigger. (primary fermentation)
⑦ divide it into 8 pieces and make them round.
⑧Cover them with a wet cloth and leave them for 15 mins. (bench time)
⑨After resting, deflate with your hand,and make them round.
⑩Place the bun on baking paper on a baking tray and leave it at a warm place until they get twice as bigger. (secondary fermentation)
⑪Brush dough with egg wash.
⑫Preheat the oven at 190℃, bake 374 °F/190℃ 10-12min.
Place it on a wire rack to cool.
*Baking time will vary according to your oven so please adjust accordingly.
*Be careful not to let the dough dry out when you are letting it rise or rest.
*When the dough is too moist and sticky, powder the dough a little.
●Finish
①Put the Custard Cream in a bowl and mix well.
②Fit a pastry bag with a small round tip, and fill with the cream.
③ Pipe the cream into the bread rolls.
【材料】8個
Bread Dough:
★強力粉 150g
★砂糖 12g
★塩 2g
★スキムミルク 6g
水 75g
ドライイースト 2g
全卵 18g
無塩バター (室温) 15g
*塗り玉
全卵(溶き卵)15g+水 小さじ1/2
カスタードクリーム
卵黄2個
グラニュー糖 30g
コーンスターチ 18g
牛乳 180g
バニラエッセンス
【作り方】
●カスタード:
①耐熱ボウルに卵黄、砂糖、コーンスターチ、牛乳を入れてよく混ぜる。
②ふんわりラップをして電子レンジ600wで1分加熱する。よく混ぜ、再び600wで1分30秒加熱する。
③バニラエッセンスを加えてよく混ぜる。
④バットなどに移して平らにし、上にぴったりとラップをして冷ます。(冷めたら冷蔵庫へ)
●パン生地:
①水とドライイーストを混ぜる。
②ボウルに材料(★)を入れて泡立て器で混ぜる。
③①と全卵を粉の中央に加えて混ぜる。
④テーブルの上に置きこねる。 (約10分)
⑤バターを加えてさらにこねる。 (約5分)
生地にツヤが出たらok。
⑥丸めて、2倍になるまで暖かいところに置く。(一次発酵)
⑦生地のガスを抜き、8つに分けて丸める。
⑧濡れた布巾などを被せて、15分間置く。 (ベンチタイム)
⑨生地の空気を抜き、再び丸めなおす。
⑩天板に並べ、2倍になるまで暖かいところに置いておく。 (二次発酵)
⑪塗り玉を刷毛で優しく塗る。
⑫オーブンを190℃に温め10-12分焼く。
焼き上がったら、ワイヤーラックの上に置いて冷ます。
●仕上げ:
①ボウルにカスタードクリームを入れてよく混ぜる。
②絞り袋に小さめの丸口金をつけて、クリームを入れる。
③パンの横にお箸などで穴を開け、そこからクリームを詰める。
*焼く時間はオーブンによって異なりますので、それに応じて調整してください。
*発酵中やベンチタイム、成形時は生地が乾燥しないよう気を付けて下さい。(乾燥するとパンが膨らみません、手早くやること、濡れ布巾などを被せるのも乾燥を防いでくれます)

A. Custard fillings
- 5 salted egg yolks (65 - 75 gram) (*)
- 45 gram condensed milk
- 50 gram unsalted butter - room temperature (very soft)
- 50 gram coconut milk
- 30 gram dry milk powder
B. Bao Dough
* Part 1:
- 250 gram all purpose flour
- 1/2 tsp instant yeast
- 1/2 tsp sugar
- 135 - 145 ml milk (start with 135 ml, add extra if dough is too dry)
- 30 ml oil
* Part 2
- 75 gram flour
- 1 egg white (30 gram)
- 30 gram sugar
- 10 gram dry milk powder
- 4 gram baking powder
(*) Salted eggs can be found in Asian groceries. If you can't find them, you can use normal boiled yolks and some salt.
