[TAIPEI - Sushiyoshi Taipei /
After it’s HK branch, this 2 star michelin Osaka sushi joint touches down in Taipei in April. Even with the aid of Michelin, it’s not hard to imagine the style of the cuisine and that’s why I didn’t want to try the HK not this new Taipei branch.
By chance my friend happened to try when it first opened. He felt it’s quite an unique experience and as the original star chef Hiroki San is grounded in Taipei (until End May) due to recent outbreak, he made another reservation and bring us to give it a try.
Frankly speaking, one can feel that chef has put in effort, ideas and creativity to design every course. As long as you don’t go it with traditional eadomae sushi standard as benchmark, generally that’s not much flaw to pick on and not much disappointment. You just need to keep an open mind and treat this experience in having a meal in the currently trendy Casual fine dining restaurants with Top 50 and Michelin recognitions (at most half the price).
To sums up:
1. Memorable experience
2. Chef is very nice
3. Can’t be just me who has this experience 😏 (I.e I have to give 😍)

A slightly pissed off meal at Atelier Crenn, left without a visit to the kitchen.
I've heard more bad things than good for this restaurant, so I wasn't too eager to try it even when I was in San Francisco. This time, I've already tried a lot of the renown restaurants, so I thought why not, since it's recently got a third star.
But jinxed...
Four problems:
1. The technical foundation is weak (I was telling Eric, maybe because she never went to culinary school, so no one was on her back about techniques. He checked online, lo and behold. As to why I can see the technical foundation is weak, I'll write more in my column.)
2. The menu development is a complete failure, we were eating course after course, waiting for the main course to come, then suddenly are told, the dessert is coming... huh?!
3. Every dish has a glaring shortcoming, and I have ideas on how they could be improved.
4. Repetition of techniques (From amuse-bouche to dessert, the same technique was used 4 times!!! Shocked), the seasoning elements appeared again and again, showing the chef's knowledge and imagination have reached a limitation.
After Arzak, this is another restaurant I don't get how it deserves 3-star. If this is a 3-star restaurant, then some 3-star restaurant I've been to should be 4 or 5 star.
This ended up costing US$835 for 2 people. It would have been better spent at Benu. The end.

Also it is way healthier than using the roux since I didn't use any greasy fat ingredient!!!

This video will show you how to make Gyoza wrappers at home.
Of course using store-bought ones saves time, but making from scratch tastes even better :)
---------------------------------
How to Make Gyoza Wrappers from Scratch
Difficulty: Easy
Time: 1hr
Number of servings: 25-30 wrappers (about 3.7-inch rounds)
Ingredients:
100g (3.5oz.) cake flour
100g (3.5oz.) bread flour (strong flour)
1/3 tsp. salt
110ml warm water
*you can use 200g (7oz.) all purpose flour instead
Directions:
1. Sift together cake flour and bread flour for 2-3 times.
2. Mix salt in warm water.
3. Add salted water little by little into the dry ingredients, using a spatula or a spoon to mix, until you can form the mixture into a ball with your hands. Knead the dough for about 7 minutes. Add more water or flour depending on the consistency.
4. Shape the dough into a log and wrap in plastic wrap. Rest the dough at room temperature for at least 30 minutes. Meanwhile, you can prepare the filling.
5. Cut the log into 25-30 pieces. On a lightly floured surface roll out each piece into a 3.7-inch (9.5cm) circle. (Make the outer edge thinner than the center, if possible.) Dust it again with flour and stack it up.
You can cut out with a circle cookie cutter to make perfect circles.
Wrap tightly in plastic wrap and keep in the fridge (up to 3 days) until ready to use.
