印度椰子淮山蓮子湯:
材料:
印度椰子1個
鐵棍淮山1條
無花果5粒
美國紅蘋果2個
蓮子1兩
南杏1兩
果皮2片
處理:
1. 印度椰子浸水5分鐘。
2. 南杏、蓮子、無花果及果皮浸滾水10分鐘。
3. 鮮淮山刨皮。
4. 蘋果浸水5分鐘。
5. 鮮淮山切片,放入煲。
6. 南杏及無花果沖洗乾淨,放入煲。
7. 蓮子沖洗乾淨,起芯,放入煲。
8. 果皮浸軟,刮去囊,放入煲。
9. 柳子,切開,刨一片片,或切開1舊舊,放入煲。
10. 切開蘋果去芯,放入煲。
烹調:
1. 加入3升水落煲,煲滾。
2. 煲滾後,轉中細火,煲1小時,完成。
Lotus soup with Indian coconut and fresh yam:
Ingredients:
Indian coconut 1 No.
Fresh Yam 1 log
Dried figs 5 Nos.
US red apples 2 Nos.
Lotus 1 tael
Sweet apricots kernels 1 tael
Dried orange peels 2 pcs
Preparation:
1. Immerse the whole coconut into water, soak for 5 minutes.
2. Sweet apricot kernels, Lotus, dried figs and dried orange peels are to be soaked in tap water for 10 minutes.
3. Peel the fresh yam.
4. Soak apples into water for 5 minutes.
5. Slice fresh Yam, then put into pot.
6. Rinse kernels and figs thoroughly then put into pot.
7. Rinse lotus thoroughly and remove seeds, then put into pot.
8. Remove sac of dried orange peel after soaking in water, then put into pot.
9. Cut coconut into small pieces, put into pot.
10. Cut apples into shares, remove seeds, put into pot.
Steps:
1. Boil up 3L water in pot.
2. Turn to low flame after boiling up. Boil for 1 hour. Serve.

西洋菜豬踭比目魚湯
材料:
西洋菜2斤半
豬踭1斤
南杏1兩半
比目魚3件
蜜棗5粒
處理:
1. 比目魚,連包裝裝,清水解凍。
2. 西洋菜,清水加入粗鹽2湯匙浸洗,用筷子攪動,清水洗2~3次,擎乾水。
3. 比目魚,已解凍,用手輕輕揸乾水,擎乾水。
4. 南杏及蜜棗,清水沖洗乾淨,擎乾水。
5. 豬踭,大火在鑊中煲滾1鑊水,出水2分鐘,倒去水分,清水洗乾淨,擎乾水。
烹調:
1. 在煲內加入水5升,大火煲滾。
2. 水滾後,加入所有材料,煲45分鐘,夾起豬踭。
3. 大火在鑊中燒熱油1湯匙。
4. 放比目魚落鑊。
5. 比目魚,兩面煎至金黃色,加入湯內,繼續煲15分鐘。
6. 湯又煲了15分鐘,放豬踭入煲,煲10分鐘。
7. 完成,可享用。
Watercress halibut soup with pork hock
Ingredients:
Watercress 2.5 catty
Pork hock 1 catty
South apricot kernels 1.5 taels
Halibut 3 pcs
Candied dates 5 Nos.
Preparation:
1. Halibut, with plastics, defrost with tap water.
2. Watercress, put cooking salt 2 tbsp in tap water, soak it for a while, stir with a pair of chopsticks. Rinse 2~3 times with tap water. Hang dry.
3. Halibut, has been defrosted. Squeeze it lightly. Hang dry.
4. South apricot kernels and candied dates, rinse with tap water. Hang dry.
5. Pork hock, heat up a wok of water at high flame, soak for 2 minutes. Pour away water. Rinse with tap water. Hang dry.
Steps:
1. Heat up water 5L in pot at high flame.
2. Put all ingredients after boils up. Cook for 45 minutes. Pick up pork hock.
3. Heat up oil 1 tbsp at high flame in wok.
4. Put halibut in wok.
5. Halibut, 2 sides have been fried into golden yellow, put into soup. Continue to cook for 15 minutes.
6. Soup has been cooked for another 15 minutes, put pork hock into pot, cook for 10 minutes.
7. Complete. Serve.

牛鰍魚紅蘿蔔粟米排骨湯
材料:
牛鰍魚1斤
排骨頭1斤
紅蘿蔔2個
粟米3條
鮮淮山1支
無花果5粒
處理:
1. 排骨頭,清水洗乾淨,擎乾水。
2. 牛鰍魚,刮乾淨魚鱗,清除內臟,清水沖洗乾淨。
3. 粟米,去皮,清水洗淨,切開幾舊。
4. 紅蘿蔔,去皮,洗淨,切細舊。
5. 鮮淮山,洗乾淨表皮,戴上手套,輕手刨去皮,切大舊。
6. 無花果,清水浸。
烹調:
1. 淮山、粟米、紅蘿蔔及排骨,放入煲內,加入清水4升。
2. 加入無花果,大火煲滾。
3. 湯滾起後,轉中火。
4. 另一邊,大火在鑊中燒熱油1湯匙,放魚落鑊,轉中慢火煎香。
5. 魚煎至金黃色,反轉繼續煎。
6. 魚兩面都煎至金黃色。湯,轉大火滾起,放魚落煲,轉中慢火,煲2小時。
7. 湯,已煲了2小時,轉大火再煲10分鐘,熄火。
8. 完成,可享用。

Ingredients:
Flathead fish 1 catty
Pork ribs 1 catty
Carrots 2 Nos.
Sweet corn 3 Nos.
Fresh yam 1 log
Dried figs 5 Nos.
Preparation:
1. Pork ribs, rinse with tap water, hang dry.
2. Flathead fish, get it scaled, remove its intestines. Rinse thoroughly.
3. Sweet corn, remove its skin. Rinse thoroughly, then cut in several pieces.
4. Carrots, get them peeled. Rinse, then cut into small pieces.
5. Fresh yam, rinse its skin. Put on a pair of gloves, peel it lightly, then cut into big pieces.
6. Dried figs, soak in tap water.
Steps:
1. Fresh yam, sweet corn, carrots and pork ribs, put in pot, add water 4L.
2. Put dried figs, heat up at high flame.
3. The soup, turn to medium flame after it boils up.
4. On the other side, heat up oil 1 tbsp at high flame in wok. Put fish into wok, fry at medium~low flame.
5. Fish has been fried in golden yellow. Flip it over, continue frying.
6. The fish, two sides have been fried into golden yellow. The soup, turn to high flame, put fish in pot. Turn to medium~low flame, cook for 2 hours.
7. Soup, has been cooked for 2 hours, turn to high flame, cook for 10 minutes more. Turn off fire.
8. Complete. Serve.
