「馬告。」山上裡的胡椒～山胡椒
乾掉的馬告跟一般市面“黑胡椒”長得很像，黑黑的，但吃起來的風味與黑胡椒大不同，馬告有著獨特的風味，我將它分類為辛辣材料，但多了一個類似香茅的味道，而新鮮的馬告呈現鮮綠色，吃起來會帶點淡淡的檸檬香氣，有的山上長輩會把新鮮的馬告泡在礦泉水裡面喝，聽他們說喝馬告水可以消暑解熱。

馬告獨樹一幟的辛辣香甜味豐富了料理界，彷彿一點松露般加入食材提味，就能夠讓整道料理晉升到另一個層次。

「樹豆。」我想稱它為勇士豆啦～
前幾天用樹豆熬煮湯，在訪問時布農族人說喝了很“猛”，所以我覺得它應該配得上勇士湯的名號呀！在山下很少看到這個食材，然而樹豆卻是在山上最有名的材料之一，需要長時間烹飪，所以通常會與豬腳、排骨、山肉、高湯一起熬煮，環島走部落的偉義說，再加一些刺蔥，味道會提升到另一個層次呀！也可以仿照紅豆一樣先泡水再下去一起煮。

收集資料同時意外發現，原來部分客家人也有吃樹豆的習慣，這跟他們生活型態相關，有的客家人與原住民住在同山區，也因為彼此分享交流，在老一輩的客家食材中也曾出現樹豆。
