「馬告。」山上裡的胡椒~山胡椒
乾掉的馬告跟一般市面“黑胡椒”長得很像,黑黑的,但吃起來的風味與黑胡椒大不同,馬告有著獨特的風味,我將它分類為辛辣材料,但多了一個類似香茅的味道,而新鮮的馬告呈現鮮綠色,吃起來會帶點淡淡的檸檬香氣,有的山上長輩會把新鮮的馬告泡在礦泉水裡面喝,聽他們說喝馬告水可以消暑解熱。

馬告獨樹一幟的辛辣香甜味豐富了料理界,彷彿一點松露般加入食材提味,就能夠讓整道料理晉升到另一個層次。

"Litsea cubeba" Pepper in the mountain~ Taiwan native food
The dried "Litsea cubeba" looks very similar to the "black pepper" in the market, it's black but tastes very different from black pepper. "Litsea cubeba" has a unique flavor, I classify it as a spicy material, but there is one more It tastes like lemongrass, and the fresh "Litsea cubeba" is bright green, and it will taste a little lemony when it is eaten. Some elders on the mountain will soak the fresh "Litsea cubeba" in mineral water. They said that drinking "Litsea cubeba" water can cool down the heat.

「樹豆。」我想稱它為勇士豆啦~
前幾天用樹豆熬煮湯,在訪問時布農族人說喝了很“猛”,所以我覺得它應該配得上勇士湯的名號呀!在山下很少看到這個食材,然而樹豆卻是在山上最有名的材料之一,需要長時間烹飪,所以通常會與豬腳、排骨、山肉、高湯一起熬煮,環島走部落的偉義說,再加一些刺蔥,味道會提升到另一個層次呀!也可以仿照紅豆一樣先泡水再下去一起煮。

收集資料同時意外發現,原來部分客家人也有吃樹豆的習慣,這跟他們生活型態相關,有的客家人與原住民住在同山區,也因為彼此分享交流,在老一輩的客家食材中也曾出現樹豆。
