牛尾湯:
材料:
急凍牛尾2磅
蕃茄3個
洋蔥半個
紅蘿蔔半個
椰菜(細)半個
薯仔(大)1個
橙皮1片
薑1舊
蒜頭3粒
烹調:
1. 煲滾1煲水,熄火,放牛尾落煲,浸至牛尾完全解凍。
2. 洗乾淨煲。
3. 洗乾淨牛尾,放入煲。
4. 橙皮,清水浸15分鐘,洗淨,放入煲。
5. 蕃茄洗淨
洋蔥切條
紅蘿蔔切條
椰菜切小塊
薯仔1開4,放入煲
薑,切片,放入煲
蒜頭,去皮,放入煲
6. 加1升水落煲,大火煲滾後,轉中慢火,煲1小時。
7. 過了45分鐘,取出橙皮,轉大火,加入紅蘿蔔及洋蔥,滾起後,轉中慢火煲15分鐘。
8. 加入蕃茄及椰菜,再煲15分鐘。
9. 加入少許幼鹽及糖1茶匙,滾起,完成,可享用。

Ingredients:
Frozen oxtail 2 lbs
Tomatoes 3 Nos.
Onion 1/2 No.
Carrot 1/2 No.
Cabbage (small) 1/2 No.
Potato (large) 1 No.
Orange peel 1 slice
Ginger 1 No.
Garlics 3 Nos.
Steps:
1. Heat up a pot of water. Turn off fire. Put oxtail in pot. Soak it until it has been totally defrosted.
2. Rinse the pot.
3. Rinse oxtail thoroughly. Put it in the pot.
4. Orange peel, soak in tap water for 15 minutes. Rinse. Put into pot.
5. Rinse tomatoes.
Slice the onion.
Slice the carrot.
Dice cabbage into small pieces.
Potato, cut into 4 pieces, put into pot.
Ginger, slice it. Put into pot.
Garlics, peel it. Put into pot.
6. Put 1L water into pot. Heat up at high flame. Turn to medium~low flame after boils up. Boil for 1 hour.
7. Take out the orange peel after 45 minutes. Turn to high flame, put carrot and onion into pot. Turn to medium~low flame after boils up. Boil 15 minutes more.
8. Add tomatoes and cabbage, boil for 15 minutes more.
9. Seaaon with little table salt and sugar 1 tsp . Boils up again. Complete. Serve.

雲吞是傳統廣東美食,間一般會用梅菜熬湯,但私房菜吳師府的總廚吳永皓說,古法雲吞會用大豆芽煮湯,且要清澈通透,秘訣便是吊湯,即令湯底熱而不滾,熬三小時後,隔渣才下蝦籽,藉此保留蝦籽鮮味。一碗正宗雲吞麵,要先於碗底加入韭黃、麻油及豉油,然後放上匙羹及雲吞,接着倒湯,最後才放上麵條,這一方法叫「打碗底」,如此麵條便不會浸至過腍,也確保雲吞熱燙熟透。
